Description

Sweet pineapple, zesty lime, and a touch of spice come together for the perfect Pineapple Salsa. Tasty with tortilla chips, on soups, and so much more.

Ingredients

  • 2 cups fresh pineapple, ripened & diced (approximately less than 1 pineapple)
  • 1 red bell pepper, chopped (medium)
  • 1/3 cup red onion, chopped (about ¼ of an onion)
  • 1/3 cup fresh cilantro, chopped
  • 1 to 2 medium jalapeños, deseeded, finely chopped – use one for medium spice, 2 for high spice
  • 3 to 4 tablespoons fresh lime juice
  • ¼ to ½ teaspoon salt, or to taste (I used ½ teaspoon, ¼ is very lightly salty)

Instructions

  1. Combine all pineapple salsa ingredients in a mixing bowl: pineapple, bell pepper, red onion, fresh cilantro, jalapeños, lime juice and salt. Start with just 3 tablespoons lime juice.
  2. Stir and fold until well mixed and fully coated in lime juice.
  3. Add more lime juice and salt or pepper to taste, if needed.
  4. Serve with Baked Tortilla Chips and deliciously crispy Cheese Quesadillas or my juicy mushroom-packed Mushroom Quesadillas!

Notes

Storing Instructions: Best if enjoyed immediately. However, pineapple salsa can keep for 1-3 days in a tightly sealed container in the refrigerator.
