I love these garlic roasted potatoes for so many delicious reasons. Not only are they easy to make, but they’re a joy to make.
Imagine fragrant garlic and melted, tangy parmesan pairing beautifully with buttery potatoes with soft centers and crisp edges.
Ingredients for Garlic Parmesan Roasted Potatoes
You can say goodbye to a long, complicated recipe for garlic parmesan roasted potatoes.
And, instead, say hello to today’s simple and fantastic garlic roasted potatoes!
- Red potatoes – sometimes these can be a bit big, in which case I’ll quarter or even eighth them. Otherwise, small or creamer potatoes work great
- Olive oil – use extra virgin olive oil for its unrefined, stronger flavor
- Garlic – fresh garlic is best, but minced will do
- Oregano
- Italian seasoning
- Parmesan – freshly-grated is great, dairy-free is good, too!
- Salt and pepper – also try adding some seasoned salt for an extra kick.
- Butter – Use salted butter if you want it extra salty (I used unsalted), or go with vegan butter
- Freshly chopped parsley – flat leaf is nice, but curled is just fine!
How to Make Garlic Roasted Potatoes
We’ll go over how to make garlic roasted potatoes here with step-by-step photos.
Begin by preheating the oven to 400°F. Then, line a baking sheet with greased foil. You’ll want to use enough oil so the parmesan doesn’t stick during baking.
Then, wash and dry potatoes and chop into ¾” cubes. Add potatoes to a large mixing bowl.
Next, add these ingredients to the bowl: oil, garlic, and seasonings.
My favorite part is adding in the parmesan. It adds such a tangy and flavorful punch to your roasted potatoes.
Now, stir and fold the ingredients together to prepare the tasty garlic roasted potatoes mixture. Make sure to mix well.
Next, pour the roasted garlic potatoes mixture onto the prepared baking sheet.
For crisp, evenly roasted garlic potatoes, make sure to spread potatoes into an even, single layer.
Next, bake for about 25 minutes. Stir and flip, then bake again for 15-20 minutes, until fork tender at the center and crisp at the edge.
To finish the garlic parmesan roasted potatoes, carefully remove the baking sheet from the oven.
Then, place on a heatproof surface. Add butter and optionally, some more parmesan. Stir and fold the butter and parmesan with the potatoes.
Lastly, transfer to a serving dish and top with fresh chopped parsley and salt and pepper to taste.

How to Store Roasted Potatoes with Garlic
Before attempting to store, make sure to cool your roasted potatoes with garlic completely.
Once cooled, store in an airtight container. Keep garlic potatoes in the refrigerator for 1-4 days.
You can heat potatoes in the microwave before serving or reheat in the oven.

Garlic Roasted Potatoes
- 3 lbs. red potatoes
- 3 tablespoons olive oil or cooking oil of choice
- 5–6 large cloves of garlic, finely chopped or minced
- 1/2 teaspoon oregano
- 1 teaspoon Italian seasoning
- 1/2 cup Parmesan cheese
- 1/2 teaspoon salt, or to taste
- A generous pinch of freshly ground black pepper
Butter Topping
- 1–2 tablespoons butter
- 1/4 cup freshly-grated parmesan
- Freshly chopped parsley
Instructions
Roast Potatoes
- Preheat oven to 400°F. Line a baking sheet with greased foil.
- Wash and dry red potatoes. No need to peel. Halve or quarter potatoes as needed until uniformly-sized, about ¾”-inch.
- Add potatoes into a large mixing bowl with olive oil, garlic, oregano, Italian seasoning, parmesan, and salt and pepper to taste. Stir and fold until evenly coated.
- Pour potatoes onto the prepared baking sheet. Spread into an even layer. Bake for 20 minutes.
- Stir and flip potatoes.
- Bake for 15-20 more minutes, or until potatoes are fork tender and edges are crisp. Mine took 20 more minutes.
Finish Garlic Parmesan Roasted Potatoes
- Place baking sheet onto a heatproof surface. Add butter, then stir and fold until it melts thoroughly throughout the potatoes. Sometimes, I’ll fold in an additional ¼ cup parmesan here for an extra cheesy kick.
- Sprinkle with chopped parsley and salt to taste. For a special treat, top with garlic salt. Transfer potatoes into a serving dish. Enjoy!
Notes
Storing Instructions: Cool completely, then store in an airtight container in the refrigerator for 1-4 days. Heat before serving.
