Classic, Simple Vegan Oatmeal Cookies with Clean Ingredients
This vegan oatmeal cookie recipe is not only simple and easy to make, but it’s also made with simple & easy ingredients!
Instead of Butter… We’re gonna go ahead and skip dairy butter and sub that sucker with coconut oil and almond butter—some of my favorite ingredients to use in many of my vegan cookie recipes. They add a richness to every cookie & a creamy, buttery flavor that takes these simple vegan oatmeal cookies to the next level.
Rolled Oats & Oat Flour: two delightful simple ingredients that make today’s vegan cookies, well, vegan oatmeal cookies. 😉
Ground Flaxseed: instead of going with the usual flax egg to create a binder in my vegan oatmeal cookie recipe, I’ve included straight up ground flaxseed! I find the flaxseed add a rich, nutty texture and serves to add that extra “oomph” in my easy vegan oatmeal cookies!
Warm Spices: ground cinnamon, nutmeg and cloves are the perfect fall/wintry trifecta of spice that warm you up and give all the cozy feels. Who says natural ingredients can’t give you an extra oomph?
Coconut Sugar, Pure Maple Syrup—instead of using cane sugar, which isn’t vegan since it’s processed with bone char, we’re gonna be using coconut sugar! And you can go ahead and skip the honey. The vegan liquid sweetener of today’s oatmeal cookies is maple syrup. Yum!
Tips for Perfect Vegan Oatmeal Cookies
- Use a cookie scoop! – yep, I’ve said this over and over again, but it totally bears repeating. Cookie scoops not only allow you to make nicely-uniform vegan oatmeal cookies, but they also make the process of making them so much easier! Cookie scoop makes life easier, ya know?
- Don’t deviate from the written recipe – I know, I know, it would be soooo easy to make a change here, and another change there. Trust me–you gotta try this recipe as-is first. Then, you can go renegade and try your own remix. That way, you know what works and what doesn’t because you already made the successful vegan oatmeal cookie base. 😉
- Make cookies in a timely manner – aka, don’t mix up the wet ingredients, leave them for an hour because you gotta do laundry first (happens to us all lol), then come back to them and continue the recipe. I’ve had a few mishaps myself with stopping in the middle of the recipe. Make sure you set aside a good chunk of time–these easy vegan oatmeal cookies are worth it!
How to Store Your Vegan Oatmeal Cookies
Room Temp
Store these vegan oatmeal cookies in an airtight container for about 1-2 weeks at room temperature. Just make sure to keep cookies away from direct sunlight and away from heat sources, as they’ll spoil the cookies.
Freezing
Store the cookies in a freezer-friendly container for 1-3 months. To enjoy, simply remove oatmeal cookies from the freezer and allow to thaw for 10-30 minutes. Heating instructions in the recipe notes. 😉
Lemme guess, you’re racing to the kitchen as we speak?? 😉 One can hope! I’m so thankful that you’re here, sharing in these baking adventures with me and your loved ones. ‘Til the next sweet baking adventure with you…
Sending you all my love and maybe even a dove, xo Demeter ❤️

Awesome! So happy they’re a hit with you Angela!
Delicious recipe. Flavorful spices. Lovely texture. Chewy and gooey cookies. Best to gift loved ones too.
I couldn’t agree more about the joy of gifting these to the ones you love! ☺️
We adore oatmeal cookies and these sound like the absolute best!
Oh trust me, they are. 😉
oatmeal cookies are my favourite type of cookies! These look SO delicious 🙂
How perfect! These are totally up your alley then!
These look so delicious and yummy! I can’t wait to make this recipe! My daughter is going to love this recipe!
She is most definitely gonna love them!
I knew I’d love this recipe before I made it! I LOVE oats and can never get enough of ‘em. I LOVE your oft-used combo of maple syrup and coconut sugar which gives a fantastic caramel flavor to everything. I LOVE to keep especially saturated fats low so using almond butter is always a go-to thing for me. (I may or may not have subbed a little olive oil for some of the coconut oil). I LOVE fall spices though not a usual fan of cloves. It is a testament of my trust in you that I tried the cloves in this recipe (admittedly at a slightly reduced amount) and LOVED it. You’re the greatest!
Hi Theron! I can’t get enough of your comment. 🙂 I still remember how much you enjoyed my thin & crispy vegan chocolate chip cookies, so I’m thrilled that my vegan oatmeal cookies were such a hit too. It’s great to hear that you were able to sub some of the coconut oil with olive oil AND try the cloves!! Love it. P.S. YOU’RE the greatest! I can’t wait to see what you try next.
I made these cookies last night and it was delicious! My picky husband devoured these. I didn’t have any oat flour in my cupboard so I used oat bran instead. It came out really good and held up. I also added a little bit of cardamom as well. Will definitely make these again!
Woohoo! I’m so happy to hear how much you and your hubby enjoyed them Tarra! 😊
Hi is there Hi is there any substitute for the almond butter I can’t use any kind of nut butters?
Hi Janice, you can use sunflower seed butter instead. 🙂 Hope this helps (and that you’re not allergic to seed butter). 😉
That recipe will be one of those that I am going to use time and time again!!! The cookies are AMAZING!!!
Woohooo!!! I’m so happy to hear it, Zaneta! Is there anything better than delicious AND easy vegan oatmeal cookies? Happy baking (and eating)!!
I have made these cookies 5 times now and they are amazing. Chewy on the inside and toasty on the outside. Thank you so much.
Wonderful! I’m seriously so pleased that you’re continuing to enjoy my vegan oatmeal cookie recipe! Thank YOU so much for taking the time to let me know. Happy baking & eating, Elizabeth. 🙂
I just subbed the sugar and maple syrup with equal amounts of date paste (pureed date and water) – it worked great!
Also added chocolate chips:). Great recipe! I’ll be saving this one!
Ooh how interesting! So glad to hear it worked out for you Jessie!
Do you absolutely need the ground cloves?
I love the flavor it adds, but you can omit it if you don’t have any on hand. 🙂
i added the ginger powder and the taste was amazing as well!!!
I was too lazy to make oat flour so I used 1/4 cup spelt flour and GIRL, these are BOMB. thank you for this recipe ❤️
LOL I’m glad they worked with the spelt! So happy you enjoyed them!
I am a horrible baker but this simple recipe made my cookies come out PERFECT! I pulled them out at 13 mins and omg once they cooled the texture was insane. I also added vegan mini choco chips. This is my new go to cookie recipe! Thank you ILY BB
Turns out… you’re an AWESOME BAKER!! What if it wasn’t you all along? 🤔 I’m so happy that you enjoyed the texture, the experience and some vegan mini chocolate chips! 😉 ILY back, Kelly!!
I admit I was skeptical, but this recipe is amazing. My last attempt at oatmeal cookies was demotivational, and resulted in dry little hockey pucks. These came out soft, chewy, and hearty, with a lovely and pretty surprising caramely flavour. I also baked the cookies for 13 minutes, and they were perfect. I used tahini instead of almond butter, as it’s what I had on hand. So delicious and simple, and quick. Thank you!
Isn’t that the best though? Skeptical to satisfied—pretty much the best transition. 😉 I’m sorry to hear that your last attempt was demotivational (love how you phrased that) but so happy that this one was quite the opposite! So cool that tahini worked as well. Thanks for taking the time to let me know. Happy baking, Treegan!
About how many cookies does this recipe make?
Hi Daphney! This recipe yields about 12-14 cookies. Happy baking! 🙂
We don’t have Oatmeal but we have quite a bunch of Oat flour, can I use only oat flour and what would be the quantity?
Hi Clo! Hm, you might have a better time making these cookies, which already call for all oat flour: https://beamingbaker.com/thick-and-chewy-vegan-chocolate-chip-cookies-recipe-gluten-free-easy-delicious/
Happy baking!
