Healthy Berry Granola Bars (Vegan, GF)
Healthy Berry Granola Bars: this healthy granola bars recipe is bursting with sweet berry flavor: blueberries, strawberries, & cranberries. The best granola bars—fiber-rich, healthy, made with whole ingredients, vegan + gluten free.
Good morning! <– Didn’t just reading that make you feel so good? Every morning, when I reach for my phone, I always see this message: “Good Morning” and I feel compelled to say it out loud, which then makes Erik go, “Oh, thank you!! Well, good morning to you too!”
And I’m like, niiiiice. And I fist bump my phone, then accidentally call my mom, then accidentally post something to Instagram, then punch the side buttons like 15 times, accidentally take no fewer than 4 screenshots, and pray that the morning madness will end.
Then, I go back to smirking and staying far, far away from my phone until I actually need a “good morning” and related shenanigans ensue the next day. Goodness.
And then I actually tell you what we’re baking today… and it’s totally setting you up for the best good morning ever tomorrow! Ready for it? Let’s do it!
Triple Berry: Healthy Granola Bars
Lately, I’ve been on such a healthy granola bar kick: I’ve been making batches of these healthy homemade blueberry granola bars, sending batches of these healthy homemade coconut granola bars to the fam, and making double batches of these 3 ingredient no bake peanut butter granola bars to share. 🙂
So what naturally came next was the ultimate healthy berry granola bars! They’re so much fun to make, and packed with three different kinds of berries: dried strawberries (how cool is that?), dried cranberries and dried blueberries. So. Friggin. Good.

Where to Buy Ingredients for the Best Berry Granola Bars
- Nuts: Almonds, Pecans, Walnuts – you can use any combo of nuts to make these berry granola bars, but this trio is my favorite. 🙂
- Gluten Free Rolled Oats – I like keeping a bag of these GF rolled oats on hand for making homemade granola bars, healthy chunky granola, and for grinding up to make homemade oat flour.
- Dried Strawberries + Dried Blueberries + Dried Cranberries – dried strawberries!! How cool is that? These are my favorite dried fruits because they’re sweetened with just fruit juice. There’s no added sugar or additional junk.
- Coconut Sugar | Coconut Oil – two staples of any healthy baking pantry. Refined sugar-free. Dairy-free.
- Natural, Creamy Almond Butter – no salt or oil added. This almond butter is made with just 1 ingredient: almonds. Love the simplicity of it.

Description
Healthy Berry Granola Bars: this healthy granola bars recipe is bursting with sweet berry flavor: blueberries, strawberries, & cranberries. The best granola bars—fiber-rich, healthy, made with whole ingredients, vegan + gluten free.
Ingredients
Dry Ingredients
- 1 cup nuts, chopped (I used pecans, almonds, walnuts)
- 1/2 cup gluten free rolled oats
- 2 tablespoons dried strawberries, chopped
- 1 tablespoon dried cranberries, chopped
- 1 tablespoon dried blueberries
- 1/4 cup golden ground flaxseed
- 1/4 teaspoon salt (optional)
Wet Ingredients
- 1 tablespoon coconut sugar
- 2 tablespoons melted coconut oil
- 1 tablespoon unsalted, natural creamy almond butter
- 3 tablespoons pure maple syrup
Optional Topping
- 1 tablespoon dried strawberries (chopped), cranberries (chopped) & blueberries
Instructions
- Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later. You can also use this Energy Bar Mold to make rectangular granola bars with crispy exteriors.
- Add all dry ingredients to a large bowl: nuts, oats, strawberries, cranberries, blueberries, flaxseed, and salt (if using). Stir until well mixed.
- Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter and maple syrup. Whisk until well incorporated.
- Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.
- Pour the mixture into the prepared baking pan. Using the spatula, nudge the mixture until loosely and evenly spread out. Then, use the spatula to press the mixture firmly down into an even, very tightly-packed layer. Optionally, press chopped dried fruit into the bars.
- Bake for 22-27 minutes. Mine took 25 minutes.
- Place baking pan onto a cooling rack to cool for about 30 minutes, or until completely firm. After, lift bars and parchment paper onto the cooling rack to finish cooling for 1-2 hours. Slice and enjoy! Storing instructions below.

Hello, I’ve made these a couple times. They seem to fall apart easily. Am I doing something wrong? How do I fix it. They are delicious.
Hi Anne. Hm, it can be a bit hard to diagnose from a distance. Did you make any ingredient substitutions? Also, are you firmly packing in the mixture before baking?
Hi Dana! I’d say to give my paleo granola bars a shot, as they are oat-free. Happy baking! 🙂
Hello! Love this, but needing something oat free. Do you have any suggestions on a substitution for oats in this recipe?
Hi Dana! I’d say to give my paleo granola bars a shot, as they are oat-free. Happy baking! 🙂
I made these with a strawberry chi seed jam I made – I probably put too much of it in the mixture but it was so good, I had to. I’m assuming that led to why my bars didn’t quite bake or set correctly…any ingredient I should increase to help with that?
For now I’m gonna just freeze them to get a little more crunch. They’re pretty mushy currently. I even had them in for around 30 min too.
Hi Julie! Yep, the chia jam is almost definitely the culprit as it’s so liquidy. I would not recommend replacing the chopped fried fruits with a liquid ingredient like that because it will lead to overly moist bars that might not hold together properly. You could try using dried fruit in the batter and putting the chia jam on top of the bars after baking. Hope this helps! 🙂
These granola bars are amazing! I whipped up a batch last night and they are already almost gone. My kids can’t get enough of them.

We are always looking for healthy snacks and our blueberry bushes are flourishing, so these are perfect!
What perfect timing! 🙂
Can you use frsh berries instead of dried?
Hi Linda, I highly recommend dried fruit. I haven’t tried it with fresh fruit myself, but I worry that the fruit would be too large and/or add too much moisture to the recipe if chopped up. It might result in crumbly or cakey bars. 🙁
These granola bars made my morning. I love the combination of the dried berries, especially the cranberries. I will definitely make these again!
Woohoo! I’m so happy to hear it Angela! 😊
