Ingredients

Units Scale

Pasta

  • Salt
  • 8 ounces spaghetti or other dried pasta

Garlic Butter Sauce

  • 4 tablespoons butter
  • 45 cloves garlic, sliced
  • 1/3 teaspoon salt
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 cup grated parmesan, plus more for topping
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Bring a large pot of water to boil. Add in a big pinch of salt and pasta. Cook according to package directions. Turn off the heat and reserve 1 cup of pasta water.
  2. While the pasta is cooking, heat a large skillet to medium heat.
  3. Add in butter and garlic, cooking for about 1-2 minutes or until just lightly cooked and fragrant. Stir in salt and black pepper.
  4. Add pasta and some of the reserved pasta water to the skillet. Using heatproof tongs, toss to coat completely in butter and garlic. Add more pasta water as needed to create a slightly thick sauce.
  5. Remove from heat and add parmesan and parsley. Toss again to mix well.
  6. Serve topped with more parmesan and parsley.

Notes

You likely won’t need to use the entire cup of reserved pasta water—we’ll have it on hand to add as much as needed to create a sauce of desired consistency. I used just ½ cup.
