Welcome to the BEST keto peanut butter cookies. EVER. <– What an intro, amiright?! Well, the thing is, we all need a good as heck peanut butter cookie once in a while (okay, some of us need a nut-free one, but you know what I mean!)

But the other thing is, some of us need to keep it keto-friendly, some of us need to keep it low carb, and some of us need to keep it easy. And when some of us need all three of those things, we need to start thinking.

And by “thinking,” I mean, baking. And eating. And baking and eating some more.

So guess what I did? All of those things and then some. (Hint: cooking and eating more cookies was involved). So if you’re craving all of the keto peanut butter cookies, keto pb cookies, pb cookies that are secretly keto or something along those lines… well, you’ve come to the right place.

Keto Peanut Butter Cookies – Low Carb!

A few years back, I shared my 4 ingredient soft healthy peanut butter cookies and ya loved them. But since then, I’ve been like, but how do we keto-friendly this mo-fo? What keto sweetener would work very well in this keto peanut butter recipe? Like, what keto sweetener would even taste good?

If you’ve been on the What Keto Sweetener is Best or Even Edible Train with me all of these years, then ya know what I mean. M’kay? So I tested this keto sweetener and that keto sweetener, until I finally found the one that yielded the best keto peanut butter cookies this side of the Mississippi. Okay, I don’t even know what that means, but trust me that these keto pb cookies taste amazing on both sides of the Mississippi.

How to Make Keto Peanut Butter Cookies

Learning how to make keto peanut butter cookies is super simple. See for yourself:

Mix

Fold together all keto peanut butter cookies ingredients in a bowl: peanut butter, flax egg, low carb sweetener, and baking soda.

Scoop

Scoop keto pb cookie dough onto a lined baking sheet.

Bake

Bake keto pb cookies for about 12 minutes.

  • Ingredient 1: Natural, Creamy Peanut Butter
  • Ingredient 2: Flax Egg
  • Ingredient 3: Low Carb Granulated Sweetener
  • Ingredient 4: Baking Soda

Keto Peanut Butter Cookies: this low carb peanut butter cookies recipe is made with only 4 ingredients. The best peanut butter keto cookies—only 2 net carbs and keto-friendly.


Ingredients

Scale
  • 1 cup unsalted, creamy natural peanut butter
  • 1 flax egg (1 tablespoon golden ground flaxseed + 3 tablespoons water, whisked together, set for 15 minutes)
  • ½ cup low carb granulated sweetener
  • ¾ teaspoon baking soda
  • ½ teaspoon pure vanilla extract (optional)
  • ¼ teaspoon salt (optional)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  2. In a medium bowl, add all ingredients. Using a rubber spatula, fold until very thoroughly mixed. This batter is very thick—if you prefer, use a stand mixer or hand mixer to whisk together ingredients.
  3. Using a medium scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Using a fork, press down on cookie to flatten. Repeat in the opposite direction, creating crisscross marks. Make sure to leave space between cookies, as they will spread while baking.
  4. Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack and allow to cool for 20 minutes—do not remove from sheet for 20 minutes, as cookies are a bit soft. Then, if desired, transfer cookies directly onto the cooling rack to cool until completely cooled. Enjoy! Storing notes below.
