What’s your favorite easy recipe of all-time? Is it 3 ingredient no bake peanut butter oatmeal cookies? Is it one of these 11 insanely easy energy balls recipes? Or my No Bake Chocolate Oatmeal Cookies? Perhaps it’s an easy no bake recipe from another website (ahhhhhhh!!! Gasp!!!)?
Whatever it is, all of those easy recipes have one thing in common—they’re made with very few ingredients (yes, I had to assume for your non-BB/traitor recipe. J/k!!), they’re quick & easy to make, and they’re convenient to snack on while you’re on-the-go.
So when I approached my month of January recipes, I made sure to create the easiest, fewest ingredient recipes for my no-bake jams. And by “jams” I mean recipe—why, oh why do I try to sound cool? It’s obviously futile. Lol.

How to Make No Bake Peanut Butter Oatmeal Cookie Cups
These peanut butter oatmeal cookie cups are super easy to make! First, add peanut butter and maple syrup to a heatproof bowl.
Then, whisk together peanut butter and maple syrup until it’s thickened and well-incorporated.
Next, you’ll simply heat & stir together peanut butter and maple syrup until fluffy.
Once the sweetened peanut butter mixture is nice and warm, add in the rolled oats.
Using a silicone spatula, stir and fold the oats into the sweet mixture.
This is what the no bake oatmeal cookie “dough” will look like once it’s done! (And yes, you *totally* have permission to eat it right out of the bowl.) 😉
Using a small cookie scoop, scoop and drop peanut butter oatmeal cookie dough into a mini cup pan. I like to lay the silicone pan onto a baking sheet so it’s easier to stick into the freezer for chilling later.
Next, grab a spoon and start flattening each of the cookie balls into a smooth, even layer. You can even skip this step if you don’t mind peanut butter oat balls instead of cookie cups.
Chill and enjoy. That’s it! Looking for something even easier? Try my No Bake Peanut Butter Coconut Balls or my super customizable Cereal Bars!

- Total Time: 15 minutes
- Yield: about 34 mini cups or 18 regular cups 1x
Description
No Bake Peanut Butter Oatmeal Cookie Cups (V, GF): easy, simple & delicious—a quick recipe for soft ‘n chewy peanut butter oatmeal cups that are No Bake! Healthy, Gluten-Free, Vegan, Dairy-Free, No Cook.
Ingredients
- 1 cup natural, unsalted creamy peanut butter or try homemade peanut butter
- 1/4 cup + 2 tablespoons pure maple syrup
- 1 3/4 cups gluten free rolled oats
Instructions
- Lay a 24-mini-cup silicone baking pan on a medium baking sheet. I highly recommend the mini pan in this set, as it’s much easier to remove the oat cups. Set aside for later.
- In a large, microwave-safe bowl, add peanut butter and maple syrup. Whisk together until well mixed.
- Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out (about 4-7 rounds). Whisk in between heating increments. *Stovetop instructions in Notes.
- Add oats to the peanut butter mixture. Use a rubber spatula or wooden spoon to fold until thoroughly combined.
- Using a small cookie scoop, scoop and drop balls of cookie dough into the cups of the baking pan. Using a spoon, press and flatten mixture until tops are smooth and dough is evenly distributed in the cup. Use extra dough in another pan, or make thicker cups.
- Chill in the freezer for 15-25 mins, until firm. Enjoy! Storing instructions below.

These are tasty and so easy to make. Spread chocolate on top to make them a peanut butter cup alternative that’s a lot more substantial. But as is, I’ll totally use them for when my baby gets bigger. Fantastic grab and go snack!
Yes! I love how easy these are to pop in during a busy day. And double yes to spreading chocolate on top! 😋
I was wondering if you could substitute honey for the maple syrup in the no bake peanut butter cookies?
Hi Bill! That should be fine. Hope you enjoy!
Thank you. I’ll give them a try.
I need a little help here, mine turned out very crumbly. I used the microwave method. I didn’t have any maple syrup and I asked my son to bring some home but he brought regular pancake syrup. Would that matter?
Hi Susan. The pancake syrup is most likely the culprit, as it is actually quite different from pure maple syrup. Not only is the taste very different, but it’s more watery than pure maple syrup and thus won’t create the right consistency for the cups. I hope this helps!
Thank you very much. They were edible but not as good as yours. I will be having a do over lol.
I love how super easy these are, and great as a little pick-me-up snack.
Oh yes, these always hit the spot when I hit that afternoon hangry slump lol. Glad you like them too!
Oh yum! Such quick and delicious little treats. I love how easily they come together with no baking.
Exactly! When things get super busy (so all the time haha), no bake treats like this are what I rely on. Happy to hear they’re helping you, too!

Can you use regular peanut butter for this recipe?
Yep! That should be fine, Paula. 🙂
