It suddenly dawned on me: I can pretty much eat any batter, dough, filling, whatever-I-darn-well-please, RAW!! Woohoo!!

So today, we’re gonna take this whole edible cookie dough business to the next level: we’re gonna be whipping up a 6 ingredient, super easy, healthy, and perfectly soft-n-dense paleo chocolate chip cookie dough bites recipe! Made with almond flour! And coconut flour! (Sorry, I just had to add in a third exclamation point!!!)

Easy! Since we’re working with vegan ingredients, everything in this recipe can be eaten raw. What does that mean? None of the ingredients for this paleo cookie dough bites recipe needs to be pre-baked.

Some edible cookie dough recipes call for baking the flour for a bit because it can’t be eaten raw – that’s blessedly not the case for the flours used in this cookie dough recipe: almond flour and coconut flour.

All you have to do to make these edible paleo cookie dough bites is: toss all the ingredients except the vegan chocolate chips into a bowl. Stir until thickened and very well mixed. How do I swap all the flour in this recipe for coconut flour?

Er… please don’t. That’s the only answer I have for that! Coconut flour is to be feared like the Boogeyman. But, for real. In almost all cases, you cannot swap all the flour in any recipe for coconut flour. Even if coconut flour is already in the recipe (in some partial way). Coconut flour is extremely absorbent – this means it will soak up all the moisture/wet ingredients in your recipe until it’s gone. Like, no exaggeration. It will keep soaking it up til you finish eating that treat (even if it’s 2 months later). So, just don’t do it! (Said with lots of love, of course.)

Can I use another sweetener for this paleo cookie dough recipe?

Yes. A lot of readers have swapped my usual go-tos: pure maple syrup and coconut sugar for a variety of other sweeteners in my recipes. The only thing: every sweetener works differently. (Alright, who else is thinking about Ari’s latest album and wondering whether or not she might have more expertise in this? Hehe.) For example, honey is super thick—much thicker than maple syrup, so it might not add as much needed moisture to the recipe. Also, other sweeteners might not be as sweet, or much sweeter than the maple syrup I used in this recipe. So experiment as much as you’d like, but don’t have my head if your swaps yield an unexpected result. Good luck!

    Wow!! This is the first time making it and they came out AWESOME. Because of low carb, GF needs I cut the sugars even more by using Xylitol to replace 2/3 of the sugar and Cacao Nibs for the chocolate chips. It’s a huge relief to find a really yummy treat that is so healthy! Thank you for the recipe! xo

    Can you swap raw honey for or the maple syrup? I literally just ran out earlier today and I don’t feel like going to the grocery store at the moment. Any suggestions?

      Hi Brittni! I haven’t tried it with raw honey, but it should work. You might need to adjust the amount since maple syrup isn’t as thick. Let me know how it turns out! 🙂
