Strawberry Chia Seed Smoothie (Vegan, Gluten Free)

Strawberry Chia Seed Smoothie (V+GF): A cool, refreshing and super thick strawberry smoothie that tastes just like a strawberry fruit popsicle! Vegan and Gluten Free.

When I was a little kid, I used to think that summer school was just an excuse to get all of us youngin’s wrangled into one place, so the adults could go party. Or vacay, or whatever fun things they were doing (like eating big bags of chips in their pajamas and watching cartoons).

Well, I thought knew that summer school was just their way of making us do more un-fun things. Again, I was quite the trusting child. But, no matter what, summer could not be ruined—by fake school, or those stuffy classrooms full of chalk—as long as there were popsicles. And especially, if there were…

STRAWBERRY POPSICLES.

You know the ones I’m talking about! They tasted like fruit made into sugar, made into popsicles. They tasted the way strawberries looked like they tasted in cartoons (with perfectly bright green stems and carefully placed seeds). There was just something special about biting into one of those strawberry popsicles.

Especially after a long day of inhaling chalk dust and cooking on that summer asphalt.

But wait! What could this legendary, spoken only in hushed tones Strawberry Popsicle (that deserves it’s own capitalization, even!) have to do with my Strawberry Chia Seed Smoothie?

I’m so happy you asked! Well, when I started blending this baby up (scary visual…), my goal was to make a smoothie that was healthy, refreshing, and easy to make. Now, don’t fret, it’s still all of these things.

But the thing is, when I popped a straw into one of these babies (hmm…) and took a testing sip, I suddenly became seven years old again. Gently roasting in my oversized shoes, glasses askew, wholly awkward and unsure of everything.

Everything except this Strawberry Popsicle Strawberry Chia Seed Smoothie.

That’s how yum-tastic this is. Yep, even enough to warrant the use of a word such as “yum-tastic.” Even that. 😉

Description

Strawberry Chia Seed Smoothie (V+GF): A cool, refreshing and super thick strawberry smoothie that tastes just like a strawberry fruit popsicle! Vegan and delicious.

Ingredients

Scale
  • 2 tablespoons chia seeds
  • 1 ½ cups almond milk, divided
  • 2 medium bananas, sliced and frozen
  • 2 ½ cups frozen strawberries

Instructions

  1. In a small bowl, add chia seeds and ½ cup of almond milk. Give it a good whisk, until thoroughly combined. Cover and let set in the fridge for about 10 minutes.
  2. Add bananas and the remaining 1 cup of almond milk to a blender. Blend until smooth, scraping down the sides of the blender as needed.
  3. Add strawberries, blending until mostly smooth. Don’t worry—adding the chia seed milk later on will help blend it smooth.
  4. Take the chia seed mixture out of the fridge—it should have thickened to a gel-like consistency. Give it another good whisk. Using a rubber spatula or spoon, scrape the chia seed mixture out of the cup and into the blender. Blend until smooth.
  5. Pour into cups, and enjoy immediately!

  1. Chica, this smoothie looks amazing! I found a strawberry popsicle brand about 2 years ago that was amazing. They were made with natural ingredients and greek yogurt too! But I completely have forgotten the name of the brand! I guess I’ll just have to satisfy my strawberry popsicle cravings with your smoothie instead… 😉

  2. A healthy smoothie that tastes like a not so healthy popsicle? Heck yes!! I agree to that adults do send their kids to summer school so they can sit around all day in pjs and eating big bags of chips. I’m an adult and do that now AND I don’t even have any kids! No kids = more money to spend on more bags of chips!! Yay!

    1. A-ha! So you admit it! LOL. J/K… if only that’s what us adults got to do all day… 😉 I mean, we’ve got to work in the time for important stuff like that, but then work rears its ugly head. Haha. Thanks Karrie!

  3. I never been to summer school, but I wished to go there so badly! 🙂 I love smoothies in general and this pretty pink smoothie with chia seeds is beyond YUM, Demeter. I would love to wake up to this adorable glass every morning. This is such a nice and refreshing way to start morning with droolicious and protein pack smoothie!

    1. Believe you me Anu, you DO NOT want to go!! Lol. Basically, you sit there, in a classroom in heat, while staring out the window, looking at other kids playing… It’s pure torture! 😉 Thank you so much for your compliments. And I am loving the use of the word “droolicious.” Good one! <3

  4. As always loved reading your post! Never been to summer schools, don’t even know if we had any equivalent in Italy…but anyway, my favorite summer treat was and still is
gelato! In a cone 😉 , so good!! Your smoothie looks divine, fresh, yummy, healthy. It’s not chocolate but I love it 🙂 !

    1. Thank you so much Nicoletta! 🙂 Oh, how interesting. I never knew that summer schools aren’t exactly a thing in Italy. Oh wow, gelato in a cone sounds incredible! Thanks for stopping by. 🙂

  5. Yeah, I remember summer school! Love your posts Demeter! Thos smoothie looks amazing! I use a lot of chia seeds in cooking and this is a recipe, I’ll definitely try!

    1. You do? Yay!! Finally someone who went. Hehe. So you know what’s it was all about! Hope you enjoy it if you do. 🙂 Thanks Mira!

  6. OMG! I love strawberry fruit Popsicle! Those were the best as a kid. Just thinking about it makes me want to make this smoothie right now. I love hearing your stories, so entertaining! I never had to go to summer school growing up (thank god), cause it doesn’t sound fun. My favorite childhood summer treats were of course popsicles, and I always picked the red one! Love this smoothie! Cant wait to try this. 🙂

    1. Right??? So delicious and exactly what this tastes like! I was pleased, to say the least. 🙂 Aw, thank you Amanda. 🙂 I aim to please. You didn’t have to go? Lucky!! Perhaps you were much less of an annoying child than I was… Lol. Let me know how you like it if you do! Thanks for stopping by, dear. 🙂

  7. Iam fond of smoothies and this pinkish princess has won my heart. Iam loving it. Feel refreshed at the very first sight. Great recipe and amazingly capturing pictures demeter

  8. Having a healthy smoothie every day would be so much easier if they all looked this beautiful/were already made for me. I know it isn’t even that difficult to blend everything up in a blender (thankfully I don’t have to mash it by hand, this is not the Stone Age…) but sometimes I just want to run out the door with my smoothie and not do the dishes 🙂 so that is what deters me from having smoothies everyday. One of my fave summer treats would just be any Italian ice–but mango flavored is definitely my favorite <3 Have a great week, Demeter!!

    1. Lol. I know exactly what you mean! But in the end, when you have that smoothie in your hand, you just KNOW it was all worth it! Haha. Oh, Italian ice sounds delish–especially with mangoes! Have a great week too, Jessica! 🙂 Thanks for stopping by!

  9. It’s so interesting, when you mention old childhood memories and tastes, which are totally new to me. I grew up never ever having a strawberry popsicle. I had strawberry ice cream, but it’s a totally different thing 😉 (Also, there was no summer school in Hungary!)
However, I guess I don’t need old memories to enjoy this delicious smoothie! It looks so delicious and creamy ♥︎

    1. Oh, it’s equally as interesting hearing about your childhood as well! I mean, it’s so fascinating to learn who did this and who didn’t do that, you know? 🙂 Strawberry ice cream sounds just as delicious! No summer school? Lucky! Hehe. Nope, no old memories needed. Just an appetite. Thanks Evi! 🙂 <3

  10. Oh, man, I love reading your posts. So entertaining! Yikes! Summer school?! No thanks, girl! I’d rather spend my summers riding my bike and picking berries or playing hop scotch. And, love the word ‘yum-tastic’. Totally have to insert that one into my regular vocabulary. Between you and I we could probably develop a brand new dictionary or something and it would be called ‘The Dictionary of Awesome Words’. Sound good? Thought so 😉 Absolutely love this smoothie. It really screams Summer. Ok, not literally, cause that would be weird, but you know what I’m saying. I think I’ve had too much coffee. Off to make this yum-tastic smoothie! Pinned. Have a lovely week, Demeter 🙂

    1. Thank you so much D! Omigosh, I could use a good dose of hopscotch right about now. Who knew that when we grew up, we’d all just be hunched over a bunch of computers? Lol. When you say yum-tastic, you’ll have to record the entire incident and report back! Haha. Alright, let’s do it! I have a few thousand words to add… 😉 Thanks so much Dawn! (For the chuckles and everything else). <3

  11. I love when you accidentally end up creating something that tastes like childhood! I’m going to save this for when I visit one of the strawberry stands and get the absolute best. Cheers to nostalgia and feeling 7 years old again!

    1. Right? Hehe. It’s just the best! Oh my, I can only imagine how YUM to the max this would be with super duper fresh strawberries. 🙂 Thanks Megan!

  12. I think you can read my brain ~ I have had nothing but strawberries on the menu lately. They are so good. I will have to try this asap! My kids are gonna love.

    1. Yup, I think so too! 😉 Strawberries are just perfect for this time of year. Let me know how they like it. Thanks Laura!

  13. I’m with Cheyanne – you make the prettiest smoothies! And how happy am I that I have all the ingredients too! It is my lucky day! I never went to summer school, but I did teach summer school for a few years and it’s an entirely different ballgame in the summer months. A good strawberry popsicle always hit the spot at the end of the day!

    1. Aw, thank you so much Annie! Well, you’re lucky for having these ingredients and I’m lucky for having you here. 🙂 Such a different ballgame… I’m sure you were looking out the window and pining for summer relaxing too. Hehe. Thanks Annie!

  14. So I never had to go to summer school, but I felt bad for everyone that did! Who wants to be stuck inside all day, unless there was an endless amount of popsicles. And YES to strawberry ones! Those were (and still are) my favorite kind, aside from bomb pops! This smoothie looks fantastic, Demeter! I wish I could reach right through my screen and grab this glass. I love the flavor, especially with the chia seeds. So perfect for this Monday morning! Pinned!

    1. Oh, you lucky duck, you! 😉 I’m sensing that you’re a big fan of strawberry… 😉 Thanks so much Gayle!

  15. Hahaha – summer school! Eeeek. Lucky for me I never went to summer school, so I don’t know what all that was about, but I’m guessing it wasn’t all about the fun. Nothing like strawberry popsicles and all their deliciousness. I know exactly what strawberry pops you are talking about, and OMG, those were my favs growing up too! It’s been a hot minute since I’ve had one of those bad boys and I’m thinking I need their scrumptiousness up in my Pop hole immediately, so thank God for this smoothie!! You make the prettiest smoothies, Demeter and this one is no exception! Love the flavor (duh), love the chia seed and LOVE that I have everything to whip this beauty together! WINNING! Hello strawberry delicious, you are about to get in my belleh! Pinned! Cheers, sweets! xoxo

    1. No ma’am, no fun at all! Hehe. Kinda more along the lines of sitting in a classroom with a LOT of bored kids, staring out the window at the wayyyy luckier kids who were playing. Torture I say, torture! Right? How’d I know you’d like strawberry popsicles? Pretty much like the only frozen dessert that could rival chocolate-y stuff. 🙂 Pop hole. LOLOLOL. Thank you so much Chey! You’re the sweetest (and the sassiest–my fav part). Thanks for pinning and stopping by my dear! xoxo
