This delicious bruschetta recipe features ripe tomatoes, fresh garlic, and olive oil combined with tasty Italian seasonings on crispy toasted bread for the best antipasto!

Toast Ingredients
- 1 baguette
- 2–3 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 1/4 teaspoon homemade Italian seasoning, optional*
Bruschetta Topping
- 5 large or 8 medium Roma tomatoes
- 1/3 cup fresh basil leaves, chopped
- 3 garlic cloves, minced
- 1 oz parmesan cheese (1/3 cup)
- 1 tablespoon balsamic vinegar
- 1 1/2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Homemade Balsamic glaze for drizzle
Instructions
- Preheat oven to 400°F. Line a large baking sheet with parchment paper or foil. Slice baguette into ½-inch thick slices.
- Mix olive oil and garlic together in a small bowl with Italian seasoning, if using. Brush on both sides of the baguette slices. Spoon any remaining garlic onto the bread.
- Toast bread about 6-10 minutes, until golden and very well toasted. Mine took 7.5 minutes.
- While the bread is toasting, prepare the bruschetta topping. Cut tomatoes in half, then spoon out the seeds/juicy, wet centers. Lay halves on paper towels and pat gently to dry. Dice tomatoes. Or, skip and simply dice for juicy Bruschetta topping.
- In a medium bowl, stir to combine tomatoes, basil, garlic, parmesan, balsamic vinegar, olive oil, and salt and pepper to taste.
- Spoon over toasted bread. Optionally, drizzle bruschetta with balsamic glaze. Enjoy! This homemade balsamic glaze lends a delicious tangy sweetness.
Notes
*Or, you can use a pinch each: dried basil, parsley, and garlic powder (optional)
To make ahead: store Bruschetta topping in an airtight container in the refrigerator. Toast bread before serving, then spoon topping over bread.
