Remember how I told you I started driving again? Well that was like 6 months ago and I’ve literally driven twice since. And 50% of those times (translation: 1 time), I just drove around a parking lot for like half an hour.
Eek!! I’m a grown woman right? Why am I having all of this anxiety when it comes to driving again? Recap in case you missed it: when Erik and I moved to Minneapolis last year, I realized that I had to take the drivers exam all over again. Even though I already had a working drivers license (covered in cobwebs and all).
The kicker is that I’ve barely driven maybe 10 times since I got that license in high school. Blame living in big cities with awesome transportation systems that really did not call for/adamantly discouraged driving. I’m looking at you, San Francisco, Boston and etc. Yep, etc. 😉 I mean, who knows how Erik and I survived living in San Diego for two years without driving a car once.
Anywho, recently I realized that I’d better start getting super serious about driving again, or else I’m going to overthink it all and make it too big of a deal.
But, you know, once the winter, snow and any chance of snow or rain goes away again. You understand. 😉

- Flax Eggs (a vegan egg substitute)
- Coconut Sugar
- Baking Soda

Description
Salted Flourless Cashew Butter Cookies (V, GF): this vegan cashew butter cookies recipe creates soft, decadent flourless cashew butter cookies packed with chocolate & sea salt! Paleo, Dairy-Free, Plant-Based.
Ingredients
- 1 cup unsalted creamy, natural cashew butter or homemade cashew butter
- 1 flax egg (1 tablespoon golden ground flaxseed + 3 tablespoons water, whisk together, set for 15 minutes)
- ¼ cup + 2 tablespoons coconut sugar
- ¾ teaspoon baking soda
- ½ teaspoon pure vanilla extract
- ¼ teaspoon salt
- ½ cup vegan chocolate chips or sugar free chocolate chips
Topping
- 3–4 tablespoons vegan chocolate chips or sugar free chocolate chips
- Sea salt for sprinkling
Instructions
- Preheat oven to 350°F. Line a baking sheet with unbleached parchment paper or greased foil. Set aside.
- In a medium bowl, add all ingredients. Using a rubber spatula, stir and fold until thoroughly mixed.
- Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart. Dot cookies with chocolate chips. Using a spoon, press down on cookie to flatten. Cookies will spread a bit. Sprinkle with sea salt.
- Bake for 10-14 minutes. Mine took 12 minutes. Transfer cookie sheet to cooling rack, and allow to cool for 20-30 minutes—do not remove from sheet for at least 20 minutes, as cookies are very soft and fragile. Then, if desired, transfer cookies directly onto the cooling rack to cool until completely cooled. If desired, sprinkle with more sea salt. After cooling, cookies will be firm, but still fragile and melt-in-your-mouth. Handle with care. Enjoy! Storing notes below.

This recipe actually made me cry it’s so good! Granted I just found out I’m allergic to eggs and almonds and with a gluten sensitivity to boot, so it’s been really hard to find things to bake. And we are all trapped in our houses of course so to find something I could bake and enjoy? Tears.
