What is Beer Cheese Dip?
Beer cheese dip in an easy appetizer that’s made by cooking beer, cheese, flour, and a number of seasonings together to create a thick dip that’s perfect for pretzels.
Beer Cheese Dip Ingredients
- Beer: choose your favorite beer. You can also use a lager, pilsner, or pale ale.
- Cheese: we’re going to be using shredded cheddar cheese, but you can change it up to gouda, sharp cheddar and more, as long as it pairs well with your beer.
- Butter: make sure to use unsalted butter so you can adjust the saltiness of your beer cheese dip to your liking.
- Flour: all-purpose flour works best here.
- Whole Milk: or use half and half.
- Worcestershire sauce & Dijon mustard: these two create a tangy acidity that offsets the heavy creaminess of cheese.
- Seasonings: garlic powder, smoked paprika, cayenne pepper, salt & pepper is used for a tasty, slightly spicy kick. You can increase the spice by adding cajun seasoning, sriracha, etc. For a garlicky kick, use garlic salt.
How to Make Beer Cheese Dip
Learn how to make beer cheese dip in less than 15 minutes. This easy appetizer recipe starts with creating a thick paste (a roux) made of melted butter and flour in a medium saucepan over heat, a process similar to making garlic parmesan sauce.
Next, we’ll whisk in beer and milk until thickened, then stir in Worcestershire sauce, mustard, garlic, paprika, cayenne, salt, and pepper.
We’ll whisk this mixture constantly while bringing it to a boil, then simmer it until thickened. Reduce heat and stir in handfuls of cheese until melted. Season more if needed, then serve this beer cheese dip recipe in a dipping bowl with pretzels.
Want to use More or Less Cheese?
- Wanna use more cheese? It’ll be much thicker and might need to be served in a heated bowl, like an electric fondue pot, as the cheese will firm up to be solid while the dip cools down.
- Less cheese? The dip will be more liquidy and thus, more dippable when it’s just warm or even cold.

Ingredients
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2/3 cup whole milk or half and half
- 2/3 cup beer
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1/4 to 1/2 teaspoon cayenne pepper, skip is sensitive to heat
- 1/2 to 1 teaspoon salt or to taste – beer cheese dip should be salty!
- 2 cups shredded cheddar cheese – can use less for runnier dip, more for very thick dip that you’ll need to keep warm.

Instructions
- Add butter to a medium saucepan set over medium high heat. Melt butter, then whisk in flour, creating a thick paste. Cook for 1 minute.
- Gradually add in beer and milk, whisking constantly until just thickened, about 1 minute. Whisk in Worcestershire sauce, mustard, garlic, paprika, cayenne (if using), salt and pepper.
- Bring to a boil, whisking constantly. Reduce to a simmer and cook until thickened while whisking constantly, about 3 minutes.
- Reduce heat to low and gradually stir in small handfuls of cheese, adding more once the cheese is fully melted and smooth. Remember: you can add as much or as little cheese as you’d like.* Add salt and pepper to taste, if needed.
- Transfer to a bowl and serve with big, soft pretzels. Optionally, garnish with a sprinkle of shredded cheese and chives.

*2 cups of cheese is pretty thick, so start with less and add to desired thickness. Note: I found 2 ½ cups to be too thick to serve.
