Recommended Tools for the Best Vegan Cashew Butter Cookies

  • Golden Ground Flaxseed – my go-to vegan egg replacement ingredient. All you have to do is stir together the flaxseed and water and you’ve got a vegan substitute for eggs in baking! 🙂 Learn How to Make a Flax Egg here.
  • Cashew Butter – nothing easier than buying a jar of cashew butter. This one’s my fave because there’s nothing added and it’s creamy & natural. If you want it 100% homemade, learn how to make homemade cashew butter. It’s fun and easier than you think!
  • Vegan Chocolate Chips or Sugar Free Chocolate Chips – two of my favorite chocolate chips to use in healthy vegan baking. One is perfect for vegan recipes, the other (still vegan) is great for keto recipes, or for when I need ALL the chocolate and want to keep my sugar intake down.
  • Medium Cookie Scoop – the best, sturdiest cookie scoop on the planet. And I’ve made 1,000s and 1,000s of cookies!
  • Coconut Sugar – this refined sugar-free, plant-based sweetener leaves a sweet, caramel-like taste in your baked goods. Absolutely my favorite sweetener to date. 🙂

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with unbleached parchment paper or greased foil. Set aside.
  2. In a medium bowl, add all ingredients. Using a rubber spatula, stir and fold until thoroughly mixed.
  3. Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Dot cookies with chocolate chips. Using a spoon, press down on cookie to flatten. Cookies will spread a bit. Sprinkle with sea salt.
  4. Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack, and allow to cool for 20-30 minutes—do not remove from sheet for at least 20 minutes, as cookies are very soft and fragile. Then, if desired, transfer cookies directly onto the cooling rack to cool until completely cooled. If desired, sprinkle with more sea salt. After cooling, cookies will be firm, but still fragile and melt-in-your-mouth. Handle with care. Enjoy! Storing notes below.

  1. These are absolutely delicious. Probably the best vegan and gluten, refined sugar, and oil free cookie I’ve made and I’ve made quite a few. I love that it makes so many cookies too. A lot of these healthier recipes only make a small amount but not this one. I got 22 cookies out of the batch I made.

  2. Delicious recipe! I did use 1/4 c Golden erithrytol/monk fruit blend and the other 2 T coconut sugar to cut sugars. Still wonderful. Probably would work with all erithrytol/monk fruit.

  3. Hi there! I don’t have any flax, do you think I can use egg instead? I know they won’t be vegan, but I’m GF and DF so it still works! Thank you!

  4. Made these yesterday and they’re almost gone already – I was happily surprised at how perfect they were! Just wondering if the recipe would work with peanut butter too?
    Thanks 🙂

  5. This recipe actually made me cry it’s so good! Granted I just found out I’m allergic to eggs and almonds and with a gluten sensitivity to boot, so it’s been really hard to find things to bake. And we are all trapped in our houses of course so to find something I could bake and enjoy? Tears. I cannot wait to try so many more of your recipes and give any feedback I can on subs since not being able to use almond meal has presented most of my problems thus far. Obviously this one didn’t need any changes and it’s so quick and easy! Thank you, thank you, thank you!!

    1. Oh my goodness, your comment just made my day! It’s so wonderful to hear that you can finally enjoy a treat that takes into account your allergies (and is actually yummy lol!) I seriously cannot wait to see what you try next!!! Happy baking, Holly! 🙂

  6. These cookies look delicious! I love the simple, wholesome ingredients you use in all your recipes.

Your great sense of humor is an added bonus!

    Thank you for sharing!
