Back when we were living in Boston, Erik and I decided to go keto. Oh my goodness, that was one of the patchiest times, diet-wise, that we’ve ever gone through.

Like, how do we go keto, and still keep our regular snacking routine normal? Can we still whip up super easy snacks and keep them keto, and made with just a few ingredients?

I mean, no one’s got time for complicated homemade snack-making, ya know?

So in between downing Koia keto shakes, snacking on all the avocados and brazil nuts, questioning whether or not we absolutely had to do keto and IF at the same damn time, we decided it was time for our old favorite: energy balls! But this time, they’d be keto balls.

So guess what I’ve whipped up for you today? A little sumthin’ sumthin’ to get you through keto, and to make it tasty/happy/not-sanity-questioning: 4 ingredient Keto Peanut Butter Balls!

Are you ready to learn all about these ridonkulously easy keto peanut butter balls? Let’s do it!

Storing and Freezing Chocolate Peanut Butter Keto Balls

Room Temperature or Refrigerator

Tuck your keto balls into an airtight container and place them in the fridge or on the counter for 1-2 weeks. If your keto balls are too soft the first day, don’t worry because they’ll firm up by tomorrow.

Freezer

Otherwise, you can store your keto peanut butter balls in a freezer-friendly container in the freezer. Bonus: in the freezer, you can keep them for 1-2 months. No need to thaw your bites, unless you like them on the softer end.

The best chocolate keto peanut butter balls—made with just 4 simple ingredients, low carb and deliciously satisfying.

  4. Marta Maroni says:

can you use another flour instead of coconut?

    1. Demeter | Beaming Baker says:

You can try using almond flour, but you’ll have to increase the amount a bit since coconut flour is much more absorbent. Do some experimenting until you get the texture you like. Enjoy! 🙂
