No Bake Oatmeal Raisin Bites (Vegan, Gluten Free)

No Bake Oatmeal Raisin Bites (V+GF): A super easy, one bowl recipe for healthy energy bites bursting with oatmeal raisin cookie flavor. Vegan and Gluten Free.

Okay, you’re probably gonna laugh at me. Which is probably why you’re here in the first place. It is my pleasure to poke fun at myself, for you, especially if it can bring you a smile or two. Imagine me slipping on a banana peel over here. But not, because that would really hurt.

Um, what was I saying?

Oh yeah! So some of you may know that I have a very special place in my heart for no bake treats. In fact, that place is probably where all of my baking pans, oven mitts and cooling racks go to hide after they’ve had it with the oven. I mean, I personally like to hide head there from time to time. Especially when things like this happen.

Truth be told, I used to think that no-bake stuff was weird! Like, “what do you mean you don’t have to bake it?” Imagine my eyes narrowing suspiciously at this concept. And, “wait, no battles with the oven, not even the slightest whisper of a fallen cake need to happen to make these treats?” What culinary wizardy may this be?

No bake recipes just seemed too good to be true. But one day, I decided, I’d had enough with that highly temperamental oven, all of that space scientist precision-required flour measuring, and I was just plain old tired from the week.

So I put on my sharpest-looking glasses (bc people with glasses are smarter, duh), rolled back my sleeves and put on my figurative starchy-white lab coat. It was time to get my no-bake on! I created a recipe that… well, gave me a LOT of trouble at first. It was too wet (trial 1 & 2), too dry (trial 3 & 4), and then just right (trial 5).

Again, I somehow managed to make something that’s supposed to be fairly simple, well, fairly complicated. I may or may not have a Mensa-level PhD in doing this… now that I think about it.

However, I like to think that my life is like a Simpsons episode: I start off at Point A, move in a beeline from Point C to Points That Don’t Even Exist, to Parts Unknown, swirling and zigzagging along the way, taking a nap, getting all hyper for exactly two hours, maybe even visiting Comic Book Guy, involving myself in hijinks, and then returning to Point A. Pleased as can be, happy ending in tow.

Trial 5 of that Simpsons-esque kitchen adventures experimentation turned into my now most-popular recipe on the blog, my No Bake Peanut Butter Coconut Bites. See, didn’t I tell you it was all gonna work out? 🙂

Those Peanut Butter Love bites spawned so many different bites on the blog, I was starting to consider renaming this blog to Beaming No-Baker. That just sounds so… uh…. unfortunate, doesn’t it? You can be honest. We’re all friends here. Ahem.

The best part is, I was able to happily and easily adapt my pb coco bites recipe into this no bake oatmeal raisin bites one. No Simpsons zigzagging; no hijinks whatsoever.

Plus, who doesn’t love a good oatmeal raisin cookie, right? I know Homer would eat this entire batch, and then order like 500 donuts to wash it all down. There I go with my chatty zigzags again.

Dry Ingredients

  • ½ cup raisins
  • ¼ cup finely chopped walnuts
  • ¾ cup gluten-free rolled oats
  • ½ cup unsweetened coconut shreds or flakes
  • ¼ cup ground flaxseed
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • ¼ cup pure maple syrup

  2. Add almond butter and maple syrup. Using a sturdy spatula, stir and fold together until well incorporated.

  1. I love your clicks and recipe. They are always amazing and this one looks so delicious. I can have them anytime 🙂

  2. In my mind, no bake cookies only consisted of those ones made with butter, oats and cocoa. Not a bad recipe, but not that exciting either. Then I started to meet recipes like this one and my mind was totally changed. These are going on my must try list 🙂

    1. Yup–I was totally there with ya, Megan. 🙂 Can’t wait to see what you think of them! 😉

    1. Awesome! Thanks so much Jess. 🙂 Can’t wait to hear what you think of these. 😉

  3. Hahaha, slipping on banana really made me laugh. You have such a great sense of humor and courage to make fun of yourself, not everyone does that! And love the reasoning behind it, I guess we all should make a little effort to make someone smile! Love you girl! 🙂 <3 I completely understand your love for no-bake dishes. And you doing a great job, because they all come out so beautiful, delicious and healthy. So keep'm coming! Have a beautiful week! 🙂

    1. I was hoping it would! 😉 Hey, if I can make fun of myself and bring someone a smile… then the world’s a happier place (at least for a moment). 😉 Love you too, Anu! xoxoxo Have a beautiful week, my dear. Send me a banana peel anytime. <3

  4. “There I go with my chatty zigzags again.” THIS is what makes your blog unique and so much fun. I love reading your stories 🙂 And can we talk about raisins for a sec? I’m the only one in my family who likes them. I don’t have many friends who like them either. What’s up with that? 🙂

    1. Oh thank goodness, it’s official, someone actually read that far down the post! 😉 Thanks for your sweet words, Gwen. <3 Oh yes, we can talk about raisins all day and then some! Go ahead and move slowly away from your friends and closer here--there will be plenty of raisin love to go around. 🙂

  5. I love the no-bake thing too, and am planning to love these specific treats during our first hazy-hot-and-humid of the summer…in the meantime, can you just roll some down the road from Maine to New Jersey? Pinned! 🙂

    1. Lol. Oh yes, to no bake! Rolling like a hundred down the road to ya, Kate. 😉 Thanks my dear!

  6. Oh, love that Simpsons reference, and will shamelessly use it in the future when people complain about me overcomplicating my life 😀
You know, Demeter, I’m always so thankful for your no-bake recipes! Your baked goods look amazing too, but I am really not able to do such things. Plus though I rarely have sweet cravings, whenever I do they come so suddenly and unexpected I wouldn’t be able to wait hours for a cake. All that can help is some quick no-bake treat!
These bites look super cute and mega delicious. Almost unbelievable that these are here actually totally healthy and good for you! Pinned 🙂

    1. Girl, reference it often (as I do). Haha. Life’s just complicated and that’s a-okay. As long as we can laugh about it! 😉
Such a good point, no-bake does get you there faster. 😉 Yay to secretly healthy foods. Thanks for pinning + stopping by my friend! xo

  7. Delicious and easy recipes that require no baking are the perfect solution to cooking during a hot summer day. Lovely recipe Demeter . : Pinning

  8. I love eating raw oatmeal raisin cookie dough so I imagine these are exactly like that but healthier. These are so much easier than baking oatmeal raisin cookies too so I’ll take that all day 🙂

    1. Oh man! I’ve never tried raw oatmeal raisin cookie dough… DUDE… I’ve got to try that now. But this is definitely how it would taste! 😉 That’s what I was aiming for. Thanks Karrie! 🙂
