- 1/2 cup smooth peanut butter
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/3 stick butter, softened to room temperature or a little bit more*
- 1 egg, room temperature
- 1 teaspoon maple syrup
- 1/3 teaspoon vanilla extract
- 2 teaspoons all-purpose flour
- 3/4 cup rolled oats
- 3/4 cup quick oats
- 2/3 teaspoon baking soda
- 1/4 teaspoon salt
Add-ins
- 1/3 cup M&M’s
- 1/3 cup semi-sweet chocolate chips
Toppings
- 2–3 tablespoons M&M’s
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, add peanut butter, granulated sugar, brown sugar, and butter. Using a hand mixer, beat until creamed together.
- Beat in the egg until well mixed. Then, beat in maple syrup and vanilla.
- Using a spatula, stir in flour, rolled oats, quick oats, baking soda and salt until you get a cohesive dough. Fold in M&M’s and chocolate chips.
- Using a medium cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Dot each cookie dough ball with Topping M&M’s. Using a fork, flatten cookies about halfway, to medium thickness—they’ll spread a bit during baking. Press together any loose bits and form into a circle for pretty cookies.
- Bake for 10-14 minutes. Mine took 12 minutes.
- Cool monster cookies on sheet for 5 minutes, then transfer to a cooling rack to cool completely. Enjoy!

Notes
*Use room temperature butter for this recipe. However, if the butter is just a bit softer than that but still solid, it’s absolutely fine.
Storing Instructions: Cool monster cookies completely, then store in an airtight container in the pantry for 1-2 weeks.
Freezing Instructions: After cooling cookies, place in a freezer-friendly container and freeze for 1-3 months.
To Freeze the Cookie Dough: Scoop dough into balls and flatten halfway, then store in a freezer-friendly container for 1-2 months. Bake as normal, adding 1-2 extra minutes onto bake time.
