How to Make Chocolate Peanut Butter Oat Bars

Grab an 8-inch pan and some parchment paper. We’re gonna line the pan with parchment paper and set it aside for later.

Now, throw all of the wet ingredients into a large mixing bowl. Whisk it all together until smooth.

Add each dry ingredient to that same bowl (one-bowl, woohoo!). Grab a spatula or wooden spoon and stir all the wet & dry ingredients together until you form a dough. Fold in your add-ins (think chocolate chips and peanuts).

Pour your no bake oat bar dough into that pan you prepped earlier, then smooth it all into an even layer.

Melt the chocolate and pour it over the oat bar layer.

Freeze the bars for about 30 minutes, then slice and enjoy!

Tips!

  • Make sure to use creamy, drippy natural peanut butter: I’ve only tested these peanut butter oat bars with natural pb, so if you use regular JIF-style peanut butter, it might be a bit too thick.
  • Use your favorite chocolate: I love using my very favorite chocolate to make these bars because the flavor is so prominent. It doesn’t matter how much the chocolate costs, just how much you love it. 😉
  • Skip the chopped peanuts if you prefer peanut butter over peanuts. You can sub the chopped peanuts for more chocolate chips!
  • To get clean cuts: carefully use a super sharp knife. Here’s a fancy one that I love and an affordable one—they’re both great for everyday use to get clean cuts in your oat bars.

Storing and Freezing

Go ahead and pop these chocolate peanut butter oat bars into the fridge after making them. They’ll need just 1 day for the chocolate topping to set before you can safely store them at room temp.

From Day 2 and on, you can leave them at room temperature or in the fridge for about 1-2 weeks. Feel free to freeze them for up to 1 month as well. 😉

Chocolate Peanut Butter Oat Bars: the perfect mix of oatmeal cookie dough + chocolate peanut butter cups in 1 easy to make chocolate peanut butter oat bars recipe!


Ingredients

Units Scale

Wet Ingredients

  • 1/4 cup unsalted, natural creamy peanut butter
  • 1/4 cup pure maple syrup
  • 2 tablespoons melted coconut oil
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, whisked together, set for 15 mins)
  • 1 1/2 teaspoons pure vanilla extract

 

Dry Ingredients

  • 3/4 cup rolled oats
  • 3/4 cup oat flour
  • 1/4 teaspoon salt

 

Add-in Ingredients

  • 1/4 cup assorted chocolate chips (mini and regular)
  • 1/4 cup unsalted peanuts, finely chopped

 

Chocolate Topping

  • 1/2 cup chocolate chips
  • 1/4 cup + 1 tablespoon unsalted, natural creamy peanut butter

Instructions

  1. Line an 8-inch square baking pan with parchment paper or wax paper. Set aside.
  2. Make the dough: In a large bowl, whisk together all of the wet ingredients: peanut butter, maple syrup, coconut oil, flax egg and vanilla. Whisk until smooth.
  3. Add all of the dry ingredients: oats, flour, and salt. Using a rubber spatula, fold the ingredients together until well combined. Fold in the add-in ingredients: chocolate chips and peanuts.
  4. Pour dough into the prepared baking pan. Using the rubber spatula, smooth into an even layer.
  5. Make the chocolate topping: Use the double boiler method or do the following. In a medium, microwave-safe bowl, add Chocolate Topping ingredients (1/2 cup chocolate chips and ¼ cup + 1 tablespoon peanut butter). Heat in 20-second increments until softened and melted. Stir in between heating, until smooth.
  6. Form the bars: Pour this chocolate mixture over the cookie dough bars. Using a clean rubber spatula, smooth into an even layer.
  7. Freeze for 20-30 minutes. Remove from freezer and slice into 16 bars. Enjoy! Storing instructions below.

Storing Instructions: Store in an airtight container in the refrigerator for 1-2 weeks. Bars can be stored at room temperature after the first day of refrigeration.

    1. That’s so awesome to hear, Nicola! Chocolate: I just tap the heck out of that pan until air bubbles burst and the top smooths out. I should note that there are some swirls if you look closely. 😉 Sometimes though, I’ll just make exaggerated swirls instead of the painstaking even top because it’s just more fun that way! 😉
