An easy recipe for Keto Peanut Butter Cookies with crispy edges, sweet peanut butter flavor, and just 2 Net Carbs!

  • low carb granulated sweetener

Keto Peanut Butter Cookies

  • 1 cup unsalted, creamy natural peanut butter
  • 1 egg of choice – I use a flax egg*
  • 1/2 cup low carb granulated sweetener
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon pure vanilla extract (optional)
  • 1/4 teaspoon salt (optional)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  2. In a medium bowl, add all ingredients. Using a rubber spatula, fold until very thoroughly mixed. This batter is very thick—if you prefer, use a stand mixer or hand mixer to whisk together ingredients.
  3. Using a medium scoop, scoop and drop cookie dough balls onto the prepared baking sheet, spaced evenly apart.
  4. Using a fork, press down on cookie to flatten. Repeat in the opposite direction, creating crisscross marks. Make sure to leave space between cookies, as they will spread while baking.
  5. Bake for 10-14 minutes. Mine took 12 minutes.
  6. Transfer cookie sheet to cooling rack and allow to cool for 20 minutes—do not remove from sheet for 20 minutes, as cookies are a bit soft. Then, if desired, transfer cookies directly onto the cooling rack to cool until completely cooled. Enjoy! Storing notes below.

Storing Instructions: Store in an airtight container for 1-2 weeks. Keep out of direct sunlight and away from heat sources.

Freezing Instructions: These keto peanut butter cookies freeze well. After completely cooling, store cookies in a freezer-friendly container. Keep in the freezer for 1-3 months. Allow to thaw at room temperature for about 10 minutes before enjoying.
