Description

Crunchy, crisp, refreshing and delicious – the best Asian Salad with homemade sesame ginger Asian Dressing topped with honey roasted peanuts and wonton strips!


Ingredients

  • 5 tablespoons extra virgin olive oil or neutral cooking oil
  • 1/2 teaspoon sesame oil, or to taste
  • 1/4 cup rice vinegar
  • 1 teaspoon less sodium soy sauce
  • 1 teaspoon fresh ginger, grated
  • 1 1/2 tablespoons honey or maple syrup
  • 2 tablespoons hoisin sauce
  • 12 teaspoons sesame seeds

Asian Salad Ingredients

  • ½ head Napa cabbage, sliced into 1/4” strips
  • ¼ head red cabbage, sliced into 1/4” strips
  • 1 large carrot, shredded
  • ½ cup fresh cilantro, destemmed and roughly chopped
  • 1 stalk celery, diced
  • 1 ¼ cups edamame – shelled, cooked, and cooled

Salad Topping

  • ½1 cup fried wonton strips, depending on your crunch preference – I used 1 cup
  • ¼ cup honey roasted peanuts, chopped
  • 1 bunch green onions, chopped

Instructions

  1. Add all Dressing ingredients to a small mixing bowl. Whisk until well incorporated. Seal and store in the refrigerator until needed.
  2. Wash, dry, and prepare all Salad Ingredients. Add to a large bowl.
  3. Top with wonton strips, peanuts and green onions.
  4. Drizzle Asian Salad Dressing over the salad, to taste. Toss to combine. Serve and enjoy!
