Description

Peanut butter crunch bars made with only 3 ingredients! Crunchy, creamy and sweet: the best peanut butter crunch bars combine creamy peanut butter, rich chocolate, and crispy rice cereal for a decadent, easy treat!

Ingredients

Scale
  • 1 cup chocolate chips
  • 3/4 cup peanut butter
  • 3/4 cup rice crisp cereal*

Instructions

  1. Line an 8-inch square baking pan with parchment paper or wax paper. Set aside at room temperature. Clear some space in the freezer for this pan—you will need it later.
  2. Melt the chocolate using the double boiler method, or do the following: add chocolate chips and peanut butter to a medium, microwave-safe bowl (large enough to add cereal later). Heat in 20-second increments until softened and melty. Stir in between heating increments, until smooth.
  3. Add cereal to melted chocolate mixture. Using a rubber spatula, stir and fold until well incorporated. Pour this mixture into the prepared baking pan. Using the spatula, smooth into an even layer. Tap the pan a few times to help even out the mixture.
  4. Transfer this pan into the freezer. Freeze for 35-45 minutes, or until completely firm. Slice into 36 mini squares (6 by 6). Enjoy! Storing instructions below.

Easy ‘n Delicious Recipes

Notes

Where to Buy Ingredients: Organic Peanut Butter | Paleo Chocolate | Brown Rice Crisp Cereal (Vegan, Gluten Free)

*You can use 1 cup instead of 3/4 cup if you want the bars to be crunchier. I went a bit lighter for this recipe so as to not overwhelm the delicious chocolate peanut butter fudge-like element. 😉

Storing Instructions: Store in an airtight container for 1-2 weeks in the refrigerator, up to 1 month in the freezer.

  1. I’m thinking of making these babies and making memories with my 8 year old baby tomorrow after school! Thank you for sharing your wonderful recipes, Demeter! .

  2. Oh please do something mischievous this week end even if it is just switching up salt and sugar. These bars are simplicity itself which means I can make them on this humid morning. My kids when they were little had treasure chests they called their “mischief boxes” I was not allowed to look in them. lol. When friends would sleep over my kids would whisper to me”mom, we are going to “Do mischief ” after we brush teeth so stay in your room. And I would whisper back where the cookie tin was hidden. In the morning I would awake to cookie crumbs, yarn that had been tied like a spider web through the house, salt in the sugar jar. etc. Thank you for reminding me!

    1. Hehe. I will if you do! 😉 Oh goodness, these mischief boxes sound like so much fun! I have a 3-year-old nephew that I might just be introducing to that concept soon… although he might be a little *too* mischievous as is. Lol. Aw, such sweet stories you’ve shared with me. <3 Thank you, Hanne, for making this Monday so much brighter. Hugs. xo

  3. I think I may have mentioned it a time or two but I always LOVED crunch bars!! Actually scratch that LOVE crunch bars, because the adoration for these cereal snappy chocolate bars is still very much alive. I remember your minty ones from Christmas and the classic ones of course, but this might be the most delicious of the crunch clan yet because PEANUT BUTTER. Reese’s were another halloween hoarding favorite of mine, better yet all in one bite. I made crunch + PB bars once before a little while back and haven’t forgotten about that deliciousness since, so I think these easy peasy squares are next on my craving list❤️ Adulting certainly does have it’s dessert-when/how-we-want-it benefits. But the flossing thing. Send me 3 batches and I promise I’ll floss every day for the next 6 months. xoxo

    1. Um… YEAH you have!! But keep on mentioning it, because I’ll always welcome a refresher. Hehe. Btw, you have the BEST memory ever. Just sayin’. Now all I have to do is make a PB cup + Crunch bar hybrid, maybe in cup form? YUM!! 3 batches coming right up! For the sake of your teeth, of course. 😉 xoxo

  4. Hi Demeter, thanks for sharing! These looks perfect for making with my little nephew.

Do you have a recommendation for vegan chocolate chips? I’ve tried a few brands and have found that some become oily or have a peculiar taste during baking; mainly the ‘milk chocolate alternative’ varieties. Do you use chocolate chips with quite a high cocoa content for this recipe?

    1. Hi Andy! Aw… this recipe is just perfect for making with the little ones! 🙂 I actually get the vegan chocolate chip question a lot, so here’s my response: I actually switch back and forth between tons of different vegan chocolates. Here are a few that I like, some that happen to be “accidentally” vegan and are totally affordable: Guittard Semisweet Chocolate Chips (or Extra Dark if you dark chocolate), Trader Joe’s Semisweet Chocolate Chips. But if you have a dairy allergy, I’d recommend going for Enjoy Life. Also, here’s a guide with a few others: http://namelymarly.com/dairy-free-chocolate-chip-guide/

    1. Aw, thanks so much, Marsha! 🙂 Peanut butter makes everything better! 🙂 Hope you’re having a fantastic one too. xo

    1. Hi Mandy! That’s so sweet of you to say. 🙂 Yes! That’s exactly what rice cereal is: the cereal you use to make rice crispies. It’s about 170g. 🙂 Hugs from Boston, USA. xo

  5. Am sitting here drooling delightfully over this “delicious mashup of Reese’s peanut butter cups AND Crunch bars AND peanut butter fudge!” Demeter – these would go so well with my morning cuppa AND would definitely make me AND my tastebuds oh so happy! Now… if only 1 or 4 of these 3 Ingredient Chocolate Peanut Butter Crunch Bars would magically appear before me…I guess I’ll sit here and keep wiggling my nose and blinking my eyes till they do? 🙂
Btw – takes a wise person to admit that even though they get a bit older, they feel “so much less wise”! And…”ankle sleeves?” Now I’ve gotta see an example of those…
Hope you and Erik have a wonderful weekend! xoxo

    1. Oh, girl, you KNOW you’ve got to make ’em! Sometimes I’ll just grab one out of the freezer to enjoy in the morning… on occasion, of course. 😉 Yes! Ankles sleeves! Lolol. Wishing you an awesome weekend! xo
