The Best Crispy Breakfast Potatoes

Don’t you just love the creamy, crispy comfort of potatoes? There’s something so fulfilling and satisfying with just-right cooked potatoes that have crispy exteriors and melt-in-your-mouth soft interiors.

Today I’ll be sharing the exact way to achieve soft, creamy potato interiors while having crisp, golden edges in your crispy breakfast potatoes.

With a small but mighty combination of spices, we’ll be making deliciously seasoned potatoes with golden, seasoned exteriors that are savory and mouthwatering.

Breakfast Potatoes Ingredients

We’re going to be using the simplest ingredients to make breakfast potatoes crispy. You can adjust the seasonings to your liking, but keep in mind that this recipe is delicious!

  • Potatoes
  • Olive oil
  • Garlic powder
  • Onion powder
  • Paprika
  • Salt & pepper

How to Make Breakfast Potatoes – Crispy!

  1. Boil or microwave potatoes until fully cooked and softened. You should be able to easily sink a fork into the very center of the potato—that’s how you know it’s perfect for this breakfast potatoes recipe.

Prep the Potatoes

  1. Slice into ½” cubes. Remember, there’s no need to peel off the skin.
  2. Next, combine garlic powder, onion powder, paprika, and salt and pepper to taste in a small bowl. Stir to combine.

Make the Breakfast Potatoes Crispy

  1. Heat a large skillet to medium heat. Drizzle in oil and spread to an even layer—this will create truly crispy breakfast potatoes. Allow potatoes to cook for about 3 minutes, since this will create crisp, golden edges.
  2. To check if it’s ready to flip, peek at the underside of one potato cube in the center of the skillet. It’ll be golden brown.

  1. Once fully crisped on one side, flip the breakfast potatoes. Drizzle with oil and sprinkle with salt.

  1. Cook for another 3 minutes, until crisp on the remaining side. Then, sprinkle seasoning all over potatoes. Then, drizzle more oil to create crispy edges. Stir and flip to get crispy all over breakfast potatoes.
  2. Cook for a few more minutes until as crisp as you desire. Lastly, add salt and pepper to taste. Serve, then enjoy the best crispy breakfast potatoes!

If you’re looking to spice up your breakfast, try sprinkling some Cajun seasoning or seasoned salt on top.

Storing & Freezing

  • Refrigerator: Cool breakfast potatoes completely before storing. Then, transfer potatoes into an airtight container in the refrigerator. Keep for 1-3 days.
  • Freezer: Cool, then store breakfast potatoes in an airtight, freezer-friendly container for 1-3 months. Reheat before serving.

Crispy Breakfast Potatoes

Ingredients 

Instructions 

  • Cook Potatoes. To Boil: Add cleaned potatoes to a pot of boiling water. Cook until you can easily stick a fork into the center of one. Pat dry completely. To Microwave: OR, wrap cleaned potatoes in plastic wrap and heat in the microwave for 5-8 minutes on high. Test for doneness with the same fork method.
  • In a small bowl, add garlic powder, onion powder, paprika, and 1/8 teaspoon salt and pepper (or to taste). Stir to combine. Set aside.
  • When cool enough to touch, slice potatoes into 1/2” cubes.
  • Bring a large nonstick skillet to medium heat. Coat skillet with 1 tablespoon olive oil. Add potatoes in a single layer, cooking until crisp and the underside of a potato cube in the center of the skillet is golden, about 3-5 minutes.
  • Drizzle 1 tablespoon of oil evenly over the non-roasted side of the potatoes. Sprinkle with 1/8 teaspoon salt. Using a heatproof spatula, flip potatoes so the unroasted side can crisp. Crisp for 2-5 minutes. Mine took 3 minutes. When golden, crisped patches form, flip again.
  • Sprinkle seasoning mixture over potatoes and drizzle with remaining oil, as needed. Stir and flip potatoes frequently to evenly coat each piece. Crisp on pan for 1-2 more minutes, until golden brown all over; add 1-3 more minutes for super crispy potatoes! Add salt and pepper to taste. Transfer to a serving dish. Garnish with rosemary. Enjoy!
