Easy Chocolate Peanut Butter Ritz Cookies
The holidays can be an insanely hectic time. Running around decorating, cooking, socializing, and everything else. So I thought it’d be the perfect time to share my super easy chocolate peanut butter ritz cookies. Two salty and crunchy Ritz crackers sandwich peanut butter filling and are dipped in decadent chocolate, topped with coarse salt.
I love making these peanut butter chocolate ritz cookies because they come together in just 3 steps. The result? Crunchy & creamy snack perfection with chocolate coating that melts in your mouth, like Christmas crack, Oreo truffles and white chocolate popcorn. YUM!

Peanut Butter Ritz Chocolate Cookies Ingredients
- Ritz crackers or other buttery round crackers will do
- Peanut butter: use creamy peanut butter, not natural which will spill over the crackers
- Chocolate chips: use semi-sweet chocolate chips or candy melts
- Optional: coconut oil helps the chocolate to melt smoothly
- Toppings: coarse sea salt or holiday sprinkles take these ritz crackers chocolate and peanut butter cookies over the top

How to Make Ritz Peanut Butter Chocolate Cookies
- Spread 1/2 tablespoon of peanut butter in between two Ritz crackers. Place cookies on a lined baking sheet.

- Melt chocolate and coconut oil until smooth. Dip ritz cookies, dripping off excess. Replace onto sheet. Sprinkle with coarse salt or sprinkles.

- Place in the fridge until firm. Enjoy with Rolo pretzel bites!
Ritz Crackers Chocolate and Peanut Butter Cookies Variations
- Dip in white chocolate: make white chocolate ritz peanut butter cookies and top with dark chocolate drizzle.
- Cover only half: I like to dip just half of some of my ritz cookies to give gift receivers a sneak peek!
- Holiday ritz cookies: use green wafer melts instead of semi-sweet chocolate and top with Christmas sprinkles!
- Make almond butter ritz cookies: for those allergic to peanuts, swap the PB for AB (almond butter).
- Make it salty: use salted peanut butter and coarse salt on top. The combo is incredible.

How to Store
For Room Temperature or Refrigerator: Store cookies in an airtight container for 1 week. Avoid heat or direct sunlight.
For Freezing: Store chocolate peanut butter ritz cookies in a freezer-friendly, airtight container for 1-3 months. Thaw for 5-10 minutes before enjoying, or eat frozen and watch the teeth! ๐

Peanut Butter Chocolate Ritz Cookies
Ingredients
Chocolate Peanut Butter Ritz Cookies
- 36 Ritz crackers, or other buttery round crackers
- ½ cup creamy peanut butter, not natural-style
- 12 ounces semi-sweet chocolate chips, or candy melts
- 1 teaspoon coconut oil, optional
Toppings
- Coarse sea salt, or flaked sea salt for pics
- Holiday sprinkles
Instructions
- Line a large baking sheet with parchment paper. Lay 18 Ritz crackers upside down, just a bit spaced apart on the lined baking sheet.
- Spread ½ tablespoon peanut butter onto each cracker. Press a Ritz cracker on top, creating a cookie sandwich.
- Add chocolate and coconut oil to a small, microwave-safe bowl. Melt in 15 second increments, stirring in between heating until smooth.
- Dip each cookie sandwich completely in chocolate, tapping off excess. Place onto the baking sheet. Sprinkle salt over each cookie.
- Allow to set in the refrigerator until firm. Enjoy!
