Oh, happy day! ☺ This morning was dewy, lightly chilly and an energizing kind of brisk. The sun was just starting to peek out from the clouds and birds were chirping. No really, there were actually birds chirping. Does it get more idyllic than that?

Normally I wouldn’t be able to tell you anything about the weather or even about a single bird noise… because, this is me all day, everyday: seemingly nonstop computer time, cancelled plans to go outside because something internet-y happened and barely closing my eyes and turning off an electronic device before bed.

But no more! Dash it all to the wind… no more. 😉 If you’ve been reading the last few posts, you know that Erik and I have newly committed ourselves to outdoor time. The thing is, with having internet jobs, we don’t get out much… and the internet is always alive with activity. This equals us having loads of trouble unplugging.

But unplug we (kinda) have! We’ve been taking baby steps, but it’s working. First, there was a walk, and then there was a longer one.

And then… drum roll please… we went for a run!! ☺ This. Morning. That’s how I can sit here, and tell you all about the birds and give you the weather report. Imagine me waving my arms over that interactive map and elegantly pointing out storm fronts. Or something. ☔️

To commemorate this spectacular occasion, I whipped up a Coffee Coconut Frappuccino, just for you. This is the kind of refreshment you deserve after a nice long run, or keeping to your promise to turn off the computer a bit earlier than usual, or maybe even calling off of work an hour earlier to go meet a friend for some shopping.

Can you believe, I actually forgot how good it felt to just go outside. Did I tell you, back when Erik and I were living in San Francisco (yes, we move a lot, a lot), we used to head to the beach for runs?

It was the best feeling in the world. We’d strap on our most comfortable running shoes, argue about who had to carry the water bottle (Erik, of course), and just run. Run from the most concrete, gray and glass cityscaped areas through the most colorful, lively neighborhoods, into the ‘burbs… and finally glide across patches of grass and road until we saw it: the beach.

There’s nothing more beautiful than a beach. It’s just waiting for you to come on over, take off your shoes and dig your toes right in. Relax, live and just breathe.

Now that we live in Maine, far from the beach, we’re just learning how to find our running legs again. Who wants to join us? We’re starting with just a short, 10 minute run (okay… 5 minute), with 15-20 minutes of walking three times a week. Then, we’re gonna kick it up a notch. I mean, we really have to before winter storms in and shows us who’s boss. Plus, Holiday Eating. Need I say more?

In the mean time, let us all stay nice and energized with something a little special. Just between you and me, we’re gonna call this frappe the Heck Yeah, I Kicked Butt at Life Today and I Deserve This Coffee Coconut Frappuccino.

Okay, it’s a little long. Let’s also call it the Working Title Coffee Coconut Frappuccino.

Description

Coffee Coconut Frappuccino (V +GF): a 3 ingredient recipe for deliciously thick, creamy frappes bursting with coffee and coconut flavor. Vegan, Paleo, Gluten Free, Dairy Free.


Ingredients

Scale

Frappuccino

  • 1 can light coconut milk (1314 oz.)
  • ½ cup cold coffee
  • 2 medium bananas, sliced and frozen

Optional toppings

  • Toasted coconut, coconut whip, chocolate syrup

Instructions

  1. At least 2-3 hours or the night before, place coconut milk in the refrigerator to chill. Pour coffee into an ice cube tray and place in the freezer.
  2. Later, add bananas into a blender. Blend until the bananas become crumbly. Add coconut milk. Blend until smooth and creamy, scraping down the sides of the blender as needed.
  3. Add coffee ice cubes. Blend until well incorporated and smooth, again scraping down the sides of the blender as needed.
  4. Pour into two cups. Top with coconut whip or any of your favorite toppings. Enjoy!

  1. OMG, I’m sooooo happy / excited / proud !!! You started to run! Weeeeee I have a running buddy now :* It’s great, isn’t it?! I feel you with internet life (same here!) Honestly, running is what keeps me sane those days. I had like 2 weeks vacation and I unplugged 99%, okey okey 67% 😛 and I said to myself when I come home I won’t work that much.   2. I love your new commitment to outdoor time!! I really tried that this summer and we went on our very first morning walk last week!! It was pretty idyllic indeed to ACTUALLY hear birds chirping. I’m not a morning person but once I got up it was easy. Cheers to that! I would love to come back to this frappuccino afterwards – YUM!!

I’m very proud of you my friend! You have a lot of great names in there, but I really want to throw the word Classy in front of that title, because Coffee + Coconut sounds pretty dang fancy to me! It’s late at night and I’m still online which I know is bad, but this just looks toooooooo good to close the screen??   5. Hi Demeter, I love this frappccino. The fact that it is gluten free and dairy free makes it all the more amazing. I hear you on the outside thing. This morning I was out before the sun rise watering plants and cleaning the pond. I love that feeling of thew fresh air on my skin and the silence of that time of day.   8. I am with you girlfriend! We’ve been getting up and out at 6 – 6:30ish (ahem) for a brisk walk (and some runnin’ sprinkled in for good measure)…and we love it! It is making all the difference in our days, and truthfully, we’re falling to sleep easier and earlier at night, too! Let’s hear it for sneakers on, heart rates up, and birds chirping in the morning! So glad you and Erik got to get outside and enjoy the weather and squeeze in a run – might be 5 minutes now, but y’all might be running 30 minutes before you know it!   12. So happy for you guys, Demeter! So hard sometimes to get away from those silly computers, or just electronics in general. It’s like ‘wake up and smell the roses, right’? Or even better, this Frappuccino 😉 ! Baby steps is always great. I run on our treadmill and not very often outside (especially in the cooler months), even though it is so much nicer. It’s always hard to do anything outside in the Winter with all the ice and snow. Plus, running outside I think is more difficult. Anyway, point is, you guys are doing it! Yay! High five!

    I want to read more and not just stuff on the computer…I mean actual books. It’s been on my to-do list forever. I recently picked up 3 books that I found to be interesting and I’m working my way through them. There’s seriously never enough time in the run of a day to do everything that I want to do. You feel the same? Just try, I guess 🙂 That’s the main thing! Hubby and I were thinking about getting a new piece of exercise equipment, a water rower. They are supposed to be great exercise too.

  13. I just laced up the old running shoes again and went for a run yesterday too! I’ve been at the gym a few times a week all summer because it is too dang hot to be on the pavement while the sun is up but I’m looking forward to cooler weather and more long distance runs. Now if my shin splints would get the memo and cooperate…
