My favorite grain free granola recipe—simple & easy to make granola that yields crispy, crunchy clusters and perfectly spiced, cozy cinnamon flavor.

When I first started getting into baking, like obsession-level baking, I put cinnamon in everything. No seriously, EVERYTHING. I would (and still do) buy the gigantor bottles of ground cinnamon. I mean, who needs those teeny-tiny, itsy bitsy bottles anyway? It’s just gonna be used in a week. Riiiiight? 

But as it turns out… not everyone loves cinnamon in everything. Dang it! I’ve since had to dial down my cinnamon fandom, or at least appear as neutral and “cool” about cinnamon as possible. You know me, cool as can be. 

Fortunately, you probably actually love cinnamon… and you most definitely want to make grain free granola. Or else, why would you be reading this right here, right now?

One can hope… and if not, go ahead and make today’s grain free granola recipe and skip the cinnamon. I won’t know. ๐Ÿ˜‰

So if you’re ready… let’s bake this!

How to Make Grain Free Granola 

You might know about some of the benefits of a grain free diet, but how about making a grain free granola? ๐Ÿ™‚ Grain free granola is much easier to make than you might think. ๐Ÿ˜‰ Follow along with me as we make the most delicious grain free granola in just a few steps:

Preheat

Before I start doing anything in the kitchen, I check to make sure that I’ve preheated the oven. Head over to the oven and preheat it to 325°F. Then, line a large baking sheet with parchment paper.

Add

Add all of the grain free granola’s dry ingredients to a large mixing bowl: coconut, nuts, cinnamon and salt (if you’re using it). Stir to mix.

Stir

Now, add in your one wet ingredient: maple syrup. Stir and fold all of these ingredients together to create your grain free granola mixture.

Pour

Pour this delicious granola mixture onto the baking sheet you prepped earlier. Encourage granola clusters by creating small piles with air pockets in between for ultimate crisp factor. 

Bake, Cool & Enjoy

Bake, flip, bake again. Then, cool and enjoy the best grain free granola!

Unsweetened Coconut Chips

My favorite grain free granola ingredient—nay, my favorite grain free recipe ingredient. Grain free means any ingredient that includes grains and anything that comes from it [1], so you’re clear to enjoy coconut. It’s so versatile and crisps up like no other to make delicious granola clusters.

Nuts

Almonds, walnuts, pecans. I’ve made my share of healthy granola recipes in my lifetime, and I’ve found that this nut trifecta is the best in almost any granola recipe, grain-free or not. Try almonds, walnuts and pecans, or try your favorite nuts in this recipe. ๐Ÿ™‚ Bonus: you can use any extra nuts in this grain free granola bar recipe: Healthy Coconut Granola Bars.

Pure Maple Syrup

Ground Cinnamon & Salt

If you’re not feeling the cinnamon component of this grain free granola recipe, go ahead and leave it out. You can also feel free to use the salt or leave it out for a low-sodium granola treat.

How to Store Your Grain Free Granola

Room Temperature

After cooling, store your grain free granola in an airtight container for up to 1 month at room temperature. Make sure to keep your granola away from direct sunlight and heat sources to avoid spoilage. This grain free granola lasts just as long as these 3 ingredient peanut butter granola bars

Ingredients 

Instructions 

  • Preheat the oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside.
  • Add coconut, nuts, cinnamon and salt (if using) to a large bowl. Stir until well mixed.
  • Add maple syrup. Stir and fold until coconut and nuts are fully coated.
  • Pour granola onto the prepared baking sheet. Spread into an even layer, with empty pockets at regular intervals to let air through. Using a spoon, create small piles of granola—these will become clusters after baking.
  • Bake for 10 minutes. Using a heatproof spatula, flip granola to evenly crisp the other side. Bake for an additional 5-12 minutes. Mine took a total of 20 minutes.
  • Place baking sheet on a cooling rack. Allow to cool for about 30 minutes. Storing instructions below. Enjoy!

Notes

Storing Instructions: Store in an airtight container for 1 month at room temperature.

    I’m a cinnamon addict, there are so many different types! Currently my favorite is one from China named Tung Hing, it’s a bit spicy and stronger than the traditional ones sold at the grocery store. It works great with frozen bananas whipped up for nice cream. I also like Saigon, and Ceylon cinnamon.

    It’s been a while since you mentioned possibly moving, but I’m curious if you guys find a new home? If that’s too personal, no need to answer. Back when you had your Coffee Talk posts you used to write about moving around, I miss those posts. ๐Ÿ˜Š

      Hi Heidi, as one cinnamon addict to another: NICE! ๐Ÿ˜‰ My mom absolutely despises Saigon cinnamon (she used to hate all cinnamon bc she confused it with something else), but then I’d sneak it into something and she’s like, “I love this!! What is this?” Lol. I loved hearing about the Tung Hing–I’ve got to try that.

      We are in the process!! I don’t want to jinx anything (haha), but I’ll update you as soon as I can.
