So lately Erik and I’ve been focusing on cooking more meals at home, and making ones that are simpler and easier to prep. But the one thing that always gets annoying? Looking for an easy side dish that actually tastes good! Enter: The perfect pairing for a tasty side dish—oven roasted green beans and potatoes.
I love cooking the green beans until they’re roasted, but still a bit crisp… and that allows for the perfect amount of time for the potatoes to be tender on the inside and crisp on the outside!

Green Beans and Roasted Potatoes Ingredients
- Potatoes – you’ll cube small potatoes or cut creamer potatoes in half for the a faster cook time
- Green Beans – use fresh, crisp green beans for a good snap to this recipe
- Spices – homemade Italian seasoning adds flavorful herbaceous flavor while paprika adds a touch of warmth
- Soy Sauce – the #1 secret ingredient to making the green beans really sing (just like in my blistered green beans)
- Rosemary – a beautiful garnish to finish off the green beans and roasted potatoes

How to Make Roasted Red Potatoes and Green Beans
- Preheat the oven to 400°F. Line a baking sheet with lightly greased foil (use an olive oil sprayer bottle).
- Wash and dry potatoes, then cut into 1/2-inch cubes. Toss with oil, Italian seasoning, paprika, salt and pepper. Pour onto baking sheet. Bake for 15 minutes.

- While the potatoes are roasting, wash, dry, and trim green beans. In a large mixing bow, toss with oil, salt, pepper, and soy sauce. Stir to coat.

- Remove sheet from oven and flip potatoes. Add seasoned green beans and spread into an even layer. Bake for 15 minutes, until potatoes are fork tender. Serve and enjoy!

Can You Roast Green Beans and Potatoes Together?
Yes, you can roast green beans and potatoes together! The trick is in the timing and the sizing. While potatoes take longer to cook than green beans, we’re going to offset that by slicing the potatoes into smaller cubes and throwing them into the oven first. While the potatoes cook, we’ll prep the green beans (timesaver!).

Roasted Potatoes and Green Beans Recipe

- 1 lb. small or creamer potatoes
- 3 tablespoons extra virgin olive oil, divided
- ½ teaspoon Italian seasoning
- ¼ teaspoon paprika
- 1/3 teaspoon salt, or to taste, divided
- Black pepper, to taste
- 1 lb. green beans
- 1 teaspoon soy sauce, I used lower sodium
- 2-3 sprigs rosemary, for garnish
Instructions
- Preheat oven to 400°F. Using an olive oil sprayer, spritz olive oil onto a large baking sheet lined with foil.
- Wash and dry potatoes. No need to peel. Cut into ½-inch cubes. Add to a large mixing bowl. Drizzle with 1 ½ tablespoons oil, Italian seasoning, paprika, ¼ teaspoon salt and pepper to taste. Stir to coat. Pour potatoes onto baking sheet and spread into an even, spaced-out layer. Bake for 15 minutes.
- While the potatoes are roasting, wash, dry and trim ends off green beans. Peel off strings if needed. Add to a large mixing bowl with 1 ½ tablespoons oil, 1/8 teaspoon salt, pepper, and optionally, soy sauce. Stir to coat fully.
- Carefully remove baking sheet from oven. Flip potatoes using a heatproof spatula. Add seasoned green beans and spread into an even layer. Bake for 15 minutes, or until potatoes are fork tender.*
- Pour roasted green beans and potatoes into a serving dish. Optionally, top with a few sprigs of rosemary. Enjoy!
