What kind of fun things/entertainment/music do you engage in to stay active?

Lately Erik and I’ve been trying all manner of things to keep ourselves moving at least once every day. Yep, once. J/k! (You totally know Erik would interpret this as “you can go to the fridge and grab something to eat and that counts”.) A-hem! Anywho, we’ve been trying at-home workout equipment, portable ping-pong kits, and even dancing like fools to stay fit.

These peanut butter oatmeal cookie bars are my favorites for a reason: they’re delicious, they’re filling and they’re made with healthy ingredients. Whoop!

But how do they taste? This healthy oatmeal cookie bars recipe does not taste like it’s healthy! Say whaa? Well, you’re gonna be so blissful, enjoying the burst of peanut butter sweetness and chewy, satisfying oats, all interspersed with melty chocolate morsels, that you’ll completely forget that they’re healthy.

Bonus? You can totally freeze these peanut butter chocolate chip oatmeal cookie bars! After cooling and slicing your healthy oatmeal cookie bars, place bars in a freezer-friendly, airtight container. Store for 1-2 months. Before enjoying, allow cookie bars to thaw for 10-30 minutes.

Instructions 

  • Preheat oven to 350°F. Line an 8-inch square pan with parchment paper or greased foil. Set aside.
  • In a large bowl, whisk together all the dry ingredients: oats, oat flour, flaxseed, cinnamon and salt.
  • In a medium bowl, whisk together all the wet ingredients: coconut oil, peanut butter, maple syrup, coconut sugar and vanilla.
  • Pour the wet mixture over the dry mixture. Using a rubber spatula, stir and fold until well mixed. Fold in chocolate chips and peanuts, if using.
  • Pour this mixture into the prepared baking pan. Using the rubber spatula, spread into an even, tightly-packed layer. Optionally, press chocolate chips into the top of the bars.
  • Bake for 16-22 minutes, until golden brown on top. Mine took 20 minutes. Place baking pan on a cooling rack, allowing to cool for 30 minutes. Pinch the edges of parchment/foil and lift bars onto the rack to continue cooling completely (about 1-2 hours). Slice into 16 bars. Enjoy!

Storing Instructions: Store in an airtight container for 1-2 weeks.
A Note on Homemade Oat Flour: *If using homemade oat flour, make sure to blend the flour until very fine and sift the flour to remove coarse bits of oats that could create less than ideal results. Store until needed, then measure the amount required for the recipe.

      I’ve made these SO many times, absolutely delicious! Stupid question, can I double the batch and put them into a bigger pan, 9×9?

        Thanks so much, Karen! ๐Ÿ™‚ Not a stupid question at all! I recommend using a pan that’s 9×13 for slightly thinner bars. If you use the 9×9 the bars will probably be too thick and not bake all the way through. Also, you’ll have to take about 5 more minutes onto the bake time–check in on them to make sure they’re cooked, but not burned. Enjoy!
