Simple & Easy Chicken and Mushroom Pasta
Just when you thought Pasta Night couldn’t get any better, you got today’s amazing Creamy Mushroom and Chicken Pasta recipe! Erik and I’ve been enjoying a weekly pasta dinner lately (with bruschetta and pear salad) and it’s so satisfying. What is it about Pasta Night that lets you breathe a bit, and have some actual, slow-paced conversation?
This pasta with mushroom and chicken is one of my faves because it not only sets the mood for great conversation, but combines juicy, pan seared chicken with rich and creamy, robust mushroom sauce tossed with your favorite pasta. I’ve included my tips for making this recipe a little quicker and a lot tastier. Enjoy!

Chicken and Mushroom Penne Pasta Ingredients
- Pasta: use your favorite kind, such as penne, fettuccine, bowtie, etc
- Chicken: we’ll slice one pound of chicken breasts into 1/2-inch thick cutlets for even cooking
- Mushrooms: use crimini, shiitake, etc. Just make sure to slice them uniformly thin
- Olive Oil
- Butter: we’ll use unsalted butter so we can add the just-right amount for the best taste
- Garlic: use freshly minced garlic if you can, but in a pinch, store-bought is fine too
- Dry White Wine: be sure to cook off most of this (which will also remove the alcohol component) for deep flavor
- Chicken Broth
- Heavy Cream: I wouldn’t recommend skipping or substituting this ingredient—it adds incredible richness to this chicken pasta recipe
- Lemon Juice: use freshly-squeezed for the best flavor
- Parmesan: just 1/4 cup adds thickness and a bit of tanginess, not a ton of cheesiness

How to Make Chicken Mushroom Pasta
- Cook the pasta: according to package instructions in a large pasta pot of salted water. Reserve 1 cup pasta water, then drizzle with olive oil and toss to coat.
- Cook the chicken: while pasta is cooking. Slice chicken breasts into 1/2-inch thick cutlets lengthwise. Sprinkle with salt and pepper, then cook in a large skillet coated with oil over medium heat, about 5 minutes on each side. Transfer chicken onto a plate.

- Make the Sauce: increase heat, melting butter and olive oil. Add mushrooms, cooking until tender, then add garlic and cook until golden. Transfer to a separate plate.
- Add wine, cooking until 2/3 evaporated. Stir in chicken broth, heavy cream, lemon juice, salt, pepper, and Parmesan. Cook for about 2 minutes.

- Stir in mushrooms and garlic, cooking until sauce is thickened. Slice chicken, then add with pasta to sauce, folding until coated. Thin out with pasta water if needed. Enjoy this amazing creamy chicken mushroom pasta recipe!

Tips
- Remember to reserve 1 cup pasta water before draining the pasta. This salted water is perfect for thinning out the sauce, if needed.
- Skip pounding the chicken—it’s faster to slice it to 1/2-inch thickness and I find the chicken to be much more tender without it.
- Cook the sauce to the thickness you like, about 3 minutes for thinner sauce, 5 minutes for thick sauce. You can always thin it out with the pasta water. See my creamy mushroom sauce for more tips.

Simple Chicken and Mushroom Pasta
Ingredients
Pasta
- 8 ounces pasta, fettuccine, angel hair, penne, etc.
- Olive oil
- Flat leaf parsley, minced for serving
Chicken
- 1 lb boneless skinless chicken breasts
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 ½ tablespoons olive oil
Creamy Mushroom Sauce
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 10 ounces mushrooms, such as crimini, shiitake, etc., thinly sliced (about 1/8” thick)
- 2 cloves garlic, minced
- 1/3 cup dry white wine
- 1/3 cup chicken broth
- 1 cup heavy cream, room temperature
- ½ teaspoon lemon juice, freshly squeezed
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
- ¼ cup grated parmesan cheese, plus more for serving
Instructions
- Cook the pasta. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions. Reserve 1 cup pasta water. Drain and toss with olive oil to prevent sticking.
- While the pasta is cooking, cook the chicken. Slice chicken breasts in half length-wise for uniformly-thin cutlets. Pat dry. Sprinkle salt and pepper over both sides of the cutlets. Heat oil in a large skillet over medium heat. Cook chicken undisturbed for 4-6 minutes on each side until golden.* Transfer to a plate.
- Make the mushroom sauce. Increase heat to medium high. Melt butter and olive oil. Add mushrooms and cook until moisture is mostly gone, stirring occasionally. Add garlic and cook until golden. Set aside on a separate plate.
- Add wine to the hot skillet, cooking to let steam off until 2/3 evaporated. Stir in chicken broth, heavy cream, lemon juice, salt, pepper, and parmesan. Cook for 1-3 minutes, stirring occasionally. Stir in garlic mushrooms. Cook and stir occasionally for 3-6 minutes until sauce is tannish brown and thickened. Sauce will thicken just a bit after cooking.
- Make the creamy mushroom chicken pasta: Slice chicken, add with pasta to sauce, folding with tongs until coated. If needed, added pasta water to thin out sauce. Garnish with parsley and Parmesan to taste. Enjoy!
