Incredible Fudgy Brownie Bites Recipe
Why are mini desserts so much better than regular sized desserts? (Maybe because we feel indulgent in a cute way?) I love making today’s fudgy brownie bites recipe because they’re just the right amount of fudgy, chocolatey, and satisfying in a cutely mini-sized portion.
These bite-sized brownie bites (or two bite brownies) just hit the spot when you’re craving chocolate-everything. They’re great for packing in lunches, serving at parties, or making for the one you love! Hello, Valentine’s Day (or Galentine’s Day)!

Brownie Bite Recipe Ingredients
- All purpose flour
- Unsweetened cocoa powder – make sure not to use dutch-processed cocoa
- Butter – use unsalted butter so we can choose the exact amount of salt that goes into this recipe
- Pure vanilla extract – use real and skip the imitation for better flavor
- Granulated sugar & brown sugar – regular sugar is sweet and mellow, while brown sugar adds a warm chewiness to these mini bites brownies
- Egg – Make sure it’s at room temperature before preparing the recipe
- Chocolate chips – you can use high-quality chocolate chips or, truly, your favorite chocolate chips
- Baking powder
- Salt

What are Mini Bite Brownies?
Mini brownie bites, otherwise known as two bite brownies, are smaller cut brownies, or in the case of today’s recipe, mini muffin pan brownies. You can eat these brownie bites in two bites. Or, in one bite, as Erik is so inclined…
How to Make Brownie Bites
- Preheat the oven to 350°F and set aside mini muffin pans.

- In separate bowls, whisk together the dry ingredients, then the wet ingredients. Add the dry to the wet, then use a spatula to stir and combine for your brownie bite recipe batter. Fold in chocolate chips.

- Using a small cookie scoop, drop batter into the pan. Use a spoon to smooth the batter into an even layer.

- Bake for 14 minutes, then cool in the pan for 20 minutes. Place a cooling rack on top of the pan, then, holding both the pan and the rack, flip them upside down. Bang the pan to release the brownie bites, or use a butter knife to release bites. Enjoy!

Q&A
- How Long to Bake Brownie Bites? At a temperature of 350°F, you’ll be baking these brownie bites in a mini muffin pan for about 14 minutes.
- How long to cook brownie bites from a mix (box mix)? This depends on the exact box mix, but you can bake the bites for 10-12 minutes for fudgier brownies and 15-20 minutes for firmer brownies. Tip: fudgier, less baked brownies will be harder to remove from the pan.
Delicious Toppings
Have fun with friends or the kiddos by dressing up this brownie bite recipes with frosting, sprinkles, and more!
- Frosting: top with chocolate frosting, cream cheese frosting, or maple glaze!
- Toppings: add nuts (like toasted slivered almonds), sprinkles, or mini chocolate chips to the frosting or glaze
- More: top with a scoop of ice cream or even vanilla bean yogurt… or serve with peppermint brownie cookies!

Tools You Need
- Mini Bites Brownies Pan
- Small Cookie Scoop
- Cooling Rack – literally my favorite racks: you can toss them in the dishwasher or the oven and they don’t rust!

Fudgy Brownie Bites Recipe
Ingredients
Dry Ingredients
- 1 ¼ cups all purpose flour, spooned and leveled
- ½ cup + 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/3 teaspoon salt
Wet Ingredients
- 1/2 cup unsalted butter, melted but not hot*
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 large egg, room temperature
- 1 ½ teaspoons pure vanilla extract
Add-ins
- 1 ¼ cups chocolate chips
Instructions
- Preheat the oven to 350°F. Set out two nonstick mini muffin pans. Set aside.
- In a medium bowl, whisk together the Dry Ingredients: flour, cocoa, baking powder, and salt. In a large bowl, whisk together Wet Ingredients: melted (but not hot) butter*, granulated sugar, brown sugar, egg, and vanilla.
- Add the dry mixture to the wet mixture. Stir and fold with a rubber spatula until just combined—with no flour patches remaining. Fold in chocolate chips.
- Using a small cookie scoop, scoop and drop about 1.5 tablespoons of batter into the pan. Using a spoon, smooth into an even layer. Bake for 12-16 minutes. Mine took 14 minutes.
- Cool in pan for about 20 minutes (to allow the bites to firm up). After cooling, place a cooling rack facedown onto the brownie pan. Hold the pan and rack tightly together and flip them over. Holding the two tightly, bang on a sturdy surface until brownie bites pop out.** Cool completely and enjoy!

Notes
- *For the melted butter, make sure to gradually melt it so the temperature doesn’t get so high. You don’t want hot butter to cook the egg.
- **Or, using a butter knife, wedge the knife in between the edge of a bite and the pan. Insert and lift up to remove the bite (not my preferred method as it tends to dent the brownie bites).
- Storing Instructions: Cool brownie bites completely, then store in an airtight container at room temperature for around 1 week, or in the refrigerator for 1-2 weeks.
- Freezing Instructions: You can keep these brownie bites in the freezer for 1-3 months in a freezer-friendly container.
