Aioli recipes are one of my favorite sauce recipes to make, among this incredible tartar sauce and this amazing garlic aioli. They’re so easy to whip up, include just a few ingredients, and pack a wallop of flavor that makes everything from burgers and fries to onion rings, potato wedges, and roasted veggies friggin’ heavenly.

So guess how I feel about today’s chipotle aioli? SO GOOD.

What is Chipotle Aioli?

To start with, aioli is a sauce that’s made by emulsifying olive oil and eggs. This process makes a thick and creamy sauce that resembles mayo. In today’s recipe for chipotle aioli, we’ll be using a shortcut by utilizing ready-made mayonnaise.

Chipotle aioli is a spicy ‘n creamy sauce that mixes the flavor of spicy chipotle peppers in with the creamy texture and flavor of mayonnaise. Another shortcut we’ll be using? Chipotle powder!

What is in Chipotle Aioli?

  • Mayonnaise: an easy shortcut for hand-emulsifying aioli
  • Garlic: you can use 1 clove of pressed garlic or use garlic powder
  • Lemon Juice: fresh-squeezed is best. For a twist, use fresh lime juice.
  • Chipotle Powder: so, so easy to use this instead of chipotle peppers. You can buy it here. Or, you can mince chipotle peppers to make chipotle pepper aioli.
  • Salt and Pepper
  • Cumin: for a little earthiness and flavor.
  • Onion Powder: do not skip–this ingredient takes this chipotle pepper sauce to the next level.

Is Chipotle Aioli Spicy?

Yes, but you can adjust the level of spice exactly to your liking. I made this chipotle aioli medium spicy. If you’re sensitive to spice, you can use less than I recommended and dial it up based on your comfort levels. If you love spice, feel free to make the recipe as is, then gradually stir in more chipotle powder to your liking.

How to Make Chipotle Aioli

Add all chipotle aioli ingredients to a small bowl. Then, stir it altogether until very well mixed.

To adjust the flavors, add more salt and pepper if desired. Also, adjust spice according to your tastes. Enjoy!

Store this chipotle aioli in an airtight container and keep in the refrigerator for 3-5 days.

Ingredients

Units Scale
  • 1/4 cup mayonnaise
  • 1 clove garlic, pressed or 1/4 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • 1/4 teaspoon chipotle powder or 1/2 tablespoon chipotle pepper, finely minced*
  • Salt and pepper to taste, I used 1/8 teaspoon each
  • 1/8 teaspoon onion powder
  • Pinch of cumin

Instructions

  1. Combine all Chipotle Aioli ingredients in a small bowl. Stir until very well mixed.
  2. Adjust the flavor by adding in more salt and pepper as desired. Increase the spice level by adding in more chipotle powder.
  3. Serve immediately or store chipotle aioli in an airtight container in the refrigerator for 2-3 days.
