Healthy Vegan Cookie Dough Recipe (Edible!)

a delicious 5 ingredient healthy cookie dough recipe for vegan cookie dough that’s safe to eat raw & eggless.

Did you ever eat raw cookie dough when you were a kid? You know, you wait until your mom turns her back, claw out a huge clump of cookie dough from one of those yellow-wrapped logs and cram it into your mouth as quickly as possible before she sees?

I may have done that once or twice. Or maybe I learned my lesson from getting sick over that raw, totally not edible cookie dough. And then I learned to save all the little cookie dough bites from cookie dough ice cream. Then, mash those together to have one big ball of actually edible cookie dough to feast on.

Or something. I mean, it’s not like I was/am obsessed with cookie dough. Or anything.

Now, as a less adventurous adult, I’m all about eating perfectly safe-to-eat edible cookie dough. Skip the stomachaches, level up the YUM factor. So today, I’m re-sharing a recipe I published back in 2018 for what was formerly known as 5 Ingredient Chocolate Chip Cookie Dough Bites Recipe (Vegan, Gluten Free, Dairy-Free, Refined Sugar-Free).

No, I wasn’t known for my brevity back then. Lol.

Today, I’m sharing all new info for the same beloved vegan edible cookie dough recipe and I hope you get to try it! (Or rediscover it if you’re forgotten it.)

How to Make Vegan Cookie Dough

Learn how to make vegan cookie dough that’s edible and healthy with just a few steps:

Line

Line a baking sheet with parchment paper. Set aside.

Add Ingredients

Add oat flour, maple syrup, coconut oil and pure vanilla extract to a medium bowl.

Stir

Using a spoon, stir and fold until the mixture thickens. I like to switch to using a rubber spatula at this point to fold all the ingredients together until it resembles cookie dough. Fold in vegan chocolate chips.

Scoop

If you want cookie dough bites, follow this step. Using a cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet. If desired, dot vegan chocolate chips onto each ball and roll into a smooth sphere.

Enjoy

Allow to firm up for about 5 minutes and enjoy the best vegan cookie dough!

How to Store this Vegan Cookie Dough

Some folks like enjoying these healthy edible cookie dough bites on Day 1, as that’s when they’re softest. However, others enjoy this cookie dough all the way through 2 weeks. I recommend keeping this cookie dough for up to 1 week.

Just make sure to store your cookie dough in an airtight container at room temperature or in the refrigerator.

To Soften: I love popping a few of these vegan cookie dough bites onto a plate and warming them up in the microwave. Heat in 10-second increments until softened. It’s the BEST when the vegan chocolate chips are melted as you bite into each soft ball of cookie dough.

  4. HI! I don’t have any oat flour or oats to make it, but I do have flax meal and garbanzo flour. Will a combination of these work as a good substitute?

    1. Hi Jane! I’m not sure because I haven’t used garbanzo flour in this recipe before. If you do try it, start with a 1/3 recipe trial so you can test smaller amounts until you get the texture you like. Hope this helps!

    1. Hi Brynnah, all purpose flour will work, you’ll just have to do the following to ensure it’s safe to eat (kill bacteria): spread flour on a baking sheet in a thin, even layer. Bake at 350F for 5-7 mins. Then, use in the recipe. Hope you love it! 🙂

  5. Just made these (eating them now). Followed the recipe exactly. They taste amazing and were so quick and easy to make. I used my vitamix to make the oat flour and it came out perfect. Thank you so much! So glad I stumbled across your site.

    1. Thank *you* for taking the time to let me know how much you enjoyed my recipe! Also, how cool is it to make your own homemade oat flour, then use it in an easy recipe? 🙂 I’m so happy you’re here, Adriane. Welcome! .

  6. I am going wfpbno. While I would love to try the cookie bites, I need to give up the oil – any oil, including butter. Any suggestions?

    1. Hi Bobbie, I realize you wrote this over a year ago, but I wanted to share I substituted Coconut oil for unsweetened apple sauce and it works perfect!

  7. hi love this recipe but is there any coconut taste? or anything to use to sub the coconut oil? because my sister isn’t a fan + i’d love for her to have some! thank you

  8. how many 1TB balls does this make and what can I substitute for maple syrup? How many dates would be substitute OR how much liquid stevia would be substitute? Please help, I want to try soon! Also, Can I replace chickpeas for the oat flour?

    1. Hi Laura! Yes, it’s possible. Just do the following to ensure it’s safe to eat (kill bacteria): spread flour on a baking sheet in a thin, even layer. Bake at 350F for 5-7 mins. Then, use in the recipe enjoy!

  9. Any suggestions for how you’d modify the recipe if you were planning to eat them several days later (“Best if enjoyed the first day; Day 2 and on, the bites will become much drier.”)? Thinking about making these for a camping trip, where reheating won’t be an option. Thanks!

  10. These were YUMMY. Bonus: A quick recipe for a quick fix too. I added a sprinkle of kosher salt after rolling (as I love salted chocolate, salted caramel…so why not). We loved it. Thank you for the recipe!
