(You totally know Erik would interpret this as “you can go to the fridge and grab something to eat and that counts”.) A-hem! Anywho, we’ve been trying at-home workout equipment, portable ping-pong kits, and even dancing like fools to stay fit.

While I await your answers, allow me to tell you about one of my favorite post-workout treats: healthy oatmeal cookie bars with peanut butter. And wait for it… Chocolate!! Yeah!! These peanut butter oatmeal cookie bars are my favorites for a reason: they’re delicious, they’re filling and they’re made with healthy ingredients. Whoop!

But how do they taste? This healthy oatmeal cookie bars recipe does not taste like it’s healthy! Say whaa? Well, you’re gonna be so blissful, enjoying the burst of peanut butter sweetness and chewy, satisfying oats, all interspersed with melty chocolate morsels, that you’ll completely forget that they’re healthy.

Description
Peanut Butter Chocolate Chip Oatmeal Cookie Bars: this healthy oatmeal cookie bars recipe is packed with creamy peanut butter, fiber-rich oats and plant-based ingredients. Chewy & delicious cookie bars! Vegan, Gluten Free, Dairy-Free.
Ingredients
Dry Ingredients
- 1 cup gluten free rolled oats
- 1/4 cup gluten free oat flour – if using homemade oat flour, make sure it’s finely ground and not coarse*
- 2 tablespoons golden ground flaxseed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 2 tablespoons melted coconut oil
- 1/4 cup + 2 tablespoons unsalted, natural creamy peanut butter (try homemade peanut butter)
- 3 tablespoons pure maple syrup
- 3 tablespoons coconut sugar
- 1 teaspoon pure vanilla extract
Add-ins
- 1/4 cup vegan chocolate chips
- 1/4 cup peanuts, finely chopped (optional)
Optional Topping
- 2 tablespoons vegan chocolate chips
Instructions
- Preheat oven to 350°F. Line an 8-inch square pan with parchment paper or greased foil. Set aside.
- In a large bowl, whisk together all the dry ingredients: oats, oat flour, flaxseed, cinnamon and salt.
- In a medium bowl, whisk together all the wet ingredients: coconut oil, peanut butter, maple syrup, coconut sugar and vanilla.
- Pour the wet mixture over the dry mixture. Using a rubber spatula, stir and fold until well mixed. Fold in chocolate chips and peanuts, if using.
- Pour this mixture into the prepared baking pan. Using the rubber spatula, spread into an even, tightly-packed layer. Optionally, press chocolate chips into the top of the bars.
- Bake for 16-22 minutes, until golden brown on top. Mine took 20 minutes. Place baking pan on a cooling rack, allowing to cool for 30 minutes. Pinch the edges of parchment/foil and lift bars onto the rack to continue cooling completely (about 1-2 hours). Slice into 16 bars. Enjoy!

Hi, first of all my family and i love these. We have them as our main breakfast with a smoothie. I also add chia seeds and shaved coconut in the dry ingredients, and add the chocolate chips after they come out of the oven.
I’m wondering if I can premake the bars batter and leave them in the refrigerator overnight, then cook them in the morning. Often I have more time in the evenings so this would help me out but I don’t want to ruin a 4x batch that I typically make. Thanks.
Hi J! I’m so happy that the fam enjoys the bars, and I love that you pair them with a smoothie. 😋 As for making the batter only ahead of time, I would not recommend it unfortunately. If the wet and dry ingredients sit for that long, they will absorb into each other too much, and simply won’t be able to bake properly the next morning. If you wanted to make them normally, cut them to size and then freeze them, maybe that would ease things a bit? The bars should be fine in the freezer (stored in a freezer-friendly container), for about 1-2 months. Hopefully this helps!

I would love to try this but am trying to avoid the sugars you mention. Is there a way to substitute agave without compromising the integrity of the mix?
Hi Jackie! I haven’t tried it myself so I can’t say for sure, but I do know that other readers have swapped the maple syrup with agave before in other recipes. And some have swapped coconut sugar for granulated date sugar. Hope this helps!

I’ve made these SO many times, absolutely delicious! Stupid question, can I double the batch and put them into a bigger pan, 9×9?
Thanks so much, Karen! 🙂 Not a stupid question at all! I recommend using a pan that’s 9×13 for slightly thinner bars. If you use the 9×9 the bars will probably be too thick and not bake all the way through. Also, you’ll have to take about 5 more minutes onto the bake time–check in on them to make sure they’re cooked, but not burned. Enjoy!
