From flourless cakes to flourless no bake treats to flourless cookies, there’s just something magical about flourless sweets. Like, no flour? No flour at all? Yep. These flourless cashew butter cookies are magically flourless, deliciously buttery and wonderfully dairy-free. Not to mention vegan!
Add in a sparkle of coarse sea salt and melty, ooey, gooey chocolate chips and you’re in business! The combo of soft, buttery flourless cashew butter cookies bursting with deliciously dense cashew butter flavor and chocolate morsels and savory pops of salt just delight.

Even better? These flourless cashew butter cookies are so easy to make, with just 4 ingredients for the cashew butter cookie dough base and two ingredients for the extras (vegan chocolate chips and sea salt).

- Flax Eggs (a vegan egg substitute)
- Coconut Sugar
- Baking Soda
- Vegan Chocolate Chips
- Sea Salt

Flourless Cashew Butter Cookies with Sea Salt + Chocolate Chips

Description
Salted Flourless Cashew Butter Cookies (V, GF): this vegan cashew butter cookies recipe creates soft, decadent flourless cashew butter cookies packed with chocolate & sea salt! Paleo, Dairy-Free, Plant-Based.
Ingredients
- 1 cup unsalted creamy, natural cashew butter or homemade cashew butter
- 1 flax egg (1 tablespoon golden ground flaxseed + 3 tablespoons water, whisk together, set for 15 minutes)
- 1/4 cup + 2 tablespoons coconut sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1/2 cup vegan chocolate chips or sugar free chocolate chips
Topping
- 3–4 tablespoons vegan chocolate chips or sugar free chocolate chips
- Sea salt for sprinkling
Instructions
- Preheat oven to 350°F. Line a baking sheet with unbleached parchment paper or greased foil. Set aside.
- In a medium bowl, add all ingredients. Using a rubber spatula, stir and fold until thoroughly mixed.
- Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Dot cookies with chocolate chips. Using a spoon, press down on cookie to flatten. Cookies will spread a bit. Sprinkle with sea salt.
- Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack, and allow to cool for 20-30 minutes—do not remove from sheet for at least 20 minutes, as cookies are very soft and fragile. Then, if desired, transfer cookies directly onto the cooling rack to cool until completely cooled. If desired, sprinkle with more sea salt. After cooling, cookies will be firm, but still fragile and melt-in-your-mouth. Handle with care. Enjoy! Storing notes below.

These are absolutely delicious. Probably the best vegan and gluten, refined sugar, and oil free cookie I’ve made and I’ve made quite a few. I love that it makes so many cookies too. A lot of these healthier recipes only make a small amount but not this one. I got 22 cookies out of the batch I made.

Delicious recipe! I did use 1/4 c Golden erithrytol/monk fruit blend and the other 2 T coconut sugar to cut sugars. Still wonderful. Probably would work with all erithrytol/monk fruit.

This recipe actually made me cry it’s so good! Granted I just found out I’m allergic to eggs and almonds and with a gluten sensitivity to boot, so it’s been really hard to find things to bake. And we are all trapped in our houses of course so to find something I could bake and enjoy? Tears. I cannot wait to try so many more of your recipes and give any feedback I can on subs since not being able to use almond meal has presented most of my problems thus far.
