Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, add peanut butter, granulated sugar, brown sugar, and butter. Using a hand mixer, beat until creamed together.
  3. Beat in the egg until well mixed. Then, beat in maple syrup and vanilla.
  4. Using a spatula, stir in flour, rolled oats, quick oats, baking soda and salt until you get a cohesive dough. Fold in M&M’s and chocolate chips.
  5. Using a medium cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Dot each cookie dough ball with Topping M&M’s. Using a fork, flatten cookies about halfway, to medium thickness—they’ll spread a bit during baking. Press together any loose bits and form into a circle for pretty cookies.
  6. Bake for 10-14 minutes. Mine took 12 minutes.
  7. Cool monster cookies on sheet for 5 minutes, then transfer to a cooling rack to cool completely. Enjoy!

Notes

*Use room temperature butter for this recipe. However, if the butter is just a bit softer than that but still solid, it’s absolutely fine.
