Did you ever eat raw cookie dough when you were a kid? You know, you wait until your mom turns her back, claw out a huge clump of cookie dough from one of those yellow-wrapped logs and cram it into your mouth as quickly as possible before she sees?

I may have done that once or twice. Or maybe I learned my lesson from getting sick over that raw, totally not edible cookie dough. And then I learned to save all the little cookie dough bites from cookie dough ice cream. Then, mash those together to have one big ball of actually edible cookie dough to feast on.

Or something. I mean, it’s not like I was/am obsessed with cookie dough. Or anything.

Now, as a less adventurous adult, I’m all about eating perfectly safe-to-eat edible cookie dough. Skip the stomachaches, level up the YUM factor. So today, I’m re-sharing a recipe I published back in 2018 for what was formerly known as 5 Ingredient Chocolate Chip Cookie Dough Bites Recipe (Vegan, Gluten Free, Dairy-Free, Refined Sugar-Free).

No, I wasn’t known for my brevity back then. Lol.

Today, I’m sharing all new info for the same beloved vegan edible cookie dough recipe and I hope you get to try it! (Or rediscover it if you’re forgotten it.)

How to Make Vegan Cookie Dough

Learn how to make vegan cookie dough that’s edible and healthy with just a few steps:

Line

Line a baking sheet with parchment paper. Set aside.

Add Ingredients

Add oat flour, maple syrup, coconut oil and pure vanilla extract to a medium bowl.

Stir

Using a spoon, stir and fold until the mixture thickens. I like to switch to using a rubber spatula at this point to fold all the ingredients together until it resembles cookie dough. Fold in vegan chocolate chips.

Scoop

If you want cookie dough bites, follow this step. Using a cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet. If desired, dot vegan chocolate chips onto each ball and roll into a smooth sphere.

Enjoy

Allow to firm up for about 5 minutes and enjoy the best vegan cookie dough!

How to Store this Vegan Cookie Dough

Some folks like enjoying these healthy edible cookie dough bites on Day 1, as that’s when they’re softest. However, others enjoy this cookie dough all the way through 2 weeks. I recommend keeping this cookie dough for up to 1 week.

Just make sure to store your cookie dough in an airtight container at room temperature or in the refrigerator.

To Soften: I love popping a few of these vegan cookie dough bites onto a plate and warming them up in the microwave. Heat in 10-second increments until softened. It’s the BEST when the vegan chocolate chips are melted as you bite into each soft ball of cookie dough.

Vegan Cookie Dough: a 5 ingredient healthy cookie dough recipe for vegan edible cookie dough. Safe to eat raw & it’s eggless! Made with healthy vegan ingredients.


Ingredients

Scale
  • 1 2/3 cups + 1 teaspoon oat flour
  • 3 tablespoons pure maple syrup
  • 3 tablespoons melted coconut oil
  • 1 ½ teaspoons pure vanilla extract
  • ¼ cup + 2 tablespoons vegan chocolate chips (mini and regular)

Optional Topping

  • 2 tablespoons vegan chocolate chips (mini and regular)

Instructions

  1. Add oat flour, maple syrup, oil and vanilla to a medium bowl.
  2. Using a spoon, stir until thickened and well incorporated. If needed, use a rubber spatula to fold together into a cohesive dough. Fold in ¼ cup + 2 tablespoons vegan chocolate chips.
  3. To make bites (optional, can skip):
    • Line a small or medium baking sheet with parchment paper or wax paper. Set aside.
    • Using a cookie scoop, scoop and drop balls of dough onto the prepared baking sheet. Using your hands, shape dough into spheres, or keep as is if you like the shape. Optionally, dot with vegan chocolate chips.
  4. Allow to firm up for about 5 minutes. Enjoy! Storing instructions below.

Notes

Note: Best if enjoyed the first day; Day 2 and on, the cookie dough will become drier. Day 2 and forward, to soften, heat in 10-second increments in the microwave until warm.

  1. If I omit the chocolate chips would I be able to roll out the dough? My kids want to do cutout cookies with cookie cutters. Thanks.

    1. Hi Sarah, is this for baked cutout cookies, or for unbaked cutout cookies made out of cookie dough? If it’s for unbaked cookies, I think it should be okay to roll out the dough. If it’s not firm enough after rolling it out, try chilling in the fridge for about 30 more minutes. Enjoy!
