Toasted Coconut Chocolate Chip Nice Cream (Vegan, Dairy Free, Gluten Free)

Toasted Coconut Chocolate Chip Nice Cream (V+GF): a 5 ingredient recipe for deliciously creamy vegan ice cream, exploding with coconut and chocolate chips. Vegan, Dairy Free, Gluten Free.

Oh, what is the summer without ice cream? Without popsicles? Just no fun at all, at least in my family. Yup, we’re big eaters of all the delicious things.

Everyone in my family LOVES coconut and chocolate. But when they find both of those ingredients in a recipe, their coconut chocolate love goes into overdrive.

For years, we’ve marveled at the wondrous frozen creations that we’ve enjoyed on family vacations: rose water ice cream, chocolate pistachio pudding, caramel chai popsicles, and more. One of my family’s favorites has always been the kinda-hard-to-find, but absolutely-worth-the-hunt coconut chocolate chip ice cream (see: overdrive notes).

So when I had one big–okaaaaay, three big bags of coconut flakes lying around, inspiration (or more likely, hunger) hit me: it was time to do this, vegan nice cream style. If you’ve never heard of nice cream, you can check out this post to read all about it.

Nice cream is pretty much the super-fantastic, healthy, vegan substitute for ice cream. It’s made of bananas (shoutout to banana lovers!) and very easy to make. Working off of my dark chocolate nice cream recipe, I dialed the cocoa powder all the way down (like, back into its container in the cupboard), added in coconut, chocolate chips, then reworked the recipe to be even coconutty-er and chocolatey-er. Yup, I even had to make up awesomer words in the process. This included the word awesomer.

If there’s one thing my family loves mores than coconut, it’s toasted coconut. And that includes Erik. While I was writing the recipe for this nice cream, he kept hovering about, oohing and aahing, then kindly (and then annoyingly) suggesting that I toast the coconut. And boy was I happy that I did! Score for Erik! (He just said “woohoo” as I wrote this–nosy much?) 😉

When I started toasting the coconut, the kitchen immediately filled with that beautiful, warm, toasty (well, yeah), and just delightfully tropical scent of coconut. Watching the coconut toast to a warm caramel color on the edges once again reminded me of the wonderful little moments in cooking. *Happy sigh*

Once the toasted coconut was done, I laid it on a parchment-covered baking sheet to cool in the freezer. Then, I got to work on the nice cream. Suddenly, we started blending happily and humming along together, troubles completely forgotten. That’s summer for you, happiness and relaxation beckoning you at every corner. 🙂

Soon thereafter, that special, super magical thing happened—the bananas turned into nice cream. NIIIIICE. Sorry, I could not help myself. I added in the toasted coconut, mini chocolate chips and blended. Then, I went ahead and added more coconut and more chocolate chips.

Because. Summer.

There are many reasons to love this delightfully cool dessert. But it’s summer, so I’ll keep it short (so you can go nap). This Toasted Coconut Chocolate Chip Nice Cream is:

  • creamy and delicious
  • vegan, gluten free and dairy free

Toasted Coconut Chocolate Chip Nice Cream (V+GF): a 5 ingredient recipe for deliciously creamy vegan ice cream, exploding with coconut and chocolate chips. Vegan, Dairy Free, Gluten Free.

  • ¼ cup coconut flakes or shreds
  • 4 medium bananas, sliced and frozen
  • 1 tablespoon pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ cup vegan mini chocolate chips

  1. Bring a skillet to medium heat. Add coconut. Stir until lightly browned and fragrant. This will take 3-5 minutes. Pour onto a plate and place in the freezer to cool.
  2. In the meantime, add bananas to a blender or food processor. Blend until you get a crumbly texture. Add maple syrup and vanilla. Blend until smooth and creamy, scraping down the sides of the blender as necessary. This will take a few minutes.
  3. Add coconut and chocolate chips to blender. Pulse just a few times to incorporate.
  4. If you like soft ice cream, enjoy immediately. If you want your ice cream firm and scoopable: pour into a freezer-friendly, airtight container. Freeze for 4-6 hours, or until completely frozen. Allow to thaw for 5-15 minutes before scooping. Enjoy!

– Store in an airtight container in the freezer for up to 1 week. Before serving, allow to thaw for 5-15 minutes. Scoop and enjoy!

    1. Awesome blossom! Yeah, I just said that. Lol. Thanks so much Karrie! Can’t wait to see ya!

  1. Three big bags of coconut flakes?!? Oh my gosh! Send one my way 😉 We’ve been experiencing a flake shortage – so forget blueberry envy I’m having major coconut envy! I have to get my lazy bum over to the store to get some flakes (I hope traditional TEB coconut burning doesn’t happen, but if it does, I’ll just try again because I have to get my hands on one of these glorious cones!

  2. Score for Erik! He’s awesomer than I thought! I mean – I knew he was awesome – but – this, this is next level stuff! You guys sure know your way around an ice cream, I mean, nice cream scoop! Brava!! I love me some toasted coconut and chocolate!! Delish, my friend!! 🙂

    1. Annie, Erik is gonna be all kinds of excited to hear that! 😉 His main goal in life is to be awesome; awesomer is just the frosting on the cake. Haha. Thank you my friend! <3

  3. OH MY GOSH, This looks crazy good! Geez, I’m drooling over here. I love the combination of coconut and chocolate as well….and this is ready in 10 minutes? I am going to make this right now! I heard about nice cream before, but never tried it. I think you have officially converted me into a vegan with this one. Amazing recipe! 🙂

    1. Thank you my friend! 🙂 Glad to see you back here! 🙂 May I hand you some napkins for your drool and a double scoop for your appetite? 😉 Can’t wait to hear what you think of this recipe. Thanks Amanda! xo

  4. I really thought last time that nice cream couldn’t get any better, and then wow, Demeter, you did it again! This combo is so simple, but so so so so delicious! That’s what I love the most about your blog. You took 5 basic ingredients and created something absolutely heavenly. Definitely making this one over the weekend <3
And yes, score for Erik for sure, toasted coconuts are the best!!!

    1. Aw shucks… thanks Evi! 🙂 Nice cream is just… so nice. Amiright? Haha. Thanks so much for saying that E! It means a lot to me. Keepin’ it simple and delish ’round these parts. Let me know what you think! xo

  5. This looks insanely good Demeter! I have to admit to having smoothie versions of Nice Cream in the mornings (Don’t have to feel guilty about it either!) This is what I’m going to have next – LOVE the flavor combo! Just so awesome 😀

    1. Thanks Dini! 🙂 And so much YES to nice cream smoothies in the morning! No guilt necessary. 🙂 Can’t wait to hear what you think of this, D! 🙂

  6. Love this! I’ve been coming around to trying more things with banana in them and I think I could make room for this tasty treat 🙂 or your chocolate nice cream! I’ve been doing some freelance work and wrote about non-dairy ice creams – apparently coconut milk is supposed to make an out-of-this world creamy non-dairy ice cream. I’ll let you know if I ever give that a try 🙂 it might actually give me an excuse to justify buying an ice cream maker. I love that this recipe is food processor/blender friendly!

    1. Banana is such a wonderful ingredient! It sweetens everything up in the tastiest manner! 🙂 Oh yes, coconut milk makes vegan ice cream especially delish! Any excuse to buy an ice cream maker is a great excuse, imo. Thanks Jessica!

    1. Thanks Mira! Healthier ice cream is so much more enjoyable–not guilt included. 😉

  7. You did it again, Demeter, you just made another amazing nice cream! With toasted coconut! I have to say, Erik was right 😉 . I love toasted coconut, too!! So perfect with the chocolate chips. Pinned, of course 🙂 .

    1. Erik will be very pleased to hear that he’s right. Dang it! 😉 J/k. I hope you get a chance to try this! Thanks so much Nicoletta. 🙂

  8. This nice cream is pure genius deliciousness, Demeter. So true, summer without ice-cream or popsicles would be no fun at all. I have coconut and chocolate crazy family and this nice cream sounds like a miracle dish for us. And you are an angel who brought this healthy and tasty summer beauty to us! 🙂 Now we can have as much as nice cream we want! I can just imagine how divine it would taste with toasted coconut and white chocolate. So much yes to this guilt-free summer treat! I need to make this ASAP, and that ASAP is tomorrow! 🙂 Have a wonderful week girlfriend! <3

    1. Not one ounce of fun! 😉 Anu, your family would just LOVE this. 🙂 It’s got tons and tons of coconut chocolate goodness packed inside. 😉 Hope you and your family enjoy it! Have a wonderful week too, my friend. xoxo

  9. Seriously the more and more I read your blog, the more and more convinced I become that we are sistahs from different mistahs! I have “nice cream” in my freezer 24/7, because GIMME! And I toast coconut at least once a week (I have like 4 bags in my pantry too!)! We MUST be at least distant cousins or something, right??! 😉 LOVE this nice cream!! Toasted coconut and (white) chocolate chip sounds fab! <– I had to put the white in there. Seriously, I could eat this morning, afternoon and night! And since it's so waistline friendly, I don't have to feel guilty! Wahooo! Love! Pinned! Cheers, sweets! xoxoxox

    1. Oh, girl, we SO ARE. But can we not be that distant so we can share food, like ALL the time? 🙂 🙂 Chey, if you came over right now, I would make this with EXTRA white chocolate chips, just for you. 😉 Waistline friendly: Lol. I like that! Forget the guilt and grab some spoons, we’re gonna do this right! Thanks so much for all the love, my dear. Muah! xoxo

  10. Hahaha! Even though I am a huge fan of all things cocoa powder, I sure am glad you “dialed the cocoa powder all the way down (like, back into its container in the cupboard)” for this – because WOW – Demeter, this is one heck of a flavor packed nice cream! I am all too familiar with the hevenly smell of toasted coconut – nothing quite like it – my mom used to make it most weekends to add to just about everything – but, I haven’t had it with nice cream yet! I’d be hovering like Erik over this “coconutty-er and chocolatey-er” nice cream – fantastic recipe! Happy Monday friend!

    1. Toasted coconut is just a smell straight from paradise. 🙂 And since your mom used to make it all the time, you must have the most wonderful memories associated with that smell. <3 I hope you get a chance to try this Shashi! Come on over and hover about my kitchen anytime. 🙂 Have a wonderful Monday my dear! xoxo

  11. Yay for more nice cream! I adore, no LOVE, coconut. Love love love it! I just bought a tub of coconut oil at Costco the other day…I’m sure it’s the size of my head…..with dreams of using it in baking and to make homemade body scrubs. We shall see 😉

This recipe is wicked, Demeter. Chocolate and toasted coconut? Forget two scoops….all for me please! Until I read this recipe, my favourite ice-cream flavour was mint chocolate chip and now I may have to re-evaluate that 😉 Pinned, of course 🙂 Have a great week girl! xoxo

    1. Oh yeah for more nice cream!! We can be fellow coconut lovers for lyfe together! 😉 I can’t wait to see what you whip up with that huge tub o’ coconut of yours! Sending you big virtual buckets of this nice cream! Have a great weekend my friend!. xoxo

  12. Toasted coconut and chocolate banana ice cream… ups nice cream 😉 LOVE IT! Perfect combo. It looks delicious and really refreshing. I just love healthy refreshing desserts like this one in which we can enjoy without feeling any guilt. Isn’t that great or what!? 😀 Thanks for sharing.

    1. Oh YES! This recipe is incredibly delicious, refreshing and creamy! And did I mention… nice? Hehe. Three cheers for guilt-free desserts! Thanks for stopping by Natalie. 🙂

  13. We all love coconut and chocolate in our family too! And the fact that there’s only 5 ingredients in here. How yummy and refreshing with all this hot weather we are having. Loving your pics for this post!!

    1. Coconut and chocolate are just a match made in heaven. 🙂 Thanks Laura! Hope you have an awesome week!

  14. You are on a roll with your nice cream, Demeter! This looks fantastic! I love summer because it just seems more acceptable to eat ALL of the ice cream that I can get my hands on. But when it’s healthier, like this, I feel good about eating it. I love the chunks of chocolate chips in here, too. Such a perfect combination, especially for a Monday! Pinned, of course!

    1. Thanks so much Gayle! 🙂 Hmm… which makes me think, I should make an ice cream roll. 😉 Eat all the ice cream and feel good about, my friend! Thanks for stopping by. Happy Monday! 🙂
