Whatโs your favorite easy recipe of all-time? Is it 3 ingredient no bake peanut butter oatmeal cookies? Is it one of these 11 insanely easy energy balls recipes? Or my No Bake Chocolate Oatmeal Cookies? Perhaps itโs an easy no bake recipe from another website (ahhhhhhh!!! Gasp!!!)?

So when I approached my month of January recipes, I made sure to create the easiest, fewest ingredient recipes for my no-bake jams. And by โjamsโ I mean recipeโwhy, oh why do I try to sound cool? Itโs obviously futile. Lol.
Back on point, I know how yโall absolutely love my no bake cookiesโฆ
Easy No Bake Peanut Butter Oatmeal Cookie Cups
So I thought why not create a cups version? I tweaked the recipe a bit so itโd have a bit more moisture and less dry ingredients aka oats, so theyโd be easier to scoop and mold. Et voilร : PB oatmeal cookie cups!

How to Make No Bake Peanut Butter Oatmeal Cookie Cups
These peanut butter oatmeal cookie cups are super easy to make! First, add peanut butter and maple syrup to a heatproof bowl.
Then, whisk together peanut butter and maple syrup until itโs thickened and well-incorporated.
Next, youโll simply heat & stir together peanut butter and maple syrup until fluffy.
Once the sweetened peanut butter mixture is nice and warm, add in the rolled oats.
Using a silicone spatula, stir and fold the oats into the sweet mixture.
This is what the no bake oatmeal cookie โdoughโ will look like once itโs done! (And yes, you *totally* have permission to eat it right out of the bowl.) ๐
Using a small cookie scoop, scoop and drop peanut butter oatmeal cookie dough into a mini cup pan. I like to lay the silicone pan onto a baking sheet so itโs easier to stick into the freezer for chilling later.
Next, grab a spoon and start flattening each of the cookie balls into a smooth, even layer. You can even skip this step if you donโt mind peanut butter oat balls instead of cookie cups.
Chill and enjoy. Thatโs it! Looking for something even easier? Try my No Bake Peanut Butter Coconut Balls or my super customizable Cereal Bars!

Equipment
Ingredients
- 1 cup smooth peanut butter
- ยผ cup + 2 tablespoons pure maple syrup
- 1 ยพ cups gluten free rolled oats
Instructions
- Lay a 24-mini-cup silicone baking pan on a medium baking sheet. I highly recommend the mini pan in this set, as itโs much easier to remove the oat cups. Set aside for later.
- In a large, microwave-safe bowl, add peanut butter and maple syrup. Whisk together until well mixed.
- Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out (about 4-7 rounds). Whisk in between heating increments. *Stovetop instructions in Notes.
- Add oats to the peanut butter mixture. Use a rubber spatula or wooden spoon to fold until thoroughly combined.
- Using a small cookie scoop, scoop and drop balls of cookie dough into the cups of the baking pan. Using a spoon, press and flatten mixture until tops are smooth and dough is evenly distributed in the cup. Use extra dough in another pan, or make thicker cups.
- Chill in the freezer for 15-25 mins, until firm. Enjoy! Storing instructions below.
- Adapted from my 3 ingredient peanut butter granola bars.
Notes
- Where to Buy Ingredients: Unsalted Natural Creamy Peanut Butter | Gluten Free Rolled Oats | Pure Maple Syrup
- Storing Instructions: Store in an airtight container in the refrigerator or at room temperature for up to 1 month. After the first day, you can store them at room temperatureโtheyโll be more firm.
- Freezing instructions: Store in a freezer-friendly container or bag for 1-2 months. Allow to thaw at room temperature for 5-15 minutes before enjoying. Hereโs the compostable freezer bag that I use.
- *Stovetop Instructions: In a medium saucepan over medium-low heat, add peanut butter and maple syrup. Whisk until well incorporated. Stir occasionally, heating until this mixture begins to bubble. Remove from heat and carefully pour over the dry mixture.
