How to Store Your Keto Ice Cream
Store your keto ice cream in the freezer. Just make sure to give your ice cream ample time to thaw before enjoying. Thaw time is about 20-90 minutes—I know, a huge range, but depending on how hot or cold the thawing room is, you would need more or less time. Generally speaking, if it’s colder, it’s gonna be closer to 90 minutes, if it’s hotter, it’ll be closer to 20 minutes (but that’s like really hot. Lol.).

- Liquid Monkfruit – just a few drops go a long way. I use this sugar free sweetener for a concentrated boost of sweetness in my keto recipes without having to drastically change up a recipe. So sweet and tasty!
- Coconut Milk + Coconut Cream – quintessential keto ingredients to add mouthwatering creaminess to keto ice cream. The perfect balance of creaminess is found in using both in certain low carb ice cream recipes.

Keto Ice Cream Base
- 1 can full-fat coconut milk (13.66 oz.)
- 1 can coconut cream (13.66 oz.)
- 1 teaspoon pure vanilla extract
- 1 1/2 tablespoons keto honey
- 20–30 drops of liquid monkfruit sweetener

Instructions
- The day before, freeze the freezer bowl according to your ice cream maker’s instructions.
- Day of, blend together coconut milk, coconut cream, vanilla, and keto honey in a food processor. Here is the food processor I use. Scrape down the sides of the processor as needed. Blend until smooth and well mixed.
- Add liquid monkfruit drops to taste. I used 26 drops. Blend until smooth and well mixed.
- Pour mixture into ice cream maker. Follow directions for making ice cream according to ice cream maker’s directions.
- Enjoy immediately if you like soft ice cream. If you like firmer ice cream, pour into an ice cream container and freeze for 2-5 hours, until firm.
- Ice cream is best the first day. On Day 2 and forward, set ice cream out at room temperature to thaw for 20-90 minutes, until creamy and scoopable. Enjoy! Storing instructions below.
