When I was a little kid, one of my favorite dinners was chicken drumsticks. They’re juicy, fun to eat, and easy to hold (for the cavewoman in me ha). Today, we’re sticking to those same principles and cooking the easiest chicken drumsticks—Cajun style! You can expect juicy drumsticks coated in butter and tossed with flavorful and spicy Cajun seasoning with lightly crisped skin.

These Cajun chicken drumsticks are easy to make and even easier to eat. With just 3 minutes of prep, you’ve got your dinner protein cooking while you go prep your veggies and grains. Easy peasy!

3 ingredients for Cajun chicken drumsticks include raw chicken drumsticks, homemade Cajun seasoning, and butter.

Cajun Chicken Drumsticks Ingredients

  • Chicken drumsticks – buy already prepared (but still raw) chicken drumsticks to keep this recipe easy!
  • Homemade Cajun seasoning – or store-bought
  • Oil
  • Butter – I used unsalted, but you can use salted if you like it salty

How to Make Chicken Drumsticks with Cajun Seasoning

With a few easy steps, you’ll have one of the easiest chicken dinners ever. I honestly couldn’t believe how quick it was!

  1. Preheat oven to 400°F. Line a baking sheet with greased foil.

  1. Add chicken drumsticks into a large bowl and toss with oil. Sprinkle Cajun seasoning over the drumsticks and lay on the baking sheet.

  1. Bake for about 27 minutes, then drizzle butter and remaining Cajun seasoning over drumsticks. Toss to coat and enjoy!

Tips for the Best Chicken Drumsticks

  • Season before and after cooking: for big, bold flavor, we’re seasoning the chicken while raw, and then again after cooking.
  • Don’t forget the meat thermometer: this kitchen tool keeps cook time worry-free. Simply stick a drumstick in the center—it’s cooked once it reaches 165°F internal temperature.
  • Leave some space in between chicken drumsticks: it’s easy to cram in too many, but they won’t cook evenly. Leave at least an inch between each piece.
  • Switch up the seasonings: don’t feel like Cajun seasoning? Try Italian seasoning, taco seasoning, garlic salt, or seasoned salt instead.

  • Preheat oven to 400°F. Line a baking sheet with greased foil.
  • In a large bowl, add chicken and oil. Toss to coat. Sprinkle ½ teaspoon Cajun seasoning over the chicken and toss until well coated. Add another ½ teaspoon Cajun seasoning and toss again. Place chicken drumsticks evenly spaced apart on the prepared baking sheet for even cooking.
  • Bake for 25-32 minutes, flipping once halfway through. Mine took 27 minutes.1 Cook until internal temperature reads 165°F on a meat thermometer.
  • Transfer chicken drumsticks to a clean, large bowl. Drizzle butter and sprinkle remaining Cajun seasoning over chicken; add more to taste as needed. Toss gently until coated.2 Garnish with chopped parsley. Serve with roasted green beans and potatoes or air fryer Brussels sprouts.

Notes

  • 1: Cook longer for a crisper, more golden exterior, closer to 32 minutes.
  • 2: You can coat a little nonstick spray or extra butter after tossing in seasoning for a little added shine.
  • Storing Instructions: After cooling completely (with chicken sitting out no longer than 2 hour at room temperature), store drumsticks in an airtight container in the refrigerator for 3-4 days maximum.
  • Freezing Instructions: Cool completely, then store chicken drumsticks in the freezer in a freezer-friendly container for 3-4 months.
