No Bake Cranberry Coconut Energy Bites (Vegan, Gluten Free, Dairy Free)

No Bake Cranberry Coconut Energy Bites (V, GF, DF): just 7 simple ingredients for delicious protein-packed energy bites. Vegan, Gluten Free, Dairy Free.

These No Bake Cranberry Coconut Energy Bites taste like a burst of fresh, delightfully textured and energy-pizzazzing portable awesomeness. Just sayin’. But before I sing their praises, here’s the wedding update (from my sister Penny’s wedding) that I promised. 😉

Remember how I told you guys about my sister getting married this summer? Well… it happened. And it was amazing. I’ll be honest (as if that were a non-regular occurrence for the likes of me), I’m not really one for weddings. Yes, even if there were sparkly pink bowler hats involved.

They’re usually a tad (or A LOT) stressful, there’s so much tension, pressure, expectations shooting from one person to another, and the whole “where are you in your life” status check that immediately devolves to “you suck.” Gee, thanks!

But you know what? This wasn’t that. At all. It was a true celebration of love, kindness, happiness, support and community. My sister Penny and I live really far from each other. Make that nearly 3,500 miles apart. Being the amazing sister that she is, I always worry that she’s not as happy or as loved as she deserves. She’s the type to give everything and not say a word about getting anything in return.

Penny and Andrew

After everything I saw and experienced, I know that I have nothing to worry about. You guys, she has the MOST amazing friends and community. If you’ve ever seen Friends or shows about how your family might just include people you aren’t actually related to—this was exactly that. 🙂

Toast with Gals

I have never felt so much positivity and support, all in one room. It was such a great reminder to me, Erik and my mom (bc we can be a bit cynical) that there is so much goodness in the world. I’ll tell you more about the wedding in the next post. But for now, onto the wedding shower!

And just in case you were wondering, there was no knitting of newlywed pillowcases (darn it!) or sparkly pink bowler hats. But there was plenty of love. See photo of the actual word “love” below for evidentiary purposes. 😉

Her friend, Theresa, who she met in law school, is the absolute BEST. Btw, Happy Birthday Theresa! 🙂 She gave a speech that I get all choked up just thinking about. ❤️ Seriously, whenever I relive that speech, I have to think about something gross to distract me from crying. Imagine my face going from scrunched-up cryface to furrowed-brow disgusted. It’s quite the scene!

Here’s a photo of my No Bake Cranberry Coconut Energy Bites. They were not at the wedding shower… but they coulda been. In theory. 😉

Here Kevin (Monica’s man), Monica, Penny, me and Erik are, posing in the parking lot of BevMo like the fantastically normal people we are. As you can see, I’m the Khloe of my family. How else would I toss my sisters into the air as if they were tiny stuffed animals?

Group Khloe

Penny’s good friends, Jennie and Chess, hosted the super stylish party in her incredible apartment. (I honestly don’t know how Erik and I got invited.) Check out the table they were serving everything on! Unfortunately, it couldn’t fit in my suitcase, so I wasn’t able to take it home as a party favor.

Can you believe, about 15 minutes later, that ENTIRE gorgeous table was covered in food. There were so many fancy crackers, dips, veggies and all kinds of things I’m too lowbrow to name, let alone pronounce. And it was all beautiful. 🙂

It’s Bro Time! Andrew (the groom), Erik (Official Beaming Baker Taste Tester), and Kevin (Monica’s Partner in Crime).

Andrew Erik Kevin

At the end of the shower, Penny’s friend made Penny and Andrew (or Pandy, if you will) cut the Love cake. They simply refused to keep a slice in their freezer to “enjoy” in one year. I tried to horn in with tips about wrapping it in wax paper, airtight containers, blah blah blah, and had to admit that it would taste like freezer in one year. Make that Old Freezer. Yum.

Cutting the Cake

The wedding shower was a wonderful kickoff to a weekend full of group hugs (my fave), sarcastic quips (tight second), LOTS of eating, goofy dance parties and more. Living the life of a food blogger in Maine, I don’t see many people and I tend to get a bit socially awkward like… all the time. But this was so good for the soul. 🙂 If you ever meet me in person, my sincerest apologies in advance. I do mean well. 😉

I’ll share more in the next post with lots of fun photos from the wedding reception! In the mean time, let me very casually and smoothly transition into no bake awesomeness talk. Ahem.

Y’all know that I love no bake treats. There’s just everything to love about ‘em: easy to make, short list of ingredients, super portable, tasty, good for you, plus, can keep at room temperature. And if you have constant snack cravings like I do, and you simply cannot find a way to tote a small refrigerator in your purse, then you know the basic dilemma when it comes to snacking.

The Snack Dilemma: dry snacks usually aren’t too good, and the wet/need refrigeration ones just refuse to understand that there aren’t many cute purses that can hold an actual fridge. Darn it. But the answer to all of this lies in the Power of No Bake. Oh YES.

These sweet (and I do mean that literally) No Bake Cranberry Coconut Energy Bites are everything you and your fridge-less purse could ever need. They are:

  • packed with protein in every bite
  • made with just 7 simple ingredients
  • full of delicious cranberry and coconut flavor
  • vegan, gluten free, dairy free and awesome
  • yummy at room temperature for days and days (hello, purse!)
  • plant-based and allergy-friendly
  • portable like nobody’s business
  • super easy to whip up
  • lightly sweet and perfectly textured

So whatcha waitin’ for? A built-in fridge-equipped purse to come along? You have to tell me if you find one of these. But I think they might be bad for your back. Or at least your social life. Whichevs… Get these 7 simple ingredients together. It’s time to get your No Bake Cranberry Coconut Energy Bites snack on!

Sending you all my love, and maybe even a dove. xo Demeter ❤️

No Bake Cranberry Coconut Energy Bites: an easy, 7 ingredient recipe for delicious protein-packed energy bites made from simple ingredients. Vegan, Dairy Free, Gluten Free.

Dry Ingredients

  • ½ cup dried cranberries, chopped
  • ¼ cup walnuts, finely chopped
  • ½ cup gluten-free rolled oats
  • 1 cup unsweetened coconut shreds or flakes
  • ¼ cup ground flaxseed

Wet Ingredients

  • ¾ cup natural, unsalted almond butter*
  • ¼ cup pure maple syrup

  1. In a large bowl, mix together all of the dry ingredients: cranberries, walnuts, oats, coconut and flax.
  2. Add almond butter and maple syrup. Using a sturdy spatula, stir and fold together until well incorporated.
  3. Scoop mixture into your hands (mine are 2 tablespoons each). Roll and press into bites. If the mixture is too dry, add in a bit more almond butter or maple syrup. If the mixture is too wet, add in a bit more coconut or oats. You want a slightly sticky dough texture.
  4. Enjoy!

– *Make sure you use almond butter that only has one ingredient: almonds. It should be naturally drippy and liquidy to work in this recipe.
– Store in an airtight container for up to 2 weeks.
– Adapted from my No Bake Peanut Butter Coconut Bites (Vegan, Gluten Free, Dairy Free)

  1. Sounds (and looks) like an awesome wedding!! I agree weddings can be stressful, especially with all those life update questions (boo!) but every now and then there’s a really fun one like your sister’s. Next time I have to hit one I’m gonna pre fuel with plenty of these energy bites 😉 6 days of my week start with a similar snack. Can’t wait to incorporate this version!!

    1. It was TOO much fun!! But not, because ya know. Haha. Those life update questions can sure be a downer! Haha. Pre-fueling is such a good idea! Maybe most people are crabby at weddings because they’re hungry? Lol. Can’t wait to hear what you think, Megan! xo

  2. Too sweet!! Loved reading about the bridal shower and it sounds like you all had such a wonderful time. Family is the best! We were married in Jamaica so couldn’t keep a piece of our cake but if I could have, I would have totally brought home a piece to put in my freezer and eat after a year. lol!
I’m surprised you didn’t bring your cranberry coconut bites to the shower because they would have fit in perfectly. I’ve got to make these soon cos it’s all my fav flavors rolled up in one ball 😉

    1. It was the best time, Karrie! 🙂 I wish you were there! In Jamaica? That sounds unbelievably wonderful. *happy sigh* Does it honestly get more romantic than a getaway wedding? <3 You totally would eat it a year later! Haha. I wish you had, so you could report back. I'm dying of curiosity!! Thanks Karebear! 🙂

  3. I’m so happy for your sister! Congratulations again! Thanks for sharing beautiful pictures of beautiful people, it was so nice! Your no bake cranberry coconut energy bites are the best no bake, vegan and gf snack ever! Pinned!

  5. Congrats to your sister! It’s so great to hear you had fun at the wedding shower! I’m normally also not a wedding/wedding shower person, but it’s nice to know that there’s hope and it’s possible to go to awesome weddings with the best people 🙂
I’m also so happy to see all these pictures of you and all the cool people in your life we’ve heard so much of. Can’t wait to see your next post with more pictures!
And oh, these energy bites, you know how much I love your no-bake treats. Cranberries, walnuts, almond butter and coconut sounds like such a delicious combo. Also very very pretty 😉
Pinned, it’s definitely a recipe again I’ll be making soonish!
P.S. Love that vibrant yellow textile!

    1. Evi, I totally knew you’d relate! Some weddings are… not fun. Too much pressure and such. This one was actually really different! There was so much positivity and love. Can’t wait to share ’em! I was hoping you’d notice the textile! You know how much I love all of your hand-painted boards! 🙂 Can’t wait to hear what you think, E. xo

  6. Awwww what a lovely party. Love the pictures, Demeter 😉 Everyone looks so happy. I can feel the love and happiness <3 Congratz once again!
No bake treats are my FAVORITE! I love energy bites, and cranberry and coconut combo, omg … yes please! 😀 Your bites Demeter looks sooo delicious 😉 Sharing off course! Have a great week friend 😉

    1. I’m so happy you enjoyed them, Natalie. 🙂 This world needs a bit more love and happiness, ya know? <3 No bake: right?? Probably why we're buddies! Hehe. They're just so easy and delicious! Thank you my friend. Have a wonderful week! xo

  7. WOW! congratulations to your sis once again. They both look so cute together. I love coconut in any form. These energy bites looks so beautiful and delicious.

    1. Aw, thanks so much Kushi! 🙂 They’re the cutest couple–so loving and warm. <3 Coconut's awesome, right? Thanks K! xo

  8. Glad you had a blast at the wedding, Demeter!!! Although I already knew that… I mean, hello #besties #WithOfficialBraceletOnTheWay. You forgot to mention flip flops in all those words up there though. 😉 Anyways, that cake is GORGEOUS! And I’m glad they didn’t save a piece, because that would mean they didn’t share ALL of it. And that would be a shame, because it looked delish! Thanks for sharing the photos and love with us, chicka! Now let’s chat about balls.. err bites! Ha. LOVE these, lady! Cranberry and coconut?! YES PLEASE! And I could always use extra energy in bite sized form! Talk about the definition of amaze-balls right?! Gimme! Pinned of course! Cheers, muffin pie! xo

    1. Hello my sweet strawberry shortcake! 🙂 Did I tell you I missed you this weekend? <3 BEST hashtag ever. Should we get that hashtag printed on the BFF bracelets? Or is that too meta? Lol. Flip-flops: spoiler alert--they *might* just be in the next post. 😉 Ball jokes: Lololol. Seriously, I can't. I. Am. So. Immature. ? Amaze-balls: that's why I love ya, girl. Thank you for pinning, and especially for being my bestie. Muah! xoxoxo

  9. This story time just jumped from awesome to totally absolutely flipping amazing because PICTURES!!! I’m like a second grader–all stories should have accompanying pictures. And better yet, pictures filled with happiness and celebration and love and…gahhhh I’m getting all the warm and fuzzy feelings from this! And cake. Wow what a cake! And that table, can you just imagine the photo taking possibilities ? Oh and I’ve always thought the cake in the freezer thing was utter craziness and a waste of fresh cake. So I love Penny even more for throwing that one out the window 🙂 “Pandy” lol…all I can think of is panda bears? It sounds absolutely all-the-unicorns magical, and I love being able to put faces with names now. Speaking of faces with names, a snack named no bake cranberry coconut energy bites needs to find it’s way to my face! Even my no-bake treats usually require coldness, so you have quite the perfect formula here. And did I mention I love coconut in things? It’s a recent self discovery, but I do. Hey if they are okay at room temp, that means you can ship me a batch right? Actually if you are going to bother with all that packaging and mailing hassle, make it 4 batches? I’m just waiting to see a fridge purse show up on Shark Tank now…I saw it here first though so you should get royalties or something! xo

    1. PICTURES!!! Whoop whoop! 😉 I was especially hoping you’d like this one, Nat. <3 Well, my dear lady bird, we can be second graders together, because a story just isn't much without photos. Unless you write like J.K. Rowling. Easy, right? Lol. I love that you got the warm fuzzies from this! Best reaction ever. <3 Pandy... Right?? Lol. A cute nickname for a cute couple. 🙂 You just started getting into coconut?? AWESOME. By now, you might guess that I LOVE coconut. Shall we link arms now? I think it only makes sense... Nat, once we get started with packages, it's gonna be ON! Lol. I foresee a long-standing series of shipments that each one up the last. It'll be EPIC. ? You keep me posted on this fridge purse, okay? ?

  10. Demeter – Oooh I am so so incredibly glad I didn’t miss your post about your sister’s wedding/wedding shower! Haha – I was looking forward to seeing y’all in sparkly pink bowler hats but that GORGEOUS table will do! Wow – it’s a stunner – as are these bites! I so love no bake bites and these chock full of cranberries and walnuts are making me drool – TGIS-T (thank goodness it’s snack time)!
When my sister moved to NYC, I so worried about her, her friends, etc and so I can empathize with what you felt – but, it’s a beautiful thing to find that one’s worrying was needless. So happy for y’alls family and it’s new members and lol on the “Khloe” comment!
Happy Monday sweet friend – glad to catch up with ya!

    1. Shashi! I was gonna yell at you for stopping by, especially since you’re supposed to be spending time with your daughter! Did she leave yet? Oh, if I could have found a sparkly pink bowler hat, I would have worn it! Lol. At least for two seconds. 😉 TGIS-T has got to be the BEST time! Lol. Thank you so much for sharing about your sister, Shashi. It’s that sis worry/love, you know? I’m so happy that she’s happy in NYC! Happy Monday to you, my dear. Have fun with your girl! Muah. xo

    1. Aw, thank you Rebecca. Double sweet is always a good idea! 😉 They’re so perfectly tart and sweet. 🙂

  11. Those are some really cute pictures! I’m glad your sister was surrounded by so much love. It’s great to have wonderful family and friends. Congrats to your sister! I can’t wait to try your no bake cranberry coconut energy bites! (Coconut is the best!)

    1. Thanks so much, Sophia. 🙂 It’s the best to have wonderful family and friends. *happy sigh* I’m just glad I don’t have to worry about her. <3 I hope you enjoy them! 🙂 Coconut rocks!

  12. Congratulations to your sister! That is SO exciting! Sounds like she has a wonderful support system. And that cake is gorgeous! Just like these energy bites. I can’t get enough of snacks like this, especially when I’m trying to eat on the healthier side. Cranberries are one of my favorite add-ins for this type of treat, so I definitely have to try these out. Pinned, of course! Hope your week is off to a great start!

    1. Thank you, Gayle! 🙂 Her support system is simply amazing. <3 So true--these snacks are just what we need in a pinch (especially a healthy one lol)! Let me know how you like them! Thank you for pinning, G. 🙂

  13. Congrats once again to your sis, Demeter! They both look so happy!! And so wonderful that she has a great group of friends. We all need that, right 🙂 ? Been watching Friends a lot lately, by the way
That cake is absolutely gorgeous! Hubby and I saved a piece of cake from our wedding. I don’t think we ever did eat it. Probably should have eaten the cake then and there, but the day was soooo busy and just went by so fast!
Wish I had this recipe for these bites yesterday! I was really craving something like this 🙂 Can’t wait to try. Pinned, of course!
    Have a great week! xoxo

    1. Thank you so much Dawn! You’re the sweetest. 🙂 We all need a great group of friends–they just make our spirits lift, ya know? 🙂 It’s Friends all day, every day! 😉 We’ve got to chat about that! So your cake might even be at the back of your freezer, right now. Woah. Haha. Can’t wait to hear how you like it, if you do! Thanks D! xoxo
