Happy 1st weekend of September! How did that happen so quickly?? How’s the weather where you’re at? Cool and crisp, or totally hot like where Erik and I are right now?

Either way, I hope you’re enjoying the last bits of summer and getting hyped for the beginning of fall. 🙂

Today, I thought I’d share a delightfully, unbelievably easy vegan energy ball recipe that’s made with just 3 ingredients! We’re gonna bust out the food processor, a few dates and our favorite whole ingredients for a super easy snack.

Ready? Let’s do this!

How to Make Vegan Energy Balls

Follow these super simple steps to make the easiest vegan energy balls ever!

Add & Blend

Add dates and your favorite nut butter to a food processor (here’s the one that I use). Blend until you get a sticky and crumbly mixture, similar to wet sand. Be sure to scrape down the bin of the food processor periodically.

Add & Blend Some More

Now, add in 1 cup of nuts. Blend until the nuts are fully incorporated into the sticky mixture. Once you can pinch this mixture between your fingers and it holds together, you’re ready for the next step.

Pulse

Add in the remaining ½ cup of nuts. Pulse until you get small but tastily significant bits of nuts. Now your energy ball mixture is ready! 

Pour

Pour your energy ball mixture into a bowl and press it down until it becomes a tightly-packed dough.

Scoop

Grab a small or medium cookie scoop, and scoop balls of energy ball mixture into your hands. Roll and press into smooth energy balls. Enjoy!

3 Ingredients for Easy Vegan Energy Balls

Medjool Dates [buy here]

Medjool dates are a wonderfully, naturally sweet source of fiber and stickiness to keep these vegan energy balls together. You can also use raisins or a similar type of dried fruit. Just make sure they’re not too dry.

Unsalted, Natural Nut Butter

Feel free to use your favorite nut butter in these vegan energy balls! I love using unsalted, natural almond butter or peanut butter. You can even use sunflower seed butter.

Nuts

My favorite nut to use in these energy balls is pecans, but you can use almonds, walnuts, peanuts, etc. 

How to Store These Energy Balls

Room Temperature

Store your energy balls at room temperature for about 1 week. 

Fridge

You can keep your energy balls longer if they’re stored in the refrigerator. Keep for up to 2 weeks.

Ingredients

Energy Balls

  • 6 Medjool dates, pitted (heaping 1/2 cup, packed)*
  • 1/2 cup unsalted, natural nut butter (I used almond butter)
  • 1 1/2 cups unsalted nuts, divided (I used unsalted, roasted pecan halves)

Optional

  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Add dates and nut butter to a food processor. Blend until you get a somewhat cohesive, sticky and crumbly mixture, like chunks of wet sand. This will take about a minute. Scrape down the sides of the processor as needed.
  2. Add in 1 cup nuts, vanilla and salt. Blend until the nuts are fully-incorporated and you get a soft, crumbly mixture. It’s ready when you can pinch the mixture between your fingers and it holds together.
  3. Add in remaining ½ cup nuts. Pulse just a few times until incorporated and nuts are chopped, with medium-small pieces still visible.
  4. Pour this mixture into a medium bowl. Press down on the mixture until it’s tightly-packed and resembles dough.
  5. Scoop about 2 tablespoons of the mixture into your hands. Roll and press into balls. I made 15 bites. Enjoy! Storing notes below.

Storing Instructions: Store in an airtight container at room temperature for 1 week.

    I’ve really sloughed off with cooking/baking things from scratch, but this one caught my eye and I’m going to try really hard to follow through. I need to dust off my cooking brain, shake it up and just go for it!!!! Thank you for the inspiration.

    How are you guys doing, did you get effected by the recent heavy storm? Out here in Northern California we’ve been dealing with smoke from the fires. Now not only do we wear out masks for Covid, but also for smoke particles.
