Instructions
To make homemade buttermilk: whisk together vinegar and milk in a small mixing bowl. Set for 5-10 minutes while prepping other ingredients.
Sift together flour, pumpkin pie spice, baking powder and salt in a medium mixing bowl. Whisk until well mixed. Add buttermilk, egg, pumpkin, brown sugar, melted butter, milk and vanilla to the same bowl.
Whisk together until mostly smooth, with a few tiny pebbles of flour throughout, being careful not to over-mix. Set batter for 5 minutes.
Scoop ¼ cup batter (using this scoop) into the center of a nonstick skillet set over medium heat. Smooth batter until 1/3-inch thick. The batter will rise as it cooks.
Cook until bubbles form throughout the center of the pancake and it’s sturdy enough to flip, about 1-2 minutes. Flip and cook for 1 minute, until golden brown. Transfer to a plate. Reduce heat to medium low. Repeat for remaining batter. Serve with maple syrup, whipped cream and pecans. Enjoy!
