How to Make Paleo Grain Free Granola

  • Unsweetened Coconut Chips – these raw coconut chips are my go-to ingredient in nearly every grain-free recipe. They’re high quality, bursting with natural coconut flavor just as-is, and so friggin’ versatile!
  • Blanched Almond Flour – the #1 super secret ingredient to making grain free granola amazing. Almond flour keeps this granola grainless and it works with maple syrup to keep things sticky while baking, which in turn, results in BIG crunchy granola clusters!
  • My Favorite Nuts: Almonds, Walnuts and Pecans – imo, the perfect combo of nuts in almost any granola recipe!

Are you ready to make the best grain free granola ever?! Let’s do this! I truly can’t wait to hear what you think! Be sure to comment below if you try this recipe—I love hearing from you. <3 Grateful & joyful that you’re here. 🙂 ‘Til the next kitchen adventure…

Equipment

Ingredients

Instructions

  • Preheat oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
  • Add all ingredients to a large bowl. Using a rubber spatula, fold until clusters form and mixture is well mixed.
  • Pour onto the prepared baking sheet. Using the rubber spatula, gently nudge granola into an even layer, making sure to keep clusters intact. Create empty pockets at regular intervals to let air through to crisp up the granola.
  • Bake for 15 minutes. Using a heatproof spatula, gently flip granola, making sure to keep clusters intact. Bake for an additional 5-10 minutes, until edges are a deep golden brown and granola is just slightly soft. Mine took a total of 20 minutes. Granola will crisp up while cooling.
  • Place baking sheet on a cooling rack. Allow to cool for about 30 minutes, or until completely cooled. Enjoy! Storing instructions below.

I loved this. I recently found out I had to cut oats of my diet as well as the gluten I had already cut and I was devastated because I eat overnight oats for breakfast every day. I was not psyched on finding replacements, but decided to give this a try. I made it with some add ins – chia seeds, sunflower seeds, and pumpkin seeds. I also didn’t use almonds and subbed almond flour for flaxseed meal because I don’t eat almonds. Then in the mornings I eat it mixed in with peanut butter, apples, Bananas, and raisins/cranberries. It’s amazing! Way more delicious than I had dared hope for. Thank you!

I’m so happy that you enjoyed the granola Annie! It can be quite a challenge adapting to a new diet, so it’s great to know how helpful this recipe was. 😊 The add-ins sound delish too!

This is SOOOOO good. I better walk away from the pan because I keep reaching over and taking chunks out to eat. Thanks for the easy and delicious recipe. I didn’t have pecans, so I subbed in more almonds and sunflower seeds with some walnuts.

Woohoo!! I’m so happy to hear that you loved it, Maria. 🙂 Oh… I know ALL about reaching over to the pan (multiple times lol). 😉 Thanks for taking the time to let me know. Enjoy!

Looks delish! We don’t use maple syrup so could I substitute raw honey ? Would the amount be the same?

    1. Demeter | Beaming Baker says:

Hm, I haven’t tried it myself so I can’t say for sure. But I know some readers have swapped maple syrup for honey in other recipes before with good results. If you do try it, let me know how it turns out!
