Add shrimp, Cajun seasoning, salt, garlic powder, onion powder, and black pepper to a mixing bowl. Stir together until shrimp is well coated.
Add flour to a large, shallow dish. In another dish, whisk together egg and milk until combined. Add breadcrumbs to a third dish.
Add about 8-10 shrimp to the flour dish. Stir and fold to coat. Shake off excess.
One shrimp at a time, dip in egg mixture, then dredge in breadcrumbs, shaking off excess and placing on a lined baking sheet. Repeat for all shrimp.*
Heat oil in a deep fryer or a little over 1 inch of oil in a deep pan to 350°F. Deep fry shrimp for 2-4 minutes, until golden brown. Transfer to a plate lined with paper towels to catch excess oil.

*As you get more comfortable, you can do more shrimp per batch, per dish. For example, I tossed 4 shrimp in the egg mixture at once, then tossed all 4 into the breadcrumbs.
