3 Ingredient Almond Butter Paleo No Bake Cookies (GF): learn how to make easy no bake cookies paleo, vegan & gluten free! Soft, sweet & satisfying. Protein-Rich, Healthy, Refined Sugar-Free.

Instructions

  1. Line a baking sheet with parchment paper or wax paper. Clear some space in the freezer for this sheet. Set aside at room temperature.
  2. In a medium bowl, add almond butter, maple syrup, and coconut flour. Use a rubber spatula to fold until well incorporated and thickened. Cover bowl and freeze for 15-20 minutes.
  3. Remove from freezer. Using a cookie scoop, scoop and drop balls onto the prepared baking sheet, spaced evenly apart. Here are the small and medium cookie scoops I use.
  4. Using a fork, flatten cookies to desired thickness. Optionally, make additional fork marks in the opposite direction for a crisscross pattern on the cookies.
  5. Transfer back to the freezer to chill for 20-30 minutes, until somewhat firm.* Enjoy! Storing instructions below.

  1. Can I substitute the maple syrup for something else? We are 100% sugar free for now. I’m trying to figure out if I could just leave it out or maybe replace it with coconut oil? Any suggestions will be much appreciated. Once we reintroduce natural sugar I will definitely make them as is! Thank you!

    1. Hmm… good question! Can you have dried fruit or monkfruit? If so, try blending up the almond butter with some dates OR sugar free monkfruit maple syrup. If you can’t have either… I’m not sure, unfortunately. Good luck!

  2. Can I substitute sunflower butter? I want to make these with my son to take for Valentine’s Day at his school but it is a no nut school. Also, I plan to shape with a heart cookie cutter. Any reason to believe that it won’t work? Thanks so much for a simple ‘baking’ recipe with no sugar and no dairy that I can make with my 3 yo!!!

    1. Hi Nicole, yes, that would work. 🙂 As for the heart cookie cutter, the dough is a bit soft right after it’s made. I recommend making the “dough” first, then allowing it to sit for a few hours before working with it. This will ensure that it’s thickened up a bit. Hope you and your kiddo enjoy it! Can’t wait to hear what you two think!

  3. I am making these right now ………in the freezer. I had a quick taste test of the “dough” and boy was it good!!! I have acquired a love for almond butter over peanut butter so this recipe surely caught my eye!!! Thank you!!
