Easy Paleo Snack Bars Recipe (Gluten Free, Vegan)

Paleo Snack Bars Recipe (GF, V): super EASY paleo approved snack bars, packed with nuts & seeds! The ultimate paleo diet snack bars—chewy, filling, gluten free, vegan & healthy! Dairy-Free, Refined Sugar-Free.

Wanna know the alternate name for Beaming Baker? Saturdays Are For Baking. Yep, I totally almost did that. Which… at the time, it turned out that that name was already taken. But, why did I almost pick that name?

Well… back before I had the blog, I looked forward to Saturday all week long. It was my one day where I could spend the entire day baking anything and everything I dreamed of. Naturally, I would squeeze baking into Monday night… Wednesday night… and as many of the other nights of the week.

But Saturday, ahhh… Happy-Sigh-Saturday… it was the one day where I could bake all day, without any “sneaking” to be had. So even now, I think very fondly on Saturday baking.

Do you like baking on Saturdays? What’s your favorite day to bake? What do you like to bake on, perhaps, let’s say, a Saturday? 😉

The Best Paleo Snack Bars Recipe

If you’re all like, “Well… if you could suggest something to actually bake on a Saturday, that would be great.” I’d respond, “How about this Easy Paleo Snack Bars Recipe?”

You know, I’d never heard of a treat called snack bars, like ever? That is, until Sally at Sally’s Baking Addiction shared all the snack bar recipes, such as these Vanilla Almond Snack Bars or these Quinoa Crunch Snack Bars. She’s an amazing baking genius & very kind human being, btw. ❤️

Ever since she incepted me with those snack bars, I’ve been thinking, why not make a gluten free vegan snack bars recipe for BB readers? And, in true form, I had to escalate it x million (cuz, Paleo, ya know?) and decided to create a paleo snack bars recipe.

Friends, let me just tell you, this is the easiest, most customizable, healthy, gluten free, vegan, dairy-free, refined sugar-free, and AWESOME paleo approved snack bars recipe ever! It’s so easy to make, deliciously chewy, and packed with healthy nuts and seeds!

Tools for the Best Paleo Snack Bars Recipe!

Click below for links to the tools & ingredients I use for my favorite grain-free paleo snack bars recipe:

  • Ground Golden Flaxseed (GF): finely milled golden flaxseed.
  • Coconut Oil: my favorite high-quality virgin coconut oil. A true vegan + gluten free baking staple.
  • Coconut Sugar: I love this 3-pack of coconut sugar. I used to buy large bulk bags of coconut sugar, but found that as soon as I opened them, they had a very limited freshness window. Now I buy this pack of three smaller bags & have no clumping issues!
  • My Favorite Knife: Super sharp & cuts like a diamond through baked goods for beautifully clean lines.

Now that we’ve shared our inaugural first Easy Paleo Snack Bars together, whaddya say we make more?!? 😉 Be sure to let me know what flavors of paleo snack bars you’d like to see next. Btw, thank you for being here and sharing in these tasty kitchen adventures with me. It means the world to me. ‘Til the next one…

Sending you all my love and maybe even a dove, xo Demeter ❤️

Instructions

  1. Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later.
  2. Add all dry ingredients to a large bowl: nuts, coconut, seeds, ground flaxseed, and salt, if using. Stir until well mixed.
  3. Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter and maple syrup. Whisk until well incorporated.
  4. Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.
  5. Pour the mixture into the prepared baking pan. Using the spatula, nudge the mixture until loosely and evenly spread out. Then, use the spatula to press the mixture firmly down into an even, very tightly-packed layer.
  6. Bake for 22-27 minutes. Mine took 25 minutes.
  7. Place baking pan onto a cooling rack to cool for 40-60 minutes, or until completely firm. After, lift bars and parchment paper onto the cooling rack to finish cooling for 1-2 hours. Slice and enjoy! Storing instructions below.
