No Bake Chewy Chocolate Chip Granola Bars (Vegan, Gluten Free)

No Bake Chewy Chocolate Chip Granola Bars (V+GF): the perfect protein-rich, on-the-go snack that’s super easy to make, full of simple ingredients and delicious. Vegan and Gluten Free.

So the thing about these no bake chewy chocolate chip granola bars is that I can’t stop eating them. Every single bite just does it for me—a mouthful of texture, and a flavorful party of nutty, sweet, rich and all of the things deliciousness.

When I was a little kid—okay, I admit it, just a few short years ago—I was a granola bar-buying fanatic (oh man, what a tongue-twister). It was kind of like my lip-balm buying craze phase. I would go on all kinds of missions to buy lip balm in various colors, flavors, and packaging. I mean, these lip balms were like toys. But for adults. Oh my! ?

Well, after I stopped that lip-smacking wallet-burning hobby, (side note: did you ever try pink lemonade Lip Smackers? Those were the best!), I found something new to take its place. Yes, I know I need to get a life. But, hey, I have you guys! Riiiight? Um…

What was I saying? Okay, so after I kicked those glossy moisturizing lip aids to the curb, I found granola bars. Anyone else sensing a theme here? Everything is about the mouth and, let’s face it, all surrounding acreage for eating. Woah, epiphany here, folks.

Anyway, granola bars were like the new toy, but I could eat it. Which reminds me, have you guys seen that episode of Friends where Monica reveals her favorite game when she was a kid? It was that toy, you know… the one where you could put in money and food would come out? 😉

Um, it was my favorite “game” too. And believe you me, I’ve got no shame in admitting it.

Let’s call a spade a spade here folks. It was a vending machine.

Well, the hunt for the perfect granola bar always ended in lotsa good old-fashioned eating. My favorite hobby of all. There were so many flavors! Iced lemon bar, oatmeal cookie, dark chocolate lovers, pecan pie… the choices were endless.

But eventually, the good times stopped rolling. And all of those flavors started becoming kind of indistinguishable. Worse, I was growing up and actually looking at these labels. Fun: spoiled. Maturity: improved. Bright side, m’kay?

I was already baking so much and cooking up a storm… why not throw granola bar recipe testing into the mix?

So as some of you know, I created my No Bake Oatmeal Raisin Granola Bars. And yup, they taste just like oatmeal raisin cookies. I loved that one so much, and so did the fam—clearly the much higher standard for taste-testing (what with my eating hobby and such). But let’s face it, what really trumps an oatmeal raisin cookie?

A chocolate chip cookie.

And since we’re in the habit of dreaming about cookies and rivers of chocolate around here, why not make a new no bake granola bar that’s secretly good for you, but outwardly tastes like a chocolate chip cookie?

Like, more winning then that one vending machine game. 😉

No Bake Chewy Chocolate Chip Granola Bars (V+GF): the perfect protein-rich, on-the-go snack that’s super easy to make, full of simple ingredients and delicious. Vegan and Gluten Free.

Dry Ingredients

  • 1 ½ cups gluten free rolled oats
  • ½ cup gluten free oat flour*
  • ½ cup unsweetened, shredded coconut
  • ¼ teaspoon salt

Wet Ingredients

  • 2 flax eggs (whisk together 2 tablespoons ground flax + 6 tablespoons warm water, let set for 15 mins)
  • ¼ cup melted coconut oil
  • ½ cup natural, unsalted almond butter
  • 1/3 cup pure maple syrup
  • 2 teaspoons pure vanilla extract

Add-in Ingredients

  1. Line a 9×9 baking pan with parchment paper or wax paper. Set aside.
  2. In a large bowl, whisk together all of the dry ingredients: oats, flour, coconut and salt.
  3. In a medium bowl, whisk together all of the wet ingredients: flax eggs, coconut oil, almond butter, maple syrup and vanilla. Whisk until smooth.
  4. Pour the wet mixture over the dry mixture. Use a rubber spatula or wooden spoon to stir ingredients together until well combined. Fold in chocolate chips and walnuts.
  5. Pour into the prepared baking pan. Spread granola bar mixture into an even layer, pressing down until it’s tightly packed and smooth.
  6. Place baking pan in freezer for 15-20 minutes.
  7. Remove from freezer. Lift bars out of the baking pan. Set onto an even surface and slice into 12-18 bars. Enjoy!

– Store in an airtight container in the refrigerator for 1-2 weeks. You may also freeze these for up to a month.
– Storing at room temperature: These bars will be slightly soft, but still keep together at room temperature. If you’re bringing these as a snack, make sure to store them in a hard container, like a Tupperware.
– *To make homemade oat flour: place rolled oats into a blender. Blend until you get a just slightly grainy flour. Remember: 1 cup of rolled oats does not equal 1 cup of oat flour. You’ll need to blend more rolled oats to create less flour- the oats decrease in volume as you turn it into a flour. It’s easiest to blend up a big batch of oat flour, and just scoop out what’s needed for any recipe.

  1. Hey, now that you mention it, I miss Lip Smackers! (ah, memories…) Meanwhile, these granola bars look like healthy chewy delectable perfection and I wish I had one RIGHT THIS MINUTE. Pinning! xo

  2. These granola bars look so awesome and absolutely delicious, Demeter! Nothing can beat the bars which are chewy, no-bake and packed with lots of healthy goodness. So much yes to these! You know what, your healthy (GF + VEGAN) dishes are the BEST and this one is no exception. Love how beautifully they are bursting out with so many flavors. Can’t wait to try these. Wish you a great week ahead! <3

    1. Thank you so much Anu! 🙂 Gimme all the YES’s! 😉 Hehe. I hope you and your family enjoy this. Be sure to let me know what you think! Have a great week (and especially weekend) as well. Big hugs to you, my dear. <3

  3. Sigh, those Lip Smackers…the mark of a “cool girl” in middle school, when that was all the makeup we were allowed to wear! I wonder if they still taste amazing…probably not so much! These granola bars, on the other hand, look divine. I haven’t had a granola bar in ages, but these look like the perfect snack. And I snack. A lot.

    1. Hehe… was it? Oh, lol!! That counted as makeup, huh? Those were the good ol’ days. *Happy sigh* They probably still do! Thank you so much Liz. 🙂

  4. Whoah, memory lane! I was never a lip gloss addict but the pink lemonade Lip Smackers had me converted for a short while. These look amazing! Your recipes always make me want to go on long hikes with all your food stuffed in my backpack.

    1. Right?? Lol. That was one of their best flavors! So understandable that you were converted–at least for awhile. 😉 Perfect! I hope you get to bring some on a hike soon. 🙂

    1. Wasn’t that the best though? Those granola bars were so tiny… you needed at least 3! 😉 Thanks Bethany. 🙂

    1. They’re the best! 🙂 Thank you so much Mira–I am happy to be Granola Central. 😉

  5. I wouldn’t be able to stop eating these either! & I love that you made a new granola bar flavor. Hope you make some of the others you used to try, too! (& I used to be hooked on store bought breakfast bars. I’m so happy we’re both making our own treats now – so much better for you and definitely more delicious 🙂 )

  6. Yummmm these look so chewy and amazing! Love your photos 🙂 ♥ … and omg I remember that episode, Friends was one of my favourite shows.. Monica’s vending machine game “I won every time!!” LOL … Pinning these for sure, have a great week Demeter! 🙂

    1. Thank you Serena! Wasn’t that the funniest ever? And relatable? Lol. Thanks for pinning! Have a great week, friend. 🙂

  7. Love them, Demeter! I have to make them for hubby, he is the real granola bar lover! They look incredible, of course pinned them. By the way, I consume I huge amount of lip balms and hand cream (I have one in my purse, one in the drawer close to the bed and one in the bathroom, just to make sure 😉 ).

    1. Oh, Loreto would love these! Awesome. 🙂 Thank you for pinning, Nicoletta. 😉 Oh, haha… I knew you’d understand that one. 😉

  8. My new hobby is going to be making and eating these chocolate chip granola bars! Yum in my tum! I loved (love) vending machines too, mainly because they are always loaded with junk food and I used to never get junk food at home when I was a kid. Yay to junk food. Yay to healthy food that tastes like junk food too. I’m making your healthy granola bars and pretending I got them out of a vending machine 🙂

    1. Oh, that sounds like a great hobby! 😉 Okay, right? Vending machines are so adult toys. Lol. Oh, is that why you love junk food so much? I totally get it girl. 😉 It was restricted in my childhood too–funny how that kind of ends up having the opposite effect on you. 😉 Hope you enjoy them! Let me know how you do. Thanks Karrie!

  9. YES please! I love making homemade granola bars at home. I typically go the bite route and keep mine in ball shapes just because I find them easier to grab, but I always have them on hand! The perfect on-the-go snack or pre-workout!

    1. Oh, I love them all! Bites, balls, all of it. 😉 Perfect indeed. Thanks Kat!

  10. Lol, I totally feel like we are sistah’s from a different mistah’ Demeter! I used to be obsessed with lip balms and purchasing ALL the flavors and store bought granola bars! Now I’m more of a Burt’s Bee Chapstick (no flavor) and homemade granola kind of girl. Totally equates to more money in my pocket and more deliciousness up in my belly, so it’s definitely all good! You are totally the granola bar queen and I am loving this newest addition to BB! Coconut and chocolate chips are some of Boy’s favorite things so I absolutely MUST whip these together for him pronto… plus I’m not a fan of sharing my BB Oatmeal Raisin Granola Bars, so now he will have his own! Yay! 😉 Pinned! Cheers, lovely! xoxo

    1. Omigosh, we SO ARE!!! Lol. And Lip Balm Buddies, too, of course. 😉 Does that sound gross? LOL. Oh yeah, Burt’s Bees smells so go and fresh! Yup, I wizened up on that too! More money spent on food! Ha. Lol… sharing is caring! But it’s probably good that Boy has his own batch–makes things safe in the household. 😉 Thanks Chey! xoxo.

  11. When you mentioned eating granola bars as a kid, I was thinking the exact same thing! How I loved those, why did I stop eating them? Oh, because of the fake, phony ingredients. I guessed I just learned to read. These are ingredients I can live with, especially the shredded coconut. Yummy.

  12. I was actually never into granola bars. When I was small everybody ate them all the time around me, and I just didn’t get it. They were dry and only tasted like sugar…..then a few years ago I tried a homemade one and I realised that granola bars are so so so so so good!! After that I even started to like store-bought ones, but as you said, after reading the labels it’s not that fun/appealing anymore.
Soooooo….what I mean is that this recipe sounds wonderful! Pinned and going to try it 🙂

    1. How interesting! I love learning all of these new facts about you. 🙂 Oh yeah, homemade granola bars are something else, that’s for sure! Yup, the labels always ruin the fun… Lol.
Thank you so much Evi–for pinning and the good comment vibes. 🙂 I can’t wait to hear how you like them! 🙂

  13. These look sooooooo good, Demeter! Chewy chocolatey goodness and so much better than store bought! You always make the best things! Pinning, of course! I don’t even know if I’m over that lip gloss buying phase. What is it about those little things? They are just too darn cute with all the flavours and colours. I haven’t bought Lip Smackers brand in a while, but there’s so many others I have…so many. And it doesn’t stop there…nail polish and candles too. Oh my, lol :D. I didn’t regularly watch Friends when it was on, but now hubby and I have restarted the whole series on Netflix and we are loving it! Anyways, I have got to make these granola bars. And I’m gonna have to make two batches because I have a feeling that between hubby and I they won’t last long!! Have a great week! xo

    1. Thank you so much Dawn. 🙂 Oh so true about lip balm, polishes, candles… heck, what about rings? Lol. Omigosh, you two are starting Friends?? AWESOME!!! Erik and I are going through it again–we’re currently in Season 5, almost 6. 😉 He’s a newbie, so it’s cool to see it through his eyes. Let me know how you like it if you do! Thanks D. 🙂 xo

  14. My husband eats granola bars all the time! He goes through at least two boxes a week. I love them too, although I agree, homemade is SO much better! These chewy bars look fantastic, Demeter! You are reminding me that it’s been way too long since I’ve made my own granola bars. I love the chewiness to these and the fact that they’re loaded with chocolate! Pinned! And I loved Lip Smackers when I was little…my favorite was Dr. Pepper! 🙂

    1. Woah! He’s just like me then. 😉 Homemade is really the best! Thanks for the comment love and pinning, G. Oh, Dr. Pepper was the best! So spicy… 😉
