Line a large baking sheet with parchment paper. Set aside.
In a stand mixer or a large bowl with a hand mixer, beat together softened butter, peanut butter, and vanilla until smooth and creamy.
Gradually beat in powdered sugar until a thick dough forms.
Using a 1-tablespoon scoop, scoop and drop peanut butter balls onto the prepared baking sheet. Roll into smooth balls. Insert a toothpick about ¾ of the way into each ball. Cover and chill in the freezer for 30 minutes, until firm.
Melt chocolate in a microwave-safe cup*, heating in 15-second increments. Stir in between, melting until smooth.
Dip a ball mostly into the chocolate, leaving a small uncovered opening at the top. Drip off excess and place onto the sheet. Repeat for all balls.
Remove the toothpicks. Using the tips of your fingers, press the hole together.
Chill in the refrigerator until chocolate is hardened. Enjoy immediately or see storing instructions.
