‘Tis the season for… roasting! And roasting, we shall. Today, we’re making the most perfectly cooked green beans and potatoes—think tasty crunch, while still roasted with a touch of tenderness. The potatoes are soft and tender on the inside, roasted and just a bit crisp on the outside.

The secret ingredient for making the very best roasted potatoes and green beans? Soy sauce for just the green beans. Yep, you heard me.

Soy sauce gives an interesting subtle twist, another layer of saltiness that tastes so sophisticated in these green beans. It allows the green beans to have a distinct & delicious flavor while still complementing the roasted potatoes.

My mom taught me this trick growing up—just a splash while cooking leaves the green beans with a tasty other-level of umami. YUM.

This roasted potatoes and green beans recipe is so easy to make, with most of the ingredients already in your pantry. With just the right amount of seasoning, a touch of spice, and one secret ingredient, you’ll soon enjoy the best roasted potatoes and green beans.

For the potatoes:

  • Small potatoes
  • Olive oil
  • Italian seasoning
  • Paprika
  • Salt & pepper

For the green beans:

  • Green beans
  • Olive oil
  • Salt & pepper
  • Soy sauce

How to Make Roasted Green Beans and Potatoes

Learn how to roast potatoes and green beans the simple & easy way. The result? Perfectly roasted potatoes that are creamy, and green beans that are just a bit crisp and oh-so good.

First, preheat the oven to 400°F. Then, line a baking sheet with greased foil.

Prepare the Potatoes

Wash and dry the potatoes. Then, cut into ½-inch cubes or halves.

Next, transfer the potatoes into a large mixing bowl. Coat with oil, Italian seasoning, paprika, salt and pepper.

Roast the Potatoes

Stir to fully coat potatoes in oil and seasonings. Voila! Isn’t it beautiful?

Then, pour the seasoned potatoes into a single layer on the prepared baking sheet. Bake for 15 minutes.

Prepare the Green Beans

While the potatoes are roasting, it’s time to move onto the green beans. Wash, dry, and trim green beans.

Pour green beans into a large mixing bowl with oil, salt, pepper, and soy sauce. Stir to coat.

Flip the Potatoes, then add Seasoned Green Beans

Once the 15-minute timer goes off, remove the hot baking sheet of potatoes from the oven, carefully. Then, flip each potato over.

Now, transfer the seasoned green beans onto the hot (!) baking sheet. Make sure to evenly disperse the green beans for even cooking.

Bake for about 15-20 more minutes. Then, enjoy the best roasted potatoes and green beans!

Roasted Potatoes

  • 1 lb. small or creamer potatoes
  • 1 ½ tablespoons olive oil or cooking oil of choice
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon paprika
  • ¼ teaspoon salt, or to taste
  • A generous pinch of pepper

Roasted Green Beans

  • 1 lb. green beans
  • 1 ½ tablespoons olive oil or cooking oil of choice
  • 1/8 teaspoon salt or more to taste
  • A pinch of pepper
  • 1 teaspoon soy sauce – I used lower sodium

Optional Topping

  • 23 sprigs of rosemary

 


Instructions

Roast Potatoes

  • Preheat oven to 400°F. Line a baking sheet with lightly greased foil.
  • Wash and dry potatoes. No need to peel. Cut into ½-inch cubes, or ½-inch halves if using bite-sized creamer potatoes.
  • Add potato cubes into a large mixing bowl. Drizzle with oil, Italian seasoning, paprika, salt and pepper to taste. Stir to coat evenly.
  • Pour potatoes onto the prepared baking sheet. Spread into an even layer, being careful not to pack the potatoes in too much, especially in the center of the sheet, where the heat is lowest. Bake for 15 minutes.

Roast Green Beans (with the Potatoes)

  • While the potatoes are roasting, prepare the green beans. Wash and dry green beans. Trim off ends and peel off strings if beans are not stringless.
  • Add green beans, oil, salt, pepper, and optionally, soy sauce to a large mixing bowl. Stir to coat green beans fully.
  • Carefully remove baking sheet from the oven. Using a heatproof spatula, flip potatoes to roast the opposite side.
  • Add seasoned green beans to the baking sheet. Spread into an even layer.
  • Bake for 15 more minutes, or until potatoes are fork tender and green beans are cooked as much as you’d like. Mine took 15 minutes for crispy, yet roasted green beans. You can tack on more time for softer green beans.

Finish Roasted Green Beans & Potatoes

  • Pour roasted green beans and potatoes into a serving dish. Optionally, top with a few sprigs of rosemary. Enjoy!

 

Notes

Storing Instructions: Enjoy these roasted green beans and potatoes on the first day, if you can. If needed, cool completely, then store in an airtight container in the refrigerator for 1-3 days. Heat before enjoying.
