If I had to choose one, I would pick cookie dough bars! (Not that I’m biased by these paleo almond flour cookie dough bars or anything…) It’s just… a thick layer of chocolate chip cookie dough, topped with a thick layer of paleo chocolate topping?

What more could ya need?

Besides more chocolate chips, of course! Moving on… ever since I shared my Healthy Gluten Free Cookie Dough Bars recipe with you, I’ve been getting ALL the requests for a paleo version. Made with almond flour. And with coconut flour.

Almond Flour Cookie Dough: Paleo Cookie Dough Bars!

Yes, y’all really are that specific! And I love it. It’s my job to keep ya happy—and satisfied. 😉 So welcome, to my very favorite Paleo Almond Flour Cookie Dough Bars. They’re just the right amount of soft ‘n dense (like cookie dough should be), packed with vegan chocolate chips and topped with a velvety-smooth and rich layer of paleo chocolate.

7 Ingredients: Paleo Edible Cookie Dough

Almond Flour is the key ingredient in my paleo edible cookie dough bars. This grain-free “flour” is made from finely ground, blanched almonds. Almond flour adds a delicate, absorbent and moist texture to this paleo cookie dough recipe.

Coconut Flour is a tricky ingredient to work with! My tip: always follow the recipe—if there isn’t coconut flour in it, don’t use it! Lol. Coconut flour is very, very absorbent and works like no other flour.

Vegan Chocolate Chips OR Paleo Chocolate, Chopped – I haven’t yet found a paleo chocolate chip that’s made without cane sugar, cane syrup, etc. But I have found this wonderful paleo chocolate bar that’s made with coconut sugar. Whoop! Instead of vegan chocolate chips, try using chopped paleo chocolate for your paleo edible cookie dough bars.

Natural, Creamy Almond Butter is one of the best, healthy ways to get that fudge-like texture for a shelf-stable chocolate topping (ya don’t need to refrigerate this!). I figured this out when I created my 2 Ingredient 5 Minute Homemade Fudge. Natural, creamy almond butter adds such a mild flavor, you probably won’t even notice it. Results: best paleo cookie dough bars ever!

Pure Maple Syrup is one of my preferred sweeteners for my paleo cookie dough recipes. But, if you’re looking to reduce the amount of sugar and carbs, try swapping about 25% of the maple syrup in this recipe with sugar free maple syrup. It tastes pretty close to the real thing & is made from plants!

Coconut Oil adds a great buttery element to this paleo cookie dough bars recipe. If you’re not a fan of coconut oil, try using melted vegan butter instead. 😉

Vanilla Extract – no explanation needed! Lol. Okay… it makes this paleo cookie dough taste like cookie dough!!! 😉

Almond Meal or Almond Flour Cookie Dough?

One question I often get in my paleo cookie dough recipes, and frankly, any of my paleo recipes that use almond flour is: Can I use almond meal instead of almond flour?

The answer is: Yes! Keep in mind, finely ground, blanched almond flour has a finer texture, and is much more flour-like. As such, it makes the paleo cookie dough more reminiscent of classic cookie dough (like with butter and all purpose flour). Almond meal is…. Mealy. 😉 It’s much more present and grainier.

Best Tools for the Paleo Almond Flour Cookie Dough Bars

  • 8-inch Baking Pan: a truly wonderful and reliable baking pan. I’ve used it hundreds of times, and it’s still going strong.
  • Coconut Flour: when it comes to paleo baking, and no-baking, coconut flour is a total must!
  • Paleo Chocolate Bars: this is one of the tastiest paleo chocolate bars I’ve ever had, and a staple in my paleo chocolate recipes. You can also use vegan chocolate chips.
  • My Favorite Knife: this knife cuts through cookie dough bars like, well, a hot knife through cookie dough bars. Oh, you know what I mean. 😉

Description

Paleo Cookie Dough Bars (GF): this almond flour cookie dough recipe is delicious & gluten free! Safe to eat & edible, no need to bake. Egg-Free, Vegan, Dairy-Free, Refined Sugar-Free.


Ingredients

Scale

Paleo Cookie Dough Layer

  • 1 2/3 cups finely ground, blanched almond flour
  • 2 tablespoons coconut flour
  • 3 tablespoons pure maple syrup
  • 3 tablespoons melted coconut oil
  • 2 teaspoons pure vanilla extract
  • ¼ cup + 1 tablespoon vegan chocolate chips (mini and regular) or chopped paleo chocolate

Paleo Vegan Chocolate Topping

  • ½ cup vegan chocolate chips or chopped paleo chocolate
  • ¼ cup + 1 tablespoon natural unsalted, creamy homemade almond butter (or store-bought)

Instructions

  1. Line an 8-inch square baking pan with parchment paper or wax paper. Set aside. Clear some space in the freezer for this pan—you will need it later.
  2. Make the Paleo Cookie Dough Bars: Add almond flour, coconut flour, maple syrup, oil and vanilla to a medium bowl. Using a rubber spatula, stir and fold until thickened and well incorporated. Fold in chocolate chips.
  3. Transfer cookie dough into the prepared baking pan. Using a rubber spatula, smooth into an even layer. Set aside.
  4. Prepare the Chocolate Topping using a double-boiler or do the following. Add Paleo Vegan Chocolate Topping ingredients to a medium, microwave-safe bowl. Heat in 20-second increments until softened and melted. Stir in between heating increments until smooth and well mixed. Pour topping over cookie dough bars. Using a clean rubber spatula, smooth into an even layer. Optionally, make swirls on top for fun!
  5. Transfer pan to freezer. Chill for 20-30 minutes, or until firm. Remove from freezer and slice into 16 bars. Enjoy! Storing instructions below.

    I made these today, I was a bit sceptical of the dough cos it was pretty soft, but after putting it in the freezer with the chocolate it turned out absolutely fantastic! Even my man said he doubted they’d last long. Definitely recommend
