Vegan Strawberry Coconut Popsicles (Dairy Free, Paleo, Gluten Free)

Vegan Strawberry Coconut Popsicles (V, GF, DF): a 4 ingredient, plant-based recipe for creamy, refreshing popsicles bursting with strawberry and coconut flavor. Vegan, Dairy-Free, Paleo, Gluten-Free.

Did I tell you guys? My sister Penny is getting married! Yay!! Blowing all of the party horns and popping so many bottles. Or something. Is that what you do when you celebrate a wedding? It’s been years since I took part in this kind of special occasion, so I’m a bit rusty.

Penny is the eldest sibling in the fam. She’s been steering our family ship for ages and ages now. She was the first to go off to college, the first to assert her independence, and the first to teach us the importance of believing in ourselves. 🙂

She’s always been so strong, independent and best of all: kind. I always tell her, “Qweeps (childhood nickname), you’re basically a heart on sticks.” And as gory as that visual is, I stand by this. Plus, try to visualize a cartoon heart, pretty and round, with a big smile and stick figure arms and legs. … See what I mean?! 🙂

She was the first to move across the country, all by herself. She was the first to take a stand in something she truly believed in.

Forever and always, she will be my hero. ❤

Pretty soon, she’ll be marrying a guy that’s deserving of her unending awesomeness. He’s smart, hardworking, thoughtful, and, just like Penny, kind. Andrew believes so strongly in helping others, making a difference and being an overall good dude. He understands all of her little quirks and she understands all of his.

Is there anything better than finding someone who just gets you? <3

Penny and Andrew

Since the wedding is just around the corner, I have to start figuring out an outfit. What do you guys think? It’s gonna be pretty casual. A summer dress? Floral pants and a snazzy tuxedo top?? With a pink sparkly bowler hat?? Okay, that might just sound like a horrible combo, but it sure was fun to type!

Perhaps an LBD? Honestly, I don’t think I could pull that off. But the pink sparkly bowler hat– that I could do! ?

What would you wear to a casual wedding?

I’m so unbelievably happy that they’re gettin’ hitched! They’ve picked the summer to celebrate their loving union. And we all know what that means: bachelorette parties in Vegas, long, lazy afternoons with a tall glass of lemonade, vacation-minded chillaxing vibes and maybe, just maybe, some of these vegan strawberry coconut popsicles. 😉

As the fam and I get ready to pop some bottles (or knit newlywed pillowcases???), we’re gonna need some refreshments. Oh yeah! These vegan strawberry coconut popsicles are so ridiculously easy to make and packed with so much delicious flavor.

Description

Vegan Strawberry Coconut Popsicles (V, GF, DF): a 4 ingredient, plant-based recipe for creamy, refreshing popsicles bursting with strawberry and coconut flavor. Vegan, Gluten Free, Dairy Free, Paleo.

Ingredients

Scale
  • 2 medium bananas, sliced and frozen
  • 1 can full-fat coconut milk (13.66 oz.)
  • 1 cup frozen strawberries
  • 23 tablespoons pure maple syrup

Instructions

  1. Add bananas and coconut milk to a blender or food processor. Blend until smooth, scraping down the sides of the blender as needed. Add strawberries and maple syrup. Blend until smooth, again scraping down the sides of the blender as needed.
  2. Pour this mixture into a popsicle mold. Make sure to leave about ¼” of space at the top of the mold to allow the popsicles to expand in the freezer. Insert popsicle sticks, or follow instructions for your mold.
  3. Freeze for 6-8 hours.
  4. Remove from freezer. If needed, allow to thaw for a few minutes. Optionally, run popsicle mold under a bit of lukewarm water to help them loosen.
  5. Place the popsicle mold on a flat surface and wiggle the popsicles out. Enjoy!

  1. I start to realise that your blog is the place, where I always ask, why isn’t my younger sister as sweet as you are? Why isn’t she writing a blog where she casually mentioned sometimes how awesome I am? Seriously, why??
Ok, just kidding, but still, it was so nice to read again about your family.
And I have no idea what to wear for a casual wedding, but I know that I’d take these popsicles to any bachelorette or wedding party. Or maybe, just maybe, to any day of the year. Super delicious and pinned of course 🙂

    1. Oh no! But you already know how awesome you are, so it’s just obvious. Right? She probably just doesn’t want to state the obvious! 😉 It’s pretty much the summer of love over in these parts. 🙂 Great idea on bringing these–they are definitely party-ready! Thank you my friend. 🙂 xo

    1. Thank you, Puja! 🙂 Strawberries and coconut are so good together. Thanks for stopping by, friend! 🙂

    1. Thank you Miranda! 🙂 The combo of strawberry and coconut is just absolutely delicious. 🙂

  3. 1) you could TOTALLY pull off a LBD. But you should wear whatever you will feel great in since you will be celebrating and then some!
    2) Congrats to your big sis! Yay weddings! Yay love!
    3) Your pictures are the best. Seriously – THE BEST.
    4) I need one of these popsicles right this minute. I mean, it is supposed to be above 90 again today, and tomorrow, and so on.
    5) xoxox!

  4. Many congratulations to your sister, Demeter. I LOVE weddings, they are so much fun! Your family talk is awesome. It’s been a couple of years since I attend any family weeding. And finding the perfect outfit for the wedding is really a GAINT task. And I am loving these popsicles not only because they look so beautiful but also because they are made with just 4 ingredients. And also they are rich, creamy and satisfying. And yay because they are vegan, gluten free, dairy free, paleo too! I am in! Loving these! Have a wonderful weekend my dear! 🙂

    1. Aw, thank you Anu. 🙂 Weddings are just so lively and full of fun! I finally found an outfit, so we’re good to go. Yay!! Thank you for the sweet words, Anu. I hope you have a wonderful weekend! 🙂

  5. With this popsicle I thee wed…okay maybe that’s taking it a bit far. But nontraditional weddings are a thing right now, right!? I’m a bit rusty too, haven’t been to a wedding in forever either. I’m pretty sure the last one I went too was for a cousin and they have three kids now soooo I’m probably not the one to give outfit advice. Confession: I just googled “LBD” haha! And then felt silly afterwards, I knew that somewhere. Lift up the rock–there’s Natalie. Good luck finding a pink bowler hat on such short notice though, I hear they just fly off shelves. Whatever you go with you will rock that snazzy summer look, I am sure of it! Congratulations to Penny and Andrew!!! We should all raise a popsicle to unending awesomeness and people who get you! Enjoy every minute of it–happy time with family, dancing, knitting, bubbly, and all <3 xx

    1. Lolol. Take it further, take it further! 😉 It’s official that you and I share a bit (by that I mean, like a LOT) of the same sense of humor. 😉 Lol. Wow, they have three kids now! Well, maybe those kids can give us some advice. Kids dress way better than we do nowadays! Have you seen their mini tuxedos and sparkly bowties? LBD: Dang it! I was totally debating whether or not to spell out what it was. Honestly, I’m so out of touch with acronyms and hip terms–you prob don’t know what it is bc people stopped saying it like a decade ago. Haha. If there’s a rock, I can join you! I only just learned what “panzanella” is! <-- and it was apparently a big deal that I didn't know. *Blushing* Pink bowler hat: Bahahaha. Yep, that AND the matching sparkly cane. Thank you so much for the well wishes. They are the most loving couple. <3 Have a great sun-soaked adventures weekend, my friend! <3

  6. So many celebrations and parties. Demeter, you are real party animal 😀 It’s a wild summer for you girl! I’m not such a fan of weddings, to be honest. Maybe that’s because, in my country, we have craziest rituals which I don’t really like. Our weddings last for days and are always BIG and very loud. It involves lots of drinking and partying, and I guess I’m a more quiet, small party type heheh 😉 Anyways, you have fun! And congrats to your sister and your family!
Popsicles looks amazing and soo refreshing, and soo yummy <3 I love everything about strawberries and coconut 🙂 Pinning off course 😉

    1. Lolol. Natalie, could you imagine me being a party animal? 😉 Maybe back in the college days… Haha. Oh, how interesting about weddings in your country! Yeah, they definitely do no sound suited to your personality. I think this one’s gonna be much more low-key than that. 😉 Thank you for stopping by and pinning my friend! 🙂

  7. Hahaha! Oh Demeter – I chuckled through this post! Thanks lady! I’m so glad you rectified that gory image that popped into my head when I first read “heart on sticks”!
These popsicles sound amazing – I better join your family in knitting those newly wed pillowcases as I don’t think I could find the patience to sit around while these popsicles froze – because that strawberry banana coconut combo is downright irresistible in smoothie form!
Congrats to your sister – she sounds like one heck of a gal – just like her little sister who inspires us to look for the humor in every moment with her hilarious stories on her food blog 😉
By the way, no matter what you dress in I sure do hope you wear that pink sparkly bowler hat – AND take pictures!!!
    Have a wonderful time! xoxo

    1. Oh Shashi, girlfriend, I just KNEW you’d love the imagery!! lolol. I suspect we share the same wicked sense of humor. 😉 In fact, I know it! Let me hand you some knitting needles, it’s time to keep busy! Hah. 😉 Thank you so much for the congratulations, my friend. I’ll be sure to pass along your sweet comments to her. You’re too kind, Shashi. Too kind. <3 Okay, now I *have* to find this pink bowler hat. It's a thing now. Lol. Much love to you, my friend. Muah! xoxo

  8. Woohooo! And all the bells and whistles, confetti and corks!! Yay! What a beautiful time that will be! Congratulations to your sister and your growing family! That’s the best(!) just like these popsicles! I absolutely love their pretty color and flavor combination! Almost as dynamic as the tuxedo shirt and bowler hat! Would love to see pictures, my friend! Have a great weekend! 🙂

    1. Oh girl, bells, whistles, confetti and corks sound awesome! 😉 Sounds like a fun gift bag of some sort. Lol. Three cheers for growing families! 🙂 Tuxedo shirt and bowler hat: How’d I *know* you’d love that? 😉 Will share pics soon-ish. Fingers crossed for a cute bowler hat? 😉 Hugs to you, my friend. Muah!

  9. Congrats to Penny!! So happy she found the right one. Much happiness and a lifetime of love to them 🙂 Girl, you should totally wear a cute summer dress too…with the top hat if you so desire. heeheehee. Loving these pops right now and need to make them for the weekend. It’s been so hot here that all I want to do is lay in the pool and eat popsicles every weekend. Thanks for helping me achieve my goal of doing just that! 😉

    1. Thank you so much, Karebear! 🙂 I’m gonna pass your wonderful well wishes along to them. The top hat would be the best part. Lololol. Okay, but now you HAVE to just lay in a pool and enjoy pops. It’s an official thing now. 😉 Yay for achieving summa goals. Woot woot!

  10. Congratulations to your sister. I just love weddings! Very beautiful post to read about your family dear. Coming to popsicles, I prepared strawberry popsicles yesterday but I have to tell your pics and version looks amazing! You rock girl 🙂

    1. Thank you so much, Kushi. 🙂 Weddings are just so lively and fun! I mean, what’s better than a celebration of love? 🙂 I’m so happy that you enjoyed this post. So fun to hear about your popsicle adventures too! You rock too! 🙂

  12. Congratulations to your sister and to all your family! I love weddings 🙂 and if I had to go to a casual one this summer I would opt for a floral dress (my favorite 😉 ) . We’ll be celebrating my parents’s 50th wedding anniversary in September back in Rome. Talked to my mom this morning and she might have found the dress 🙂 . Your vegan strawberry coconut popsicles are just gorgeous and so yummy! And so simple to make! Another great recipe, Demeter! Pinned!

    1. Thank you so much for the well wishes, Nicoletta. 🙂 Weddings can be so much fun! Nicoletta, you would totally be able to pull off a floral dress! Me, it woudn’t be pretty. Lol. I can’t wait to see what you wear to your parents’ 50th Anniversary. Please pass along my congratulations and love to them. <3 Have a great time, my friend! <3

  13. Demeter,
What a delicious looking popsicle! I will have to make a whole batch!
Your sister sounds wonderful. i’m glad she’s found the perfect partner for her! It’s hard to find great love in life, and it’s awesome when two people find that with each other. I also love how much you and your family love each other!
I enjoy wearing pretty, flowy dresses to summer weddings. I’m sure no matter what you wear though, you will have a great time!

    1. Lucy, so happy to see you here again. 🙂 Sending you a big, virtual batch of popsicles! My sister truly is the most amazing human being. She’s so kind and generous and strong. Pretty much everything I hope to be one day. 🙂 Thank you for the well wishes! It’s gonna be a fun wedding! 🙂 Three cheers for great love and for great people. <3 I'm gonna look high and low for a flowy dress (although I'm not sure I could pull that off either haha). Thank you Lucy! xoxo

  14. Woo boo! A big CONGRATS to your sister, Demeter!!! Such exciting news. Let me think…floral pants do not sound far fetched to me. I would totally rock them. I have hot pink ones so I’m not that far off, I guess 😀 I think you could pretty much wear anything and you’d be beautiful! And don’t forget about those accessories ’cause that’s important too ;). Your love for your family really shines through and you are all so lucky to have each other. Hope you have a blast at the wedding, though, I know you will!
Ok, ok….these pops!! Colour gorgeous….check. Flavour combo… Double check. Want the whole lot. Yes!!! You always have the best recipes, girl! Pinning, of course. Have a great weekend! Xoxo

    1. Thank you Dawn! Oh, girl, YOU could totally rock floral pants. Me, not so much. Haha. Aw, thank you for your sweet words. 🙂 Don’t forget, we do have a shared love of beauty products! Haha. 15. That’s so exciting that your sister is getting marries! Congrats! Summer weddings are so much fun. I think you should go with a casual and summery dress! And you should bring lots of these pops. So pretty, Demeter! You are definitely the popsicle queen. Each time you come out with a new one, I think that’s my favorite one, and then you go and bring out an even better one! I love the pretty colors and flavors. Definitely my kind of summer treat! Pinned! Hope you have a wonderful weekend!

    1. Thank you for the congratulations, Gayle! I’ll tell my sister you said that. 🙂 Woohoo for being popsicle queen! Such a tasty and refreshing title. 😉 Alright, I gotta go look for a casual summery dress stat! Thanks for the input and for the awesome words, my friend. Have a wonderful weekend! 🙂

  16. Congrats to your oldest sister!! Yay to gettin’ married! I love reading you talk about your family, Demeter. Your love for them is so genuine and heart warming… and I can tell you appreciate how lucky you are to have such a tight knit, loving family. It gives me ALL the warm and fuzzies! So for wedding attire… I’m loooooving the pink sparkly bowler hat. And I’m thinking you should find one of those tuxedo shirts. Or maybe one of those dress shirts with a bathing suit painted on. Bahahaha. YES. Okay. NO, but take a picture of you in that and then wear something else. 🙂 You are the smoothie popsicle queen and these strawberry coconut beauties are a perfect way to celebrate a union (along with a champagne bar of course). Love that since these are essentially just a frozen smoothie they are totally appropriate for breakfast. And dessert. And all the meals (err snacks) in between! Pinned! Cheers, sweets! xoxo

After everything we’ve all been through, I just realize more and more everyday how lucky we all are to have each other. <3 I'm also so thankful to have you as a friend, Chey. 🙂 Now, as for the pink sparkly bowler hat--am I feeling a twinsies coming on? Shall we get matching ones? 😉 I mean, to go with our bathing suit tshirts? We would be the classiest act there is! Hahaha. Thank you for the compliments and kind words. Much love to you, my dear. Muah! xoxoxo
