Have you ever tried making no bake cookies? How about keto cookies? How about keto no bake cookies? Perhaps the mere notion of any of those things, especially the no bake part, isn’t quite selling you yet.

I’ve been there. With keto. With no bake. And even with peanut butter. We all have our silly moments (aka I totally despised peanut butter as a chocolate-only kiddo). Lol.

Today, we’re gonna make the keto no bake cookies that will sell you on keto no bake cookies. 😉 Imagine: peanut butter goodness, just a few simple steps, and only 3 ingredients to delicious keto peanut butter cookie delight.

How to Make Keto No Bake Cookies

Line

First, grab a baking sheet and line it with parchment paper or wax paper. You can even grab a plate if that’s all you have.

Stir & Fold

Now, add all keto no bake cookies ingredients to a medium mixing bowl and stir & fold until thickened: peanut butter, coconut flour, and keto maple syrup. You can also add in monkfruit drops if you like your keto no bake cookies sweeter. 😉

Scoop

Scoop and drop your keto no bake cookie dough balls onto the baking sheet (or plate) you prepared earlier. Grab a fork and flatten each cookie to the thickness you like. I made a crisscross pattern with the fork.

Enjoy

Et voila! You just made the easiest keto no bake cookies. Enjoy!

Just 3 ingredients for Easy No Bake Keto Cookies

Peanut Butter

Rich in healthy fats, low in carbs, peanut butter is one of the easiest keto-friendly nut butters to use. You can also use a lower carb nut butter such as pecan butter, if you’d like. 😉

Coconut Flour

I often grab coconut flour when developing a keto cookie recipe. Reason being, it’s low carb, has a mild and pleasant taste, and it absorbs liquids in a recipe very efficiently, so a little goes a long way. You can also use your coconut flour to make these 3 Ingredient Easy Keto Balls.

Keto Maple Syrup

One of my favorite keto sweeteners. This one is low carb, liquidy like maple syrup and perfect for keeping this no bake cookie recipe keto.

How to Store Keto No Bake Cookies

Room Temperature

Go ahead and store your keto no bake cookies at room temperature for 1-2 weeks. Just make sure to store the keto cookies in an airtight container and away from heat sources, which could cause spoilage.

Freezer

Sometimes I like making a double or triple batch of these keto no bake cookies so I can have them on hand for a quick keto snack. Simply store your keto no bake cookies in an airtight, freezer-friendly container. You can keep these keto cookies for 1-2 months in the freezer.

Peanut Butter Keto No Bake Cookies – 3 Ingredient

Keto No Bake Cookies: an easy 3 ingredient recipe for keto no bake peanut butter cookies! So easy to make, so delicious to eat. Low Carb.

Ingredients 

Instructions 

  • Line a baking sheet with parchment or wax paper. Set aside.
  • In a medium bowl, add peanut butter, coconut flour, keto maple syrup, and monkfruit drops, if using. Use a rubber spatula to fold until well incorporated and thickened.
  • Using a cookie scoop, scoop and drop peanut butter balls onto the prepared baking sheet, spaced evenly apart. Here are the small and medium cookie scoops I use.
  • Using a fork, press tines into the face of each cookie to flatten. Lift the fork and press it down onto the cookie again in the opposite direction, creating a crisscross pattern. Flatten to desired thickness.

Where to Buy Ingredients: Keto Maple Syrup | Monkfruit Drops | Coconut Flour | Peanut Butter
Storing Instructions: Store in an airtight container at room temperature or in the refrigerator for 1-2 weeks. On Day 1, bites will be soft and moist. On Day 2 and forward, bites will become firmer and less moist.
Freezing Instructions: Store in an airtight container in the freezer for 1-2 months. Firm, but soft enough to eat straight out of the freezer.
