Bruschetta is one of those things you always kind of wished you made at home, but never did because it was too much work… but is it? Today, I’m going to show you exactly how to make the most delicious bruschetta on chicken that’s perfectly cooked. That’s right folks, we’re making irresistible, melty mozzarella-packed, easy bruschetta chicken. That’s what’s for dinner!
What is Bruschetta?
Bruschetta is an Italian bread appetizer that consists of toasted bread with olive oil and garlic spread on top. It can be topped with a savory tomato topping, balsamic glaze and more.
What is Bruschetta Chicken?
Bruschetta Chicken is an easy chicken dish that is inspired by Italian bruschetta. Instead of toast, we’ll be adding tomatoes, olive oil, basil and mozzarella onto chicken.

Bruschetta Chicken Ingredients
- Chicken: use boneless, skinless chicken breasts that are about 8 ounces each.
- Tomatoes: use ripe Roma tomatoes for added sweetness and juiciness.
- Garlic: freshly minced garlic is best, but you can use jarred in a pinch.
- Balsamic Vinegar: we’ll be using this in the topping and garnishing the finished bruschetta on chicken with homemade balsamic glaze for added flavor.
- Basil: make sure to use fresh basil for amazing flavor!
- Olive Oil
- Salt & Pepper
- Mozzarella: I used pre-sliced mozzarella cheese for ease and topped each chicken breast with enough to cover it—about 2 small slices.

How to Make Bruschetta Chicken
Learn how to make chicken bruschetta in just 4 easy steps, including making bruschetta, cooking chicken, melting mozzarella on top, and serving with delicious topping and balsamic glaze.
- Make the bruschetta topping: stir together tomatoes, garlic, balsamic vinegar, basil, oil, salt and pepper.

- Cook sliced, seasoned chicken over medium high heat in an oiled skillet, for about 4 minutes on each side, until it reaches an internal temp 165°F on an accurate meat thermometer.

- Melt the mozzarella: top each chicken breast with mozzarella and cover with a lid. Cook until cheese is melted.
- Spoon on tomato basil topping and drizzle with balsamic glaze and fresh basil.

What to Serve with Chicken Bruschetta
- Appetizers: garlic toast, pizza dip, roasted garlic bread
- Pasta: chicken garlic Parmesan pasta, shrimp Alfredo, tortellini pesto pasta salad, garlic butter pasta, Alfredo penne pasta

Tips
- Slice chicken into evenly sized cutlets with even thickness. This will ensure even cooking throughout.
- Make the bruschetta topping first: this will allow the flavor to deepen while you cook the chicken.
- Adjust the tomato basil topping to your liking: after making it, you can add in more garlic, balsamic vinegar, oil, salt and pepper to your tastes.
- Use a pan that comes with a lid: cover the chicken after topping it with cheese to ensure a quick melt that doesn’t overcook the chicken.

Easy Bruschetta Chicken
Ingredients
- ¾ cup Roma tomatoes, drained & deseeded, then finely cubed
- 1 clove garlic, minced
- 1 teaspoon balsamic vinegar
- 4 leaves basil, finely chopped, plus more for garnish
- 1 tablespoon and 1 teaspoon olive oil, divided
- ½ teaspoon salt, or to taste, divided
- 3/8 teaspoon black pepper, or to taste, divided
- 2 boneless skinless chicken breasts, 8 oz each
- 4-8 slices mozzarella cheese, enough to cover cooked chicken breasts (I did 2 small slices each)
- 3 tablespoons balsamic glaze, or more to taste
Instructions
- In a medium bowl, stir together: tomatoes, garlic, balsamic vinegar, basil, 1 teaspoon oil, ¼ teaspoon salt and 1/8 teaspoon black pepper. Add seasoning if needed. Set aside to allow flavors to deepen.
- Trim excess fat off chicken breasts, cut in half, length-wise, pat dry and sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper. Add 1 tablespoon oil to a large skillet and bring it to medium heat. Swirl pan to coat completely in oil. Add chicken in a single, uncrowded layer. Cook on each side for about 3-5 minutes, until the internal temperature reaches 165°F.* Reduce heat to low.
- Top each piece of chicken with 1-2 slices of mozzarella. Cover with a lid and cook until the cheese melts.
- Top with bruschetta and drizzle with homemade balsamic glaze. Garnish with chopped and whole basil. Enjoy!

- *According to the USDA, chicken should be cooked until it reaches an internal temperature of 165°F. But since chicken will continue to cook even off the heat (carryover cooking), you can cook it until it reaches about 150-155°F for juicier chicken. Do what makes you comfortable!
